PERFECT-FOR-PARTIES BAKED BRIE IN PUFF PASTRY WITH APRICOT JAM

Perfect-for-Parties Baked Brie in Puff Pastry with Apricot Jam image

This is a classic dish for any type of gathering, and one we always put out. Imagine a croissant filled with melted Brie cheese and sweet fruit and jam. That's what this dish is. It's a pull-apart appetizer that can be spread on toast points or eaten as is. It's one of those centerpiece starters that is the talk of the party. Puff pastry is a cook's friend. It's great for making quick pastries and even beef Wellington. We always keep a pack in the freezer.

Time 1h40m

Yield 4 servings

Number Of Ingredients 7

1 (8-ounce [224-g]) wheel of Brie
1 sheet puff pastry, frozen
3 tablespoons (60 g) apricot preserves
1 small Granny Smith apple, peeled, cored and cut into small dice
1/4 teaspoon ground cinnamon
1 large egg beaten with 1 tablespoon (15 ml) milk
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a large chef's knife, cut the white rind off the top of the wheel of Brie and discard. Put the disk into the freezer and at the same time pull out the sheet of puff pastry. Allow the puff pastry to thaw until it is pliable but still cold, about 30 minutes.
  • Roll the puff pastry to a 14-by-14-inch (35.5-by-35.5-cm) square. Using a pizza cutter or knife, cut a 1/2-inch (1.3-cm) wide strip from one edge of the pastry. Transfer the dough to a parchment-lined baking sheet. Place 1 tablespoon (20 g) of the preserves at the center of the pastry and then the frozen Brie wheel. Top with the apple and cinnamon, then dollop the remaining 2 tablespoons (40 g) of preserves on top. Gather the four corners of the dough, one at a time, across the Brie to enclose it completely. Tie a simple knot with the strip of dough to make a purse.
  • Brush the entire top and sides of the purse with the egg wash. Sprinkle with salt and pepper. If at any point the pastry seems like it's melting or too soft, put it in the freezer for 5 to 10 minutes before continuing. Make sure the pastry is well chilled before baking.
  • Bake on the middle rack of the oven for 30 to 40 minutes, turning the baking sheet halfway through, until the pastry is golden brown and cooked through. Transfer to a wire rack and let cool for 8 to 10 minutes before serving warm.

BAKED BRIE AND RED PEPPER JELLY WRAPPED IN PHYLLO PASTRY

Baked Brie and Red Pepper Jelly Wrapped in Phyllo Pastry image

This is a nice twist to the traditional baked brie in puff pastry. I find that the phyllo lends to a more elegant presentation. Phyllo is not that tricky to work with - just keep the sheets that you aren't working with covered with plastic wrap and a damp towel. We traditionally use a 300 gram wheel of Triple Cream Brie, which converts to about .66 of a pound. Because of the size of the phyllo sheets (about 12" x 18"), you could likely use up to a pound of brie.

Provided by Just Call Me Martha

Categories     Spreads

Time 45m

Yield 8 serving(s)

Number Of Ingredients 4

6 phyllo pastry sheets, thawed
1/3 cup butter, melted
3/4 lb brie round, chilled (I use a triple cream brie)
1/4 cup red pepper jelly

Steps:

  • Preheat oven to 350 degrees.
  • Place brie on flat surface and with sharp knife, slice Brie in half horizontally.
  • (This is much easier to do if Brie is nicely chilled first).
  • Spread red pepper jelly on bottom half of Brie and then replace top half of brie and set aside.
  • Using a pastry brush, brush butter on first sheet of phyllo, place a second sheet on top at roughly a 30 degree angle, brush with butter, place third sheet on top at roughly a 30 degree angle from the first, brush with butter and continue until all sheets have been used.
  • (The reason for placing the sheets on angles is that you'll end up with a larger surface which makes for easier wrapping and it also gives you a more interesting presentation as you bring all the sheets together).
  • Place Brie in centre of phyllo and gently pull all the sheets up and over the Brie, twisting closed at the top.
  • Arrange the sheets in the"twist" in various directions.
  • Brush entire package with melted butter.
  • Bake for 30-35 minutes.
  • Set aside for 5-10 minutes before serving.
  • Serve with crackers or thinly sliced baguette.

SWEET BAKED BRIE IN PUFF PASTRY

Sweet Baked Brie in Puff Pastry image

My favorite way of serving brie. I use a pretty fabric ribbon (must be fabric) to tie pastry with a pretty bow, before baking. Comes out fine and doesn't burn in the oven. Serve fruit on the side. I also make it with any flavor of jam. Blueberry strawberry or mixed fruit. For a shiny surface, brush pastry with an egg wash or brush with milk or cream...DIVINE!

BAKED BRIE IN PUFF PASTRY

BAKED BRIE IN PUFF PASTRY image

Categories     Cheese     Appetizer     Cocktail Party

Yield 12 PEOPLE

Number Of Ingredients 7

1 cup pecan halves
3/4 cup packed dark-brown sugar
All-purpose flour, for dusting
2 standard packages (17 1/4 ounces) frozen puff pastry, thawed
1 wheel (2.2 pounds) Brie
1 large egg yolk
2 tablespoons heavy cream

Steps:

  • 1.In a medium bowl, combine pecans and sugar, using your fingertips to thoroughly mix; set aside. Line a baking sheet with a Silpat (French nonstick baking mat) or parchment paper; set aside. 2.Lightly dust work surface with flour. Place two sheets (one box) of puff pastry on the work surface one on top of the other. Using a rolling pin, adhere the two pieces of the puff pastry together. Continue rolling puff pastry until it is very thin, slightly less than 1/8 inch thick. Using a pastry wheel or a sharp knife, cut the puff pastry into a 13-inch round, reserving scraps for decorating. 3.Place the Brie in the center of the puff pastry. Top the Brie with pecan mixture, spreading to within 1/2 inch of the edge of the cheese. Be sure to remove any sugar or nuts from the puff pastry, as they may cause holes to form during baking. Fold puff pastry up and over Brie to enclose. The center of the Brie will not be completely covered with pastry. Transfer to prepared baking sheet. 4.Lightly dust work surface with flour. Repeat rolling and cutting process with remaining two sheets of puff pastry. Drape pastry over the Brie, tucking the edges under to enclose. 5.In a small bowl, combine egg yolk and cream to make an egg wash. Cut reserved scraps of puff pastry into decorative shapes. Using a pastry brush, gently brush the decorative shapes with the egg wash, and adhere to wrapped Brie. Brush the wrapped Brie evenly with the egg wash. Transfer to refrigerator and chill for at least 30 minutes and up to overnight. 6.Preheat oven to 400 degrees. Bake Brie until golden brown and puffed, about 30 minutes. Reduce oven temperature to 350 degrees and bake until dark golden brown, 25 to 35 minutes more.

Easiest baked brie EVER! Brie cheese topped with jam, wrapped in puff pastry or crescent roll dough, and baked until melty. Delicious!

Provided by @MakeItYours

Number Of Ingredients 5

1 large sheet of puff pastry dough or 1 tube of refrigerated crescent dinner rolls
1 round or wedge of Brie cheese (do not remove rind)
2 tablespoons raspberry jam, or other sweet jam
1 tablespoon brown sugar
1/4 cup of maple syrup

Steps:

  • Preheat oven to 350°F (175°C).
  • Slice the top off the brie: If you want, start with chilled brie and use a sharp knife to carefully cut off the thin top rind of the cheese. This may help the crust stay with the cheese when served. The rind is edible so you don't have to do this step if you don't want to.
  • Place brie on puff pastry: On a lined baking sheet, lay out the puff pastry or the crescent rolls flat. Place the brie round or wedge on top of the puff pastry.
  • Spread jam on top, fold dough over brie: Spread jam on brie, fold dough over top, cutting off excess dough. Drizzle maple syrup and sprinkle brown sugar on top.
  • Bake: Bake at 350ºF (175°C) for 30 minutes, pastry should be golden brown. Let cool for 10 minutes before serving. Serve with crackers or apple slices.
