2 teaspoons canola oil
1 medium onion, diced
12-ounces smoked Virginia ham, cut into 1/4-inch cubes
2 cloves garlic, minced
Two 15-ounce cans navy beans (preferably low-sodium), drained and rinsed
One 15-ounce can crushed tomatoes (preferably low-sodium)
1/2 cup water
1/4 cup unsulfured molasses
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened and translucent, about 5 minutes. Add the ham and garlic and cook for an additional 3 minutes. Stir in the beans, crushed tomatoes, water, molasses, mustard, vinegar, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook until about half of the liquid is absorbed, 15 minutes.
  • Yield: 4 servings
  • Serving size: 1 1/4 cups baked beans

0.5 cup water

1 recipe Green Apple-Cabbage Slaw, recipe below
5 tablespoon red wine vinegar
0.25 cup water
2 tablespoon sugar
4 teaspoon canola oil

1 small head red cabbage (1 lb.), leaves cut in 1-inch pieces
1 large green apple (about 8 oz.), halved, cored, and sliced
3 scallions (white and green parts), chopped (about 1/2 cup)

Steps:

  • Heat oil in large skillet over medium-high heat. Add onion. Cook 5 minutes or until softened and translucent. Add the ham and garlic. Cook 3 minutes more. Stir in beans, crushed tomatoes, water, molasses, mustard, vinegar, and 1/2 teaspoon pepper. Bring to boiling. Reduce to a simmer. I don't know where I got this recipe that I've been using for years but it is definitely a man pleaser! I think that a ham bone gives the best flavour but will use an 8 oz piece of salt pork when necessary.

2 (16 ounce) packages dried navy beans
4 teaspoons salt
3/4 cup dark molasses
1/2 cup packed dark brown sugar
1 tablespoon dry mustard
1 teaspoon pepper
1 large onion
4 -6 whole cloves
1 meaty ham bone

Steps:

  • Prepare beans: Rinse well and discard any stones or shriveled beans.
  • Soak beans in water in a 5 quart Dutch oven, using the overnight or quick soak method.
  • Overnight Method: Cover each cup of dried beans with 3 cups of water; let stand for a minimum of 12 hours.
  • Quick Soak Method: Add beans to boiling water, allowing 3 cups of water for each cup of beans, bring back to the boil and boil for 2 minutes; remove from heat, cover and leave for an hour, then cook in same water.
  • Bring mixture to a boil, add salt, reduce heat, cover and simmer for an hour.
  • Stir in molasses and next 3 ingredients.
  • Stud the onion with the cloves; tuck onion & ham bone (or salt pork) into the beans.
  • Cover and bake in a 250F oven for about 7 hours; check & stir about once an hour.
  • Add more water to keep beans moist but not too wet OR remove lid to thicken mixture through evaporation; it all depends on your preference for thick or runny!
  • Discard cloves, chop onion and return to mixture.
  • Remove meat from ham bone (or cut salt pork into pieces, discarding fat) and return to mixture.

I use Bush's baked beans. You can substitute catsup for the chili sauce but adjust the amount for sweetness. Adjust any amounts to your taste.

1 granny smith apple, cored, peeled and chopped
1/2 cup ham, rough chop, then approximately measured
28 ounces canned baked beans (I use Bush's Original )
1 1/2 teaspoons dry mustard
1/4 cup sweet pickle relish (I also drain and pat to dry them abit )
1/2 cup chili sauce

Steps:

  • Heat oven to 350°F.
  • Combine ingredients in a 1 1/2 quart buttered casserole dish.
  • Cover and bake for 45 to 60 minutes or until bubbly.

24 ounces dry white beans
1 pound ham hocks
1 onion, chopped
½ cup packed brown sugar
½ cup maple syrup
1 teaspoon salt
1 cup water
½ cup ketchup
2 tablespoons prepared mustard

Steps:

  • In a large pot over high heat, combine the beans with water to cover and bring to a boil for 10 minutes. Remove from heat but let sit for 1 hour. Drain beans and place them in a slow cooker. Add the ham hocks, onion, brown sugar, maple syrup, salt and water.
  • Mix well, cover and cook on high setting for 4 to 5 hours, stirring occasionally. During the final hour of cooking, add the ketchup and mustard, remove the ham from the hocks and discard the hocks. Mix well and serve.

This is a recipe I got from the local paper but made some adjustments. I wanted to keep track of it, went to Ukraine this summer and wanted to bring it with as a sample of "American Food" I like the fact there are very few ingredients. My Ukrainian friends commented how "tasty" the beans were.

1 (16 ounce) bag great northern beans
3/4 lb cooked ham, diced
1 small onion, diced
1 cup brown sugar
1 cup ketchup
salt and pepper
1 pinch cayenne pepper
1 tablespoon dried parsley
water

Steps:

  • Rinse and sort Beans. Put in a large Pot.
  • Add 8 cups of cold water and let stand overnight or at least 8 hours.
  • Drain and rinse beans and pour back in large pot or bean pot.
  • Add rest of ingredients.
  • Generously cover with water.
  • If baking in a bean pot, bake for 3-4 hours at 300 degrees.
  • If cooking on top of stove, simmer 1 1/2 to 2 hours until beans are tender.
  • Add more water if necessary during cooking time.
  • Add more salt, pepper and brown sugar if necessary, to taste.

My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
2 tablespoons butter
2 cups cubed fully cooked ham
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 teaspoon chili powder
1 teaspoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon hot pepper sauce
CORNBREAD TOPPING:
1 cup cornmeal
1 cup all-purpose flour
2-1/2 teaspoons baking powder
1/2 to 1 teaspoon salt
1-1/4 cups milk
1 large egg
3 tablespoons vegetable oil
1 can (8-1/4 ounces) cream-style corn

Steps:

  • In a large skillet, saute onion, green pepper and garlic in butter until tender. Stir in ham, beans, tomatoes, tomato sauce, chili powder, mustard, salt, pepper and hot pepper sauce. Bring to a boil. Meanwhile, in a bowl, combine the cornmeal, flour, baking powder and salt. In another bowl, combine the milk, egg and oil; stir in corn. Add to cornmeal mixture just until combined., Transfer the hot bean mixture to a greased 13x9-in. baking dish. Drop cornbread batter by spoonful over the top. Bake, uncovered, at 375° for 30-35 minutes or until bubbly and a toothpick inserted in the center of topping comes out clean.
