BAKED EGGS AND BEANS ON TOAST

- Preheat the oven to 375 degrees F. Heat 1 1/2 tablespoons olive oil in a large ovenproof skillet over medium-high heat. Add the onion and cook, stirring, until golden, about 5 minutes. Add the tomato paste and cook, stirring, 1 more minute. Stir in the vinegar, honey mustard, Worcestershire sauce, 1/2 cup water, and salt and pepper to taste. Bring to a simmer, then add the beans, plus the liquid from one of the cans. Cook until the beans are soft, about 5 more minutes.
- Make eight indentations in the bean mixture and crack an egg into each. Sprinkle with salt and pepper and transfer to the oven. Bake until the egg whites are set, 10 to 14 minutes.
- Meanwhile, heat a large skillet over medium-high heat. Brush the bread with olive oil on both sides and toast in the skillet, 1 minute per side. Toss the tomatoes, parsley, the remaining 1/2 tablespoon olive oil, and salt and pepper to taste in a bowl. Divide the toast among plates; top each with 2 eggs, some beans and the tomato salad.

SPICY BAKED BEANS ON TOAST

Steps:
- Slice onions and fry with tomatoes in coconut oil until they are slightly soft.
- Add baked beans, turmeric, garam masala, curry powder, some salt, pepper and half of the coriander.
- Meanwhile toast the bread and fry the egg.
- Taste and put more of the spices in if you like.
- Beans on toast, egg on top, more salt and pepper, sweet paprika on egg, add rest of fresh coriander.

- Pour the beans into a sauce pot and cover with 4 cups water. Bring to a boil over medium heat and then reduce the heat slightly and simmer until tender, about 45 minutes.
- Preheat the oven or grill to 350 degrees F.
- Preheat another sauce pot over medium heat and add the oil, garlic and onions. Cook the onions and garlic, without browning, until translucent. Stir in the tomatoes, vinegar, chipotle sauce, honey, coriander and cumin and simmer over low heat, about 30 minutes. Add the lemon juice and season with kosher salt and black pepper.
- Once the beans are nearly fully tender, drain and add to the BBQ sauce. Bake or grill uncovered over direct heat until fully cooked, stirring frequently to prevent burning, about 45 minutes.
- Preheat the grill to medium-high heat.
- Place the cheese between baguette slices and season the top slices with sea salt. Brush the outsides with Cilantro Pesto and grill, covered, 1 minute per side. Plate the cheesy toast and top with the warm baked beans. Drizzle with a line of Cilantro Pesto and finish with more sea salt. Serve immediately.
- Puree the cilantro, parsley and olive oil in a food processor until fairly smooth. Season with sea salt, cover and refrigerate.

- Heat the oil in a small saucepan and fry the onions with a pinch of salt for 10-12 mins over a medium heat until softened and starting to caramelise. Add the garlic and paprika, and cook for 1 min more. Stir through the beans, tomatoes, sugar and Worcestershire sauce. Continue to cook for 10 mins over a medium heat, stirring regularly until thickened and saucy. Season.
- Bring a large pan of salted water to a simmer. Stir the water with the end of a wooden spoon, then crack an egg into the centre of the swirling water. Poach for 3 mins. Repeat with the second egg.
- Toast the bread, then top with the beans, eggs and pancetta, if you like.

HOME MADE BAKED BEANS WITH SODA BREAD TOAST
A simple recipe to follow for making your own baked beans

- In a large saucepan, heat the rapeseed oil over a medium heat. Add the streaky bacon and fry until crisp (about 10 minutes).
- Add the onion and garlic (and chilli if using) to the pan and cook until the onion is soft (about 10 - 12 minutes).
- Add the tinned tomatoes, tomato purée, sugar, vinegar, Worcester sauce, smoked Paprika and 150ml water. Bring to the boil and then add the beans.
- Reduce the heat to low and cook for 1 - 1½ hours, or until you have a thick sauce with soft tender beans.
- Meanwhile, make the soda bread. Preheat the oven to 200C Gas 6.
- Put all the ingredients for the Soda bread together in a bowl and mix. Then form the mixture into a loaf shape of your choice.
- Place on a baking tray, dust with flour and bake in the oven for 45-50 minutes, or until the loaf is golden-brown and sounds hollow when tapped.
- Remove from the oven and leave to cool. Season the beans with salt & pepper, then serve with slices of toasted, buttered soda bread

- Heat oil in a pan on medium heat until hot.
- Add green chilli and onions.
- Saute till the onions turn light brown.
- Add all the veggies, red chilli powder and baked beans. Mix well.
- Simmer for 2-3 minutes.
- In your toaster in the meantime, toast the bread until it turns brown or as toasted as you would like it.
- Remove the beans mixture from heat.
- Spread it on the bread slice.
- Garnish with parsley and grated cheese.
- Serve hot.
