BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

8 slices bacon (about 8 ounces), cut into 1/2-inch pieces
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
Two 28-ounce cans baked beans
1 cup barbecue sauce
1/4 cup molasses
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/3 cup packed dark brown sugar
2 teaspoons yellow mustard powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
  • Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
  • Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

This started out as my mothers three bean recipe. However, my husband and I don't like all those beans, so I adapted it into a baked bean recipe. The flavors are so good together, that you will never want beans another way. Their is a lot of leeway with the recipe. You really need to find what works for you.

1 lb hamburger
1 cup brown sugar
1 green pepper
1 lb bacon
2 (15 ounce) cans baked beans

Steps:

  • Brown hamburger and then drain.
  • Cook bacon and crumble (I use precooked bacon because I hate cooking bacon).
  • Put baked beans in crockpot (drain for thicker beans, I usually drain one can and not the other).
  • Chop up green pepper and add to crock pot.
  • Add brown sugar (amount can vary according to taste preference).
  • Add bacon and hamburger to crock pot and stir.
  • Cook on low for four-six hours.
  • Note: if you use high fat hamburger the beans will be runnier. I recommend using lower fat.

This recipe was given to my mom (who, in turn, shared it with me) by a guy named Gene Brown. So, of course, when I was a kid we used to call it Gene Brown Beans. I never met him, but evidently he was into BBQ contests and whatnot. Either way, I want to give credit where credit is due, so thanks Gene, if you're out there. This is one serious recipe! In my house, we usually serve it over rice and make a meal of it. It's fabulous.

2 (15 ounce) cans pinto beans (undrained)
1 (15 ounce) can navy beans (undrained)
1 -2 cup smoked sausage (sliced)
1 -2 cup cooked chicken (torn into pieces)
1 (10 ounce) can Rotel Tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 teaspoon dry mustard
1/2 teaspoon chili powder
1 fresh garlic clove
1 teaspoon cumin
1/4 teaspoon red pepper
1 -2 medium onion

Steps:

  • In a large pot on the stove, cook onions, garlic and meat.
  • Stir in remaining ingredients and simmer on medium for a good 20 minutes or so, so that the flavors can meld.
  • Serve over rice.

Fava beans are not often found on menus and in my opinion are very under rated. When cooked properly they are delicious and offer a nice change from our regular veggies. There are many ways you can enjoy them I just threw this recipe together last night and served them with new carrots, minted peas and peppered prawns. In addition try adding a chopped leek to the stir fry.

Number Of Ingredients 7

2 cups cooked peeled fava beans
1 teaspoon lite olive oil
1/2 cup sweet onion, chopped
2 garlic cloves, minced
1/2 cup fresh tomato, chopped
1 teaspoon hot pepper flakes (optional) or 1 fresh jalapeno pepper, chopped (optional)
2 teaspoons chopped parsley (for garnish) (optional)

Steps:

  • Shell the fava beans and boil in lightly salted water for about 6 minutes.
  • Cool the beans in cold water and remove outer skin on each bean (If you are using canned beans omit these first steps and go right to the next one).
  • Place fava beans in a well buttered heatproof dish (for vegan use a veggie oil spray to coat the dish).
  • Saute onion, garlic & tomato in the oil (add hot peppers if using) until just soft.
  • Pour over the beans & cover with foil.
  • Bake in 350F degrees oven for 15 minutes.
  • Remove foil, sprinkle with parmesan cheese.
  • Bake under broiler for a few min until cheese is golden.
  • Serve.
  • You may wish to mix some bread crumbs with the parmesan or use buttered crumbs as a topping.
  • Do whatever appeals to your taste buds!
