These juicy and herbaceous pork chops wrapped in smoky bacon are weeknight easy and dinner party special!

1/4 teaspoon freshly ground black pepper (to taste)
1 1/2 teaspoons kosher salt
1/2 teaspoon minced fresh rosemary
1/2 teaspoon minced fresh thyme
4 boneless center-cut pork loin chops (1-inch thick)
8 bacon slices (ideally thin slices (see recipe note))

Steps:

  • In a small bowl combine salt, pepper, rosemary, and thyme.
  • Arrange pork chops in a single layer on a plate or platter. Rub herb mixture into all sides. Let stand at room temperature to allow flavors to penetrate meat (short dry brine).
  • Preheat oven to 400˚F
  • Arrange bacon slices, leaving space around each, on an oven-safe rack placed inside a foil lined baking sheet (for easy cleanup). Bake 10 to 12 minutes depending on the thickness of your bacon (12 to 14 minutes if you prefer very crispy bacon). It should still be pliable when you remove it from the oven; set aside on paper towels to cool slightly. (You'll use the same baking sheet and rack to cook pork chops. No need to replace foil.)
  • Wrap each pork chop with 2 slices of partially cooked bacon and place on rack in baking sheet. Bake 15 to 20 minutes, or until an instant read thermometer reads 145˚F. Serve.

8 slices thick-cut bacon
4 (1½-inch-thick) boneless center-cut pork chops
1 teaspoon kosher salt
1 teaspoon ground black pepper
3 tablespoons unsalted butter, divided
1 (8-ounce) package fresh cremini mushrooms, quartered
3 sprigs fresh rosemary
½ cup dry white wine

Steps:

  • Preheat oven to 425°.
  • In a 12-inch cast-iron skillet, cook bacon over medium heat until partially cooked, about 2 minutes. Remove bacon, and let drain on paper towels, reserving 3 tablespoons drippings in skillet.
  • Wrap 2 pieces of bacon around outer edge of each pork chop, securing with a wooden pick. Sprinkle both sides of pork with salt and pepper.
  • Heat skillet over medium-high heat. Add pork chops; cook until browned, 3 to 4 minutes per side.
  • Place skillet in oven, and bake until desired degree of doneness, 8 to 10 minutes. Remove pork chops from skillet.
  • Add 2 tablespoons butter to skillet, and heat over medium heat. Add mushrooms and rosemary; cook for 3 to 4 minutes. Remove mushrooms from skillet. Add wine; cook until wine is reduced by half, 2 to 3 minutes. Whisk in remaining 1 tablespoon butter. Return pork chops and mushrooms to skillet; spoon mushroom mixture over pork chops.

5 boneless pork chops
1 package of bacon

Steps:

  • 1. preheat oven to 350
  • 2. season pork chops with salt and pepper (or any other seasoning you like)
  • 3. wrap strips of uncooked bacon around the pork chops (make sure the bacon is snug around the pork chop)secure with a tooth pick or two
  • 4. heat a small amount of oil on med-high and brown the pork chops on each side (5-8) minutes per side or until you like the color
  • 5. place pork chops in a baking dish and bake at 350 for about 30 minutes

We get these beautiful little 4 ounce bacon-wrapped center-cut pork chops in our meat order each month. This is Elswet's recipe for the perfect baked chop, and it is written for 2. The Ingredients list will undoubtedly state 8 ounces of pork chop because I've never been able to master this submitting a recipe thing. I've tried it without any marination time, and you can DEFINITELY tell the difference. It's not horrible, but it's nowhere near as good. DO NOT allow the pan to be rattled. You want the onions and apples to remain loosely piled atop the chops. It acts as a natural basting process as these cook and the juices run into the meat. I've never had apples with pork before, but it's fantastic! We hope you enjoy these like we do! NOTE: The pictured photo submitted by me was accomplished using this recipe served on a bed of my own "Better Than Instant, Instant Stuffing."

8 ounces center-cut pork chops
2 slices bacon
1 small Red Delicious apple
1 small onion
1 tablespoon white wine vinegar
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon meat tenderizer, no MSG, unseasoned
1/2 teaspoon black pepper
1/2 teaspoon ground sage
1/4 teaspoon ground celery seed
4 sprigs fresh thyme
1 large garlic clove, sliced very thin

Steps:

  • Wrap your center cut pork chops with bacon and fix into place. Line a loaf pan with aluminum foil and grease the bottom with a tiny bit of oil or cooking spray. Place your chops into the center of the pan, neither touching the sides, nor one another.
  • Directly onto each chop, deposit 1/4 teaspoon no MSG unseasoned meat tenderizer, flip chop and repeat. Both sides are now tenderized and oiled. Add thyme, salt, pepper, sage, ground celery seed, and garlic.
  • Using a medium grater, grate small onion equally right onto each chop, repeat with small apple. Split white wine vinegar and Worcestershire sauce evenly, pouring over onion and apple.
  • Cover and let marinade in refrigerator overnight if possible. 4 hours should do the trick, if you don't have the time.
  • Preheat oven to 350°F and bake, covered, for 1 1/2 hours. When done, the apple and onion should still be on top of the pork chop. Leave them as garnish and remove to serving plate. Serve hot over a bed of pork dressing. Enjoy!

Steps:

Decadently good. The secret to this recipe is to use a smaller, thinner pork chop...the breakfast type. Should you not be able to find them, don't be afraid to ask your butcher to cut them for you.

4 -6 pork chops, bone-in (very thin breakfast-type chop)
salt and fresh black pepper
1 dash garlic powder
4 -6 thin slices bacon (1 per chop)
1 egg, beaten
1 tablespoon milk or 1 tablespoon water
1/4 cup all-purpose flour
1/4 cup seasoned bread crumbs
1/4 cup parmesan cheese
1/4 cup vegetable oil
2 tablespoons butter

Steps:

  • Set up a dredging station by whisking the egg and milk together in a wide, shallow bowl. Combine the flour, bread crumbs and Parmesan together in another bowl; set aside.
  • Season the pork chops with salt, pepper and a dash of garlic power on each side.
  • Wrap the bacon around the pork chop, securing it on the side with a toothpick.
  • Dredge the chops one at a time in the egg then the breading mixture, pressing to coat evenly.
  • In large cast-iron skillet heat oil and butter over medium-high heat. Fry about 2- 3 minutes on each side. Remove and drain on a paper toweling. Remove the toothpicks before eating.
