Bacon Mac and Cheese bites with Bacon is the perfect decadent little morsel to serve during the holidays with a nice tall glass of champagne! A wonderful appetizer idea for holiday entertaining!

1 tablespoon (15 g) butter for greasing tins
1 cup (140 g) tiny elbow macaroni
3 tablespoon (45 g) butter
2 tablespoon (15 g) flour
1 cup (240 ml) milk
1/4 teaspoon (1.25 ml) cayenne pepper
1 teaspoon (5 ml) salt
1 minced garlic clove
freshly cracked pepper
1 cup (240 ml) sharp cheddar cheese + ½ cup (120 ml) mozzarella for topping
1/2 cup (120 ml) cooked bacon, chopped
1 egg
2 egg yolks
1/3 cup (40 g) flour
¼ cup (60 ml) chives

Steps:

  • Preheat oven to 375F (190C).
  • Grease a mini muffin tin lightly with melted butter and set aside.
  • Boil pasta according to package instructions.
  • Cook bacon in skillet or in microwave. To microwave line a plate with paper towel, place bacon on top, and then place more paper towel on top. Microwave on high for 6 mins until browned and crispy. Allow to cool on towel, and chop into a rough chop.
  • Then in a large skillet prepare the cheese sauce, melt 3 tablespoon butter, add flour and whisk and cook for 1 minute then slowly whisk in milk, whisking all the while, a smooth sauce will develop. Add cayenne, salt, garlic and pepper.
  • Then add cheddar cheese, and whisk until smooth. Remove from flame and allow to cool slightly.
  • Drain pasta and transfer it into a large bowl. Add cheese sauce and stir to combine. Then add egg and egg yolks, flour, and bacon. Stir to combine.
  • Using a mini ice cream scoop portion out into muffin tin, and top with the mozzarella cheese.
  • Bake for 13-15 mins until golden brown and cheese has melted. Allow to cool to set up and become stable.
  • Place on platter and top with freshly snipped chives. Serve with champagne! Enjoy!

1 pound uncooked large elbow macaroni
1 tablespoon plus 1 1/2 tsp. kosher salt, divided
3/4 cup fresh breadcrumbs
2 ounces Parmesan cheese, shredded or grated (about 1/2 cup)
6 thick-cut bacon slices, cooked and crumbled, divided
1/3 cup all-purpose flour
1 teaspoon black pepper
1 teaspoon dry mustard
3 cups whole milk
1 cup whole buttermilk
1/3 cup unsalted butter, plus more for greasing dish
12 ounces extra-sharp Cheddar cheese, shredded (about 3 cups)
4 ounces Monterey Jack, provolone, or mozzarella cheese, shredded (about 1 cup)
2 large eggs, well beaten

Steps:

  • Preheat oven to 350°F. Bring 3 quarts water to a boil over high in a large stock-pot. Stir in pasta and 1 tablespoon of the salt, and return to a boil. Cook, stirring occasionally, until pasta is tender but still firm, about 6 minutes. Reserve and set aside 2 cups cooking water, and then drain the pasta. Return pasta to pot, and remove from heat. Cover to keep warm.
  • Generously butter a 13- x 9-inch baking dish, and set aside. Toss together breadcrumbs; Parmesan cheese; and half of the cooked, crumbled bacon in a bowl, and set aside. Stir together flour, pepper, mustard, and remaining 1 1/2 teaspoons salt in a small bowl. Heat milk and buttermilk in a medium saucepan over medium, undisturbed, until barely steaming but not boiling, 4 to 5 minutes. Set aside.
  • Melt butter in a large heavy saucepan over medium-high. Add flour mixture. Cook, whisking often, until mixture is smooth and thick and has a delicate golden color and toasted aroma, about 2 minutes. Slowly whisk in warm milk mixture. Bring to a boil over high. Cook, stirring often, until thickened to the texture of cream, about 3 minutes.
  • Stir shredded Cheddar and Monterey Jack cheeses into milk mixture, and remove from heat. Stir in beaten eggs until mixture forms a smooth sauce.
  • Uncover cooked pasta, and stir. (If pasta sticks together, stir in reserved warm cooking water, and drain again.) Stir cheese mixture and remaining bacon into drained pasta in stockpot.
  • Transfer pasta mixture to prepared baking dish, and sprinkle evenly with breadcrumb mixture. Bake in preheated oven until firm, puffed up, and lightly browned, 35 to 40 minutes. Serve hot or warm.

1 cup seasoned bread crumbs, divided
2 tablespoons butter
2 tablespoons all-purpose flour

1-3/4 cups 2% milk
2 cups shredded sharp cheddar cheese, divided
1 cup shredded Swiss cheese
3/4 cup biscuit/baking mix
2 large eggs, lightly beaten

Steps:

  • Preheat oven to 425°. Cook macaroni according to package directions; drain., Meanwhile, sprinkle 1/4 cup bread crumbs into 36 greased mini-muffin cups. In a large saucepan, melt butter over medium heat. Stir in flour and seasonings until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in 1 cup cheddar cheese and Swiss cheese until melted., Remove from heat; stir in biscuit mix, eggs and 1/2 cup bread crumbs. Add macaroni; toss to coat. 2 tablespoons flour
salt & freshly ground black pepper
1 cup milk
1 cup shredded cheddar cheese
8 ounces elbow macaroni
24 slices precooked bacon
1/4 cup italian panko breadcrumbs
1/4 cup chopped chives

Steps:

  • Cook the pasta for 4 minutes less than the package instructions. Drain and set aside, reserving 1⁄4 cup of the pasta cooking water.
  • Preheat oven to 350 degrees F.
  • In a medium saucepan over medium heat, melt the butter and then add the flour. Whisk together, cooking until the flour resembles wet sand and begins to smell nutty and fragrant. Add the milk, whisking until there is no lumps. Bring to a boil and cook for one minute, stirring often.
  • Remove from heat and stir in the cheese. Season generously with pepper and add salt to taste (this will depend on the saltiness of your cheese.) Add the pasta and fold together until the pasta is coated, add 1 tablespoon of the pasta cooking water, if necessary, to loosen.
  • Lightly grease a muffin tin and line each cup with a piece of precooked bacon to come up sides of cup. Spoon mac and cheese into each of the cups and then top with some Italian panko breadcrumbs.

1/4 lb elbow macaroni
1 1/2 tablespoons unsalted butter, plus more for brushing
1/4 cup freshly grated parmesan cheese (do not use the stuff in the green can!)
1 tablespoon flour
1/4 teaspoon dry mustard
3/8 cup milk
2 ounces cheddar cheese, shredded (1 packed cup)
2 ounces deli-sliced American cheese, chopped
1 large egg yolk
1/4 teaspoon paprika (optional)

Steps:

  • Preheat the oven to 425°F.
  • In a large pan of boiling salted water, cook the macaroni until al dente. Drain well, shaking off any excess water.
  • Brush mini muffin tins (48 mini-cups total) with butter. Sprinkle with 2 tablespoons of the Parmesan.
  • In a large saucepan, melt the 1 1/2 tablespoons of butter. Whisk in the flour and mustard over moderate heat for 2 minutes. Whisk in the milk and cook, constantly whisking, until boiling, about 5 minutes. Add the cheddar and American cheeses and whisk until melted. Mixture will be very thick. Remove from heat, and whisk in the egg yolk and paprika. Fold in the macaroni.
  • Spoon slightly rounded tablespoons of the macaroni into the prepared muffin cups, packing well. Sprinkle the remaining Parmesan on top.
  • Bake for about 10 minutes, until golden and sizzling. Let cool for 5 minutes. Carefully loosen the mini macs, remove from pan to a platter, and serve.

16 ounces one box elbow macaroni
1/2 cup butter
1/2 cup sifted flour
4 cups milk
2 -3 teaspoons hot sauce
16 ounces shredded sharp cheddar cheese
16 ounces crumbled bacon
top with shredded parmesan cheese and breadcrumbs
top evenly with shredded sharp cheddar cheese (My personal favourite)

Steps:

  • Cook macaroni according to box directions and set aside.
  • In a medium saucepan melt butter over low heat. Add flour and stir constantly until smooth.
  • Turn heat to medium and add milk stirring constantly until thick. (About 10 minutes).
  • Add hot sauce. Stir until mixed in evenly.
  • Add pasta, bacon and cheese. Mix until cheese melts, bacon is mixed in, and pasta is evenly coated.
  • Pour macaroni and cheese into a 9x13 baking dish and top according to taste.
  • Bake in preheated oven at 350 degrees for about 25-30 minutes. (If using parmesan cheese and breadcrumbs take it out when the top looks lightly browned. If using cheddar cheese topping take out when top becomes darkened, but not burnt.).
