3 cups fresh cranberries
3 cups chopped apples
1 cup sugar
1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/2 cup melted butter

Steps:

  • Grease a 2-qt baking dish. Spread cranberries and apples in the dish. Sprinkle with 1 cup sugar.
  • In a small bowl mix the oats, brown sugar, and pecans until well combined. Add the butter, stirring until mixed.
  • Sprinkle the oat mixture over the fruit in the baking dish.
  • Bake at 325 degrees for 45 minutes.

2 granny smith apples
1 tablespoon butter
1 cup cranberries (fresh or frozen and thawed)
2 tablespoons honey
1/4 teaspoon ground cardamom
6 dates, pitted and chopped
1 orange, juice and zest of
2 tablespoons roasted almonds, roughly chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Cut 1/2 inch off the top of the apples and reserve tops. Use a paring knife or spoon to hollow out the apples, leaving about a 1/2-inch thick wall and base. Set aside.
  • Melt butter in a large skillet over medium heat.
  • Add cranberries, honey, cardamom, dates and orange juice and zest and cook until the cranberries begin to collapse and liquid thickens, 3 to 4 minutes. Stir in almonds.
  • Spoon cranberry mixture into apples then replace the apple tops. Put into a small baking dish filled with 1/4 inch water, cover with foil and bake until tender, 15 to 30 minutes (depending on apples).
  • Uncover, and carefully pour off the water and continue baking until very tender and golden, 10 to 15 minutes more.

4 large Golden Delicious apples
1/2 cup golden raisins
1/2 cup dried cranberries
1/3 cup (packed) golden brown sugar
1/4 cup chopped dried apricots
3/4 teaspoon ground allspice, divided
1/4 cup (1/2 stick) unsalted butter, melted
2 cups sparkling apple-cranberry juice
1/4 cup frozen concentrated cranberry juice cocktail, thawed

Steps:

  • Preheat oven to 400°F. Remove stems from apples.Using melon baller, scoop out core of each apple, making 1-inch-wide hollow center but leaving bottom of apple intact. Make 1/8-inch-deep cut in skin around center of each apple. Arrange apples, hollowed side up, in 8x8x2-inch glass baking dish.
  • Mix raisins, cranberries, sugar, apricots, and 1/2 teaspoon allspice in small bowl. Pack fruit mixture into hollows of apples. Sprinkle any remaining fruit mixture around apples in dish. Drizzle butter into filling and around apples in dish. Pour sparkling juice and cranberry concentrate into dish. Sprinkle remaining 1/4 teaspoon allspice into dish. Bake apples uncovered until tender, occasionally basting with cranberry juice mixture, about 1 hour 10 minutes.
  • Transfer apples to 4 bowls. Pour juices from dish into medium saucepan and boil until thick enough to coat spoon, about 4 minutes. Spoon sauce over apples.

2 cups apple cider
6 tablespoons light corn syrup
2 tablespoons light brown sugar
8 tablespoons unsalted butter, diced
3 golden delicious apples, peeled, cored, and cut into 1/2 inch cubes (1 1/4 lb.)
2 cups cranberries (fresh or frozen, thawed and patted dry)
1/2 cup sugar, plus more if needed
12 thick slices bread, cut on a sharp diagonal, from a day-old baguette
2 1/2 cups purchased eggnog
1/2 teaspoon freshly grated nutmeg
ground cinnamon, a pinch
3 tablespoons melted unsalted butter

Steps:

  • For cranberries and apples--whisk together the apple cider, corn syrup, and brown sugar in a large heavy saucepan set over high heat.
  • Boil until reduced to 1 cup, about 15 minutes.
  • Whisk in 4 tbsp of the butter until melted.
  • Remove from the heat and set aside.
  • Melt the remaining 4 tbsp butter in a large heavy frying pan over medium heat until hot.
  • Add the apples and saute, stirring 2 minutes.
  • Add the cranberries and sugar, and stir until the cranberries begin to pop, about 2 minutes.
  • Stir in the reduced cider mixture and cook until the mixture has reduced to a syrup-like consistency, about 6 minutes.
  • Taste and stir in more sugar, if desired.
  • For the eggnog french toast--arrange the bread slices in a 13 x 9 inch baking dish.
  • Whisk together the eggnog, nutmeg, and cinnamon in a bowl.
  • Pour the mixture over the bread.
  • Cover the pan with plastic wrap and refrigerate for 6 hours or overnight.
  • Arrange a rack in center of oven; preheat oven to 450°.
  • Butter a large, rimmed baking sheet with some of the melted butter.
  • Using a metal spatula, transfer the bread slices to the baking sheet.
  • Brush the bread with the remaining melted butter.
  • Bake for 10 minutes, and then turn and bake until golden brown on the outside, and still soft inside, 5-6 minutes.
  • Watch carefully so they do not burn.
  • Arrange two slices on each of six dinner plates and mound the warm fruits on top.
  • Dust generously with powdered sugar and serve.

My Mom had about 5 recipes for baked apples with honey. This one was always my favorite and was a Christmas time dish.

6 c green or yellow apples
1 1/2 c fresh cranberries
2 1/4 c water
3/4 c packed brown sugar
1/4 c honey

Steps:

  • 1. Preheat the oven to 350 degrees. Core the apples, and peel the top third of each one, leaving peel on the bottom of apples to help them hold together. Place them in a buttered baking dish, and fill the core holes with as many cranberries as possible.
  • 2. Meanwhile, stir together the water, brown sugar and honey in a small saucepan. Bring to a boil, stirring occasionally to dissolve the sugar and honey if necessary. Once it comes to a boil, pour the mixture over the apples.
  • 3. Bake for 1 hour in the preheated oven, basting with the juices every 15 to 20 minutes. Serve with vanilla ice cream.

1/4 cup dried cranberries
1/4 cup walnuts, chopped
4 tablespoons butter

  • Preheat oven to 400°F. Slice off top of apples and scoop out cores, leaving a well in the center. In a bowl mix brown sugar, cinnamon, cranberries and walnut until blended. Stuff each apple with 1/4 of the brown sugar mixture. Place apples in a deep baking dish, topping each with 1 tablespoon of butter and a sprinkle of cinnamon. Fill bottom of pan with water and bake for 50 to 60 minutes, until apples are tender.
