2 medium apples
2 tablespoons crumbled blue cheese, divided
2 tablespoons quick-cooking oats
2 tablespoons bran flakes
1 tablespoon golden raisins
1 tablespoon raisins
1 tablespoon brown sugar

Steps:

  • Cut apples in half lengthwise; remove cores. Place in an ungreased 8-in. square baking dish. Place 1 teaspoon of blue cheese into each half., In a small bowl, combine the oats, bran flakes, golden raisins, raisins and brown sugar; spoon into apples. Top with remaining cheese. Bake, uncovered, at 350° until tender, 35-40 minutes.

4 large baking apples, such as Honeycrisp
4 tablespoons (1/2 stick) butter, softened
1/2 cup brown sugar
3/4 teaspoon cinnamon
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 375 degrees F.
  • Wash and core apples, leaving enough of the core at the base of the apple to contain the filling.
  • Combine the butter, brown sugar, cinnamon and chopped pecans in a small bowl. Roll log shapes of the mixture and press enough into each apple to fill the core.
  • Fill a 2-quart baking dish with about 3/4 cup water, or enough to cover the bottom. Place the apples upright in the dish. Bake until the apples are soft and the filling is browned, 1 hour.

My friend sent me this recipe. I haven't gotten to try it yet but it sure sounds delicious. It has a special ingredient in it that I bet gives it a lemon citrus taste. I can't wait to try it.

6 -8 granny smith apples
16 ounces Pillsbury Refrigerated Crescent Dinner Rolls (big and flakey)
2 cups sugar
1 cup butter
1 teaspoon cinnamon
12 ounces Mountain Dew soda (soft drink)

Steps:

  • Peel apples, cut apples in half and core. separate crescent rolls into triangles. place one half of apple on wide end of triangle and roll apple up in roll.
  • Roll toward the point end.
  • Tuck dough in around apple.
  • Place apple in baking dish (9x13-inch).
  • Repeat with all apples and rolls.
  • Put sugar, butter, cinnamon and Mt. Dew in pot and place over medium heat until butter and sugar is melted (don't boil).
  • Pour over apple dumplings.
  • Place in 350°F oven for 45 minutes.
  • Baste dumplings every 15 minutes with liquid in dish.
  • Note: (Buy the apples that are in bag, if you buy the apples that are loose they will be larger and you might want to use only a quarter of the apple in each roll).
  • Put a scoop of vanilla ice cream over a hot dumpling and enjoy. Yum, yum, yum.

Real comfort food!! This one comes from a friend I worked with many years ago and one from my hand written cookbook. Makes a golden biscuit topping with a tasty sauce below. Nice with whipped cream and/or custard for a really filling dessert. I have altered the amount of water as suggested by reviewers but I find by allowing the pudding to stand after cooking the 2 cups should be ok.

1 cup flour
1 pinch salt
2 teaspoons baking powder
1 tablespoon sugar
1 cup apple (peeled, cored & chopped)
1/2 cup milk
1 cup brown sugar
1 tablespoon butter
1 lemon, juice of
1 1/2-2 cups boiling water
1/2 teaspoon cinnamon

Steps:

  • Sift flour, baking powder, salt & sugar together.
  • Add the chopped apple & milk.
  • Mix well and place in greased ovenproof dish.
  • Blend together the brown sugar, butter, lemon juice and boiling water.
  • Pour this over the batter in the dish.
  • Sprinkle cinnamon on top and bake at 350'F/180'C for 20 - 25 minutes.
  • After removing from the oven allow to stand for 10-15mins to allow the syrup to thicken and be slightly absorbed.
  • Serve warm with cream or custard.

6 apples - peeled, cored and sliced
½ cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ cup raisins
½ cup chopped walnuts
½ cup whole milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, or coat with non-stick cooking spray.
  • Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves. Stir spice mixture into apples until evenly distributed. Fold in raisins and walnuts. Spoon into prepared dish. Pour milk evenly over apple mixture.
  • Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly. Allow to cool slightly before serving.
