1 cup pancake/waffle mix
½ cup milk
1 egg
2 tablespoons butter, melted
1 cup apple - peeled, cored and sliced
½ teaspoon ground cinnamon
⅓ cup pecans, chopped
3 tablespoons maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Mix together pancake mix, milk and egg until blended. Set aside.
  • Pour melted butter in 9-inch pie plate. Place apple slices in bottom of pie plate. Sprinkle cinnamon and pecans over apples and drizzle syrup over top. Pour batter over apples.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes or until top springs back when touched. Loosen edges and invert onto serving platter. Cut into wedges before serving.

1 Granny Smith apple, seeded, peeled, cut into 1/4-inch-thick slices
2 teaspoons fresh lemon juice
4 large eggs
3/4 cup whole milk
3/4 cup all purpose flour
1 tablespoon plus 1/4 cup sugar
1/4 teaspoon salt
1/4 cup (packed) dark brown sugar
1 1/4 teaspoons ground cinnamon
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat oven to 450°F. Toss apple slices with lemon juice in medium bowl.
  • Whisk eggs and milk in large bowl to blend. Add flour, 1 tablespoon sugar and salt; whisk until batter is almost smooth (small lumps of flour will remain).
  • Mix brown sugar, cinnamon and remaining 1/4 cup sugar in small bowl.
  • Melt 1 tablespoon butter in each of two 6-inch ovenproof nonstick skillets over medium heat. Pour half of batter into each skillet. Arrange half of apple slices evenly over batter in each skillet.
  • Transfer skillets to oven and bake until pancakes are set around edges but still wet in center, about 8 minutes. Remove from oven; sprinkle half of brown sugar mixture over each pancake. Dot each with 1 tablespoon butter. Using spatula, carefully turn pancakes over. Return to oven. Bake until pancakes rise, sugar mixture melts to sauce consistency and top of pancakes is golden, about 6 minutes. Invert onto plates. Serve warm.

1/4 cup unsalted butter
1/2 cup sugar
1/2 teaspoon cinnamon
6 eggs
1 cup flour
1 cup milk

Steps:

  • Preheat oven to 375 degreed F.
  • Melt butter in an 8 inch oven proof skillet or casserole.
  • Saute apples in the butter.
  • Sprinkle with sugar and cinnamon, cooking until the sugar is melted and the apples have begun to soften.

1/2 cup flour
3/4 cup cholesterol-free egg product
1/4 cup granular no-calorie sweetener, divided
1/8 tsp. salt
1/2 tsp. ground cinnamon

Steps:

  • Heat oven to 475°F.

4 large eggs, lightly beaten
1 cup whole milk
1 cup all-purpose flour
1/8 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter
2 large apples, peeled, cored, and thinly sliced
1/2 teaspoon ground cinnamon
1/3 cup packed light brown sugar
1 pinch salt
powdered sugar, for serving
maple syrup, for serving

Steps:

  • In a large bowl, combine the eggs, milk, flour and vanilla extract. Whisk until just blended, being careful not to overmix. Set the batter aside to rest while you prepare the apples (at least 20 minutes).
  • Preheat the oven to 450°F.
  • In a heavy, ovenproof (preferably nonstick) 12-inch skillet, melt 2 tablespoons of the butter over high heat. Add the apples, cinnamon, nutmeg, and salt. Cook, stirring frequently, until the apples are soft and lightly golden around the edges, about 6 minutes. Add the sugar and cook, stirring, until the apples are caramelized and very soft, 2 to 3 minutes longer. Add the remaining tablespoon of butter and stir to melt.
  • Working very quickly, pour the batter evenly over the top of the apples. Using oven mitts or potholders, transfer the skillet to the oven and bake until the pancake is golden brown and puffed, about 15 minutes. Don't be alarmed when you see the edges of the pancake puff up and extend above the top of the inner edge of the pan--this is supposed to happen.
  • Using oven mitts or potholders, remove the skillet from the oven and serve the pancake, sprinkled with powdered sugar. Drizzle with maple sugar, if desired.
