This dish has everything you love about a traditional bagel breakfast sandwich, but it's all baked into a creamy, cheesy casserole that can be made the night before.

Unsalted butter or nonstick cooking spray, for greasing the baking dish
1 tablespoon olive oil
8 ounces breakfast sausage, casing removed (8 sausages) (see Cook's Note)
2 cups whole milk
3/4 cup half-and-half
Pinch of cayenne
8 large eggs
Kosher salt and freshly ground black pepper
1 1/3 cups packed baby spinach
2 large plain bagels, split and cut into 1-inch pieces
1 1/3 cups shredded provolone
8 ounces cream cheese, cut into 1/2-inch cubes
2 tablespoons everything bagel seasoning

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 9-by-13-inch baking dish with butter or cooking spray.
  • Heat the olive oil in a large skillet over medium high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon.
  • Whisk together the milk, half-and-half, cayenne, eggs, 3/4 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Fold in the sausage, spinach, bagels and 3/4 cup of the provolone, then pour into the prepared baking dish. Dot the top with the cream cheese and sprinkle all over with the everything bagel seasoning and remaining provolone (see Cook's Note).
  • Cover with foil and bake for 45 minutes. Uncover and bake until the casserole is puffed, golden brown at the edges and set in the center, about 45 minutes more. Let cool 15 minutes before serving.

3 bagel (4" dia)s plain bagels, split
4 large eggs
½ cup all-purpose baking mix
¼ cup milk
7 ounces smoked salmon or lox, diced
1 medium white onion, diced
2 cloves garlic, crushed
2 (8 ounce) packages light cream cheese, softened
1 ½ cups sour cream
⅓ cup chopped fresh dill
½ cup shredded reduced-fat Swiss cheese
½ cup shredded reduced-fat Monterey Jack cheese
ground black pepper to taste
½ cup chopped fresh chives

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch pan with nonstick spray.
  • Toast bagels.
  • Beat eggs, baking mix, and milk in a bowl until well blended. Toss salmon, onion, and garlic together in a second bowl. Whip cream cheese, sour cream, and dill together in a third bowl.
  • Cut toasted bagels into bite-sized pieces and place in the bottom of the prepared pan. Pour 1/2 of the egg mixture over the bagels, top with salmon mixture, then sprinkle with 1/2 of the Swiss and Monterey Jack cheeses. Pour in remaining egg mixture, top with cream cheese mixture, and sprinkle with remaining cheese. Season with pepper.
  • Cover and bake in the center of the preheated oven for 10 to 15 minutes. Uncover and bake until egg is set and cheese is nice and bubbly, about 10 minutes more.
  • Sprinkle chives over top and serve hot.

1/2 lb bacon, chopped
1/2 cup onion, chopped
3 bagels
2 cups cheddar cheese, shredded
12 eggs, beaten
2 cups milk
2 teaspoons fresh parsley, chopped
1/4 teaspoon pepper

Steps:

  • Cook bacon and onion together in skillet until brown; drain and set aside.
  • Slice each bagel into 4 thin slices.
  • Arrange 6 bagel slices in the bottom of a greased 9x13 baking dish.
  • Cover with the bacon and onion mixture, top with 1 cup Cheddar cheese then remaining bagel slices.
  • Whisk together eggs, milk, parsley, and pepper. Pour the egg mixture over the bagel layers and top with remaining cheese. Cover and refrigerate 8 hours or overnight.
  • Preheat oven to 400°. Bake, uncovered, 25-30 minutes, or until eggs are firm. Serve warm.

6 oz cheddar cheese

4 bagels (any variety)

Steps:

  • In a large mixing bowl, beat together the eggs, salt, milk and tarragon. In a separate bowl, shred both cheeses. Cut the bagels into small bite-sized pieces. Grease a 9x13 pan, add half the bagel pieces, sprinkle with half the cheese, then repeat layers. Pour the egg mixture overtop, cover and refridgerate overnight. 1 lb bulk pork sausage
4 everything bagels, cut into 1-inch cubes (8 cups)
1/2 cup chopped green onions
1/2 cup chopped red bell pepper
12 eggs
1 1/2 cups half-and-half
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 cups shredded sharp Cheddar cheese (8 oz)

Steps:

  • Spray 13x9-inch (3-quart) baking dish with cooking spray. In 10-inch nonstick skillet, cook sausage over medium-high heat until no longer pink; drain.
  • In baking dish, toss sausage, bagel cubes, green onions and bell pepper until well mixed. Set aside.
  • In large bowl, beat eggs, half-and-half, salt and pepper with whisk until well blended. Stir in 1 cup of the cheese; pour evenly over bagel mixture in baking dish. Cover with foil; refrigerate at least 4 hours but no longer than 24 hours.
  • Heat oven to 375°F. Uncover baking dish. Bake 30 to 40 minutes or until golden brown and knife inserted in center comes out clean. Sprinkle with remaining 1 cup cheese. Bake about 5 minutes longer or until cheese is melted. Let stand 10 minutes before serving.

3 plain bagels, ripped into small pieces
2 cups egg whites
1 cup crumbled turkey sausage
1/2 cup diced turkey bacon
1/4 cup white onion, chopped
3/4 cup low-fat cheddar cheese or 3/4 cup fat-free cheddar cheese

Steps:

  • Spray your slow cooker with no-stick cooking or baking spray.
  • Put in bagel pieces.
  • In a mixing bowl mix egg whites, turkey sausage, turkey bacon and onion.
  • Pour over bagels.
  • Top with cheddar cheese.
  • Cover the top of the slow cooker with a paper towel before you put the lid on.
  • Cook on high 3 hours or low for 6-7, or until eggs are set and bacon is cooked.
