Nonstick cooking spray, for the wire racks
24 strips bacon (approximately 1 pound)
1 fresh pineapple, peeled, cored and cut into forty to forty-two 1-inch cubes
3 tablespoons honey
3 tablespoons Dijon or spicy brown mustard
3 tablespoons hot sauce
Dash liquid smoke

Steps:

  • Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
  • Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
  • Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
  • Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
  • Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

2 (8 ounce) cans whole water chestnuts, drained
1 teaspoon garlic powder
1 ¼ cups soy sauce
24 slices thick sliced bacon, cut in half
1 (15 ounce) can pineapple chunks, drained
toothpicks
1 cup brown sugar

Steps:

  • Stir the water chestnuts together with the garlic powder and soy sauce in a small bowl. Set aside to marinate for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Drain the water chestnuts, discarding the soy sauce. Place a pineapple chunk in the center of each piece of bacon, then place a water chestnut on top of that. Fold the ends of the bacon over the water chestnut, and secure with a toothpick. Repeat with the remaining bacon, pineapple, and water chestnuts. Gently toss the bacon-wrapped chestnuts with brown sugar in a bowl, then place onto the prepared baking sheet.
  • Bake in the preheated oven for 25 minutes, then turn the pieces over, and continue baking 15 to 35 minutes longer until the bacon has cooked to your desired degree of doneness. Briefly drain on a paper towel-lined plate, and serve hot.

1 cup quinoa, rinsed
1/4 teaspoon salt

16 sea scallops (about 2 pounds), side muscles removed
1 cup drained canned pineapple tidbits

Steps:

  • In a small saucepan, bring broth to a boil. Add quinoa, salt and 1/8 teaspoon pepper. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed., Meanwhile, place bacon in a large nonstick skillet. Cook over medium heat, removing 8 of the strips when partially cooked but not crisp. Continue cooking remaining strips until crisp. Remove to paper towels to drain. Finely chop crisp bacon strips. Cut remaining bacon strips lengthwise in half., Wrap a halved bacon strip around each scallop; secure with a toothpick. Sprinkle with remaining pepper., Wipe the pan clean, if necessary; heat over medium-high heat. 2 (16 ounce) cans pineapple chunks, drained
1 (10 ounce) jar sweet-and-sour sauce
2 pounds bacon
1 box toothpicks

Steps:

  • Place the pineapple in a large bowl, and toss with sweet and sour sauce. Cover, and marinate overnight in the refrigerator.
  • To prevent burning, place toothpicks in a small bowl of water and soak 10 minutes.
  • Place a paper towel over a microwave-safe dish and arrange part of the bacon on the towel; cover with another paper towel. Cook the bacon in a microwave oven on medium just until partially cooked and still pliable, 2 to 3 minutes. Repeat with remaining bacon. Cut bacon strips in half.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet and set aside.

1/4 teaspoon freshly ground black pepper
1/4 teaspoon onion powder
4 canned pineapple rings
8 slices bacon, halved lengthwise

Steps:

  • Set an oven rack in the center of the oven if your broiler is in the oven, or set the broiler rack in the lowest position. Preheat the broiler. Place a wire rack over a baking sheet.
  • Combine the chili powder, garlic powder, pepper and onion powder in a small bowl.
  • Wrap each pineapple ring with 4 pieces of bacon, winding it around and through the hole in the center; sprinkle with the spice mix. Place on the prepared baking sheet.

4 chicken breasts (boneless & skinless)
4 ounces small can pineapple chunks (in syrup for a sweeter flavor)
1/3 cup light brown sugar (enough to lightly cover each one)
1 lb bacon

Steps:

  • Preheat oven to 375 degrees.
  • Clean each chicken breast and cut into 4 pieces.
  • Wrap each piece of chicken with 1 strip of bacon (you can use a toothpick but it is not necessary if you tuck the bacon into itself).
  • Place each wrapped chicken piece into your pan (I generally spray mine with a cooking spray so it is easier to clean after).
  • Sprinkle the tops of each piece with the brown sugar.
  • Top each piece with a pineapple chunk or 2 and pour the juice and remaining pineapple into the pan for the chicken to cook inches.

1 Tbsp butter
2 Tbsp light brown sugar
1/2 tsp vanilla extract
1 pineapple, cut into 1/2-inch thick by 2-3 inch long strips
1 lb bacon
Heavy-duty aluminum foil
Coconut cooking spray

Steps:

  • 1. Put maple syrup, butter, light brown sugar, and vanilla in a saucepan. Cook over medium-low heat, stirring until the butter has melted and it's smooth (only a few minutes). Then set aside.
  • 2. Cook bacon until slightly browned but still soft.
  • 3. Slice pineapple into 1/2 inch by 2-3 inch strips.
  • 4. Wrap pineapple strips with partially cooked bacon and secure with one to two toothpicks.

1 lb bacon (not too thin nor too thick)
1 pineapple peeled cored and cut in chunks (see notes)
toothpicks
2 Tbsp honey
2 Tbsp worcestershire sauce
3 Tbsp low sodium soy sauce
1 Tbsp fresh ginger
1/3 c ketchup
2 Tbsp pineapple juice.(buy a precut pineapple and use that juice)
1 tsp sriracha sauce (hot chili sauce)

Steps:

  • 1. Preheat oven to 375 degrees. Cut raw bacon in half and place on a baking sheet covered with aluminum foil in single layer. Bake for 3 minutes, flip and bake for another 3 minutes. Let cool for 5-10 minutes. Wrap each piece of bacon around a pineapple chunk. Secure with toothpick and place back on the baking sheet covered with aluminum foil. Place in oven.
  • 2. Combine honey, Worcestershire sauce, soy sauce, ginger, ketchup, pineapple juice and sriracha in small saucepan and simmer for 10 minutes; stirring several times.
  • 3. Using brush baste with sauce after they have cooked for 20 minutes. Bake for 10 additional minutes or until bacon is crispy and the pineapple is heated through. Serve promptly with remaining sauce.

4 center cut pork chops 3/4
4 strips of good bacon
1/2 fresh pineapple cored and sliced to 1/2
salt and pepper to taste
just a sprinkle of chili pdr over each side of chops
olive oil, or canola oil (to coat grill and drizzle).

Steps:

  • 1. Heat Coals of the grill to Med hot to Hot. Oil Grats with Olive oil.
  • 2. Par Cook Bacon just to remove some of the grease. Drain on paper towels. Wrap each chop with bacon, Secure with toothpick.
  • 3. Drizzle Chops with Olive oil, Season Chops with Salt and pepper Then Sprinkle with Chili pdr. to your desired tastes.

2/3 cup ketchup

  • Cut the bacon in half.
  • Cut pineapple rings into chunks about the size of a waterchestnut.

1 cup fresh orange juice
1/4 cup soy sauce
3 tablespoons dark brown sugar, firmly packed
1 large fresh pineapple, peeled, cored and cut into 1-inch pieces

  • Soak 36 toothpicks in water for 30 minutes; drain and set aside.

1 fresh pineapple

Steps:

  • Preheat oven to 375 degrees.
  • Core/Slice pineapple into bite sized chunks.
  • Cut bacon into thirds.
  • Line the bottom of a broiler pan with foil (very important!).
  • Spray the broiler rack with non-stick spray.
  • Wrap bacon around pineapple and place the bites on the rack/broiler pan.
  • Bake around 20 minutes and check.
  • Continue baking, checking every 5 minutes, until the bacon is cripsy.
  • Let cool slightly and remove to a serving dish.

BACON WRAPPED PINEAPPLE

I started making these for family get-togethers and everyone LOVED them. No one could eat enough of them. I am also using them when I cater my daughter's wedding.

½ pound sliced bacon, cut into thirds
1 (20 ounce) can pineapple chunks in juice, drained
½ cup packed brown sugar
½ cup mayonnaise
¼ cup chili sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Wrap each chunk of pineapple with a piece of bacon and secure with toothpicks. Place in a shallow baking dish. In a small bowl, stir together the brown sugar, mayonnaise and chili sauce; pour over the bacon wrapped pineapple.
  • Bake uncovered for 25 minutes in the preheated oven, until bacon is crispy on the edges and the sauce is bubbly. Serve warm.
