1 pound ground beef
½ pound ground pork sausage
1 sleeve crushed buttery round crackers (such as Ritz®)
⅔ cup ketchup
½ cup chopped onion
2 eggs
1 teaspoon onion powder
1 teaspoon garlic powder
12 slices thick-cut bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) .
  • Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
  • Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

1/4 cup ketchup or chili sauce
2 tablespoons light or dark brown sugar
2 teaspoons cider or white vinegar
2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black paper
2 teaspoons Dijon mustard
2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 up milk, buttermilk or low-fat plain yogurt
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
2/3 cups crushed saltine crackers (about 16) or quick oatmeal or 1 1/3 cups fresh bread crumbs
1/3 cup minced parsley
6 ounces thin-sliced bacon

Steps:

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
  • Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
  • Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
  • Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
  • Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

1 onion, chopped

1 cup onion, diced, sauteed

1 ½ cups grated parmesan cheese, divided

½ cup milk
½ cup fresh parsley, finely chopped

½ cup brown sugar

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large bowl, mix together beef, cooked onions and garlic, Parmesan, eggs, panko, salt, pepper, Worcestershire, milk and parsley. Set aside.
  • In another bowl, make the glaze by mixing ketchup, brown sugar, mustard powder, onion powder, paprika, and tomato paste. Reserve half of the glaze in a separate bowl for after the meatloaf is cooked. Set aside.
  • In a large bowl, mash cooked potatoes, butter, salt, pepper, milk and parmesan to desired consistency. Set aside.
  • Line a bundt pan with slices of bacon and use a pastry brush to spread a layer of glaze on the inside of the bacon.
  • Add ⅔ of the meat to the bottom of the bundt pan and spread up the sides and up the middle of the pan making a "bowl" for the mashed potatoes.
  • Add the mashed potatoes into the "bowl" and smooth out. Top the mashed potatoes with the remaining meat, smooth out, coat the top with the raw meat glaze, and fold the slices of bacon over the top of the meat. Cover with foil and bake for 1 hour, remove the foil after 30 minutes and carefully drain some of the fat before putting it back into the oven.
  • Place a cooling rack on top of the bundt pan and flip over onto a baking sheet. Remove the bundt pan and coat the meatloaf with the reserved glaze.
  • Broil on high for 3-5 minutes or until the glaze has caramelized.

1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce

Steps:

2 tablespoons olive oil, divided
1 medium onion, diced, divided
6 cloves garlic, chopped, divided
1 ½ pounds ground beef chuck
½ pound ground pork
2 large eggs
½ cup chopped fresh parsley
2 tablespoons paprika
4 teaspoons ground black pepper
2 teaspoons sea salt
aluminum foil
1 (12 ounce) package button mushrooms, sliced
12 (1 ounce) slices Provolone cheese

Steps:

  • Place 1/2 of the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove to a paper towel-lined plate to drain.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1/4 of the diced onion and 4 chopped garlic cloves and lightly saute until soft, about 3 minutes. Remove to a large bowl, and add ground beef, ground pork, eggs, parsley, paprika, pepper, and sea salt. Blend together with your hands until mostly combined. Place in the refrigerator.
  • Preheat the oven to 375 degrees F (190 degrees C). Lay a 2-foot square piece of aluminum foil on a flat surface.
  • Wipe the skillet clean, add remaining 1 tablespoon oil, and heat over medium heat until shimmering, 1 to 2 minutes. Add mushrooms and saute until all moisture has evaporated and mushrooms start to turn dark reddish-brown with golden spots, 8 to 10 minutes. Add remaining 2 cloves chopped garlic and cook until fragrant, about 30 seconds.
  • Place meat mixture in the center of the aluminum foil and shape meat into an evenly thick square about 1/2 inch thick, making sure there are no gaps or thin spots. Cover meat with overlapping slices of Provolone cheese, leaving about 1/2 inch to 1 inch uncovered meat around the perimeter. Lay cooked bacon strips over Provolone cheese and spread mushrooms evenly over bacon.
  • Lift one end of the foil and begin rolling the meat in a pinwheel fashion. Place meatloaf in a baking dish, molding the ends to create a seal around the stuffing; discard the foil. Lay remaining uncooked bacon over meatloaf, leaving about 1/4 inch between each slice, and tucking ends in under the loaf.
  • Cook in the preheated oven for 45 minutes, turning halfway. Switch to the broil setting and cook until meat is no longer pink in the center, about 15 minutes more. An instant-read thermometer inserted into the center of the meat should read at least 160 degrees F (70 degrees C).

1/2 cup diced onion
1/4 cup ketchup
1 teaspoon garlic powder
1 teaspoon onion powder
37 saltine crackers, crushed
1 lb bacon

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl mix ground beef, eggs, diced onions, ketchup, garlic powder, and onion powder. Mixing with your hands is best. Mix it real well.
  • Crush the crackers. I always crush the crackers while still in their sleeve.
  • Pour crushed crackers into beef. Mix the crackers into the beef mixture well.
  • Form into a loaf shape and set to the side.
  • Take the bacon and divide it into even amount.
  • Take 1 half of the bacon and lay side by side long ways.
  • Fold every other bacon strip in half.
  • Lay 1 of the other half of the reserved bacon strips across.
  • Unfold the half folded bacon strip.
  • Fold the other every other bacon strips that were not folded in the previous step.
  • Lay a slice of bacon across and then unfold.
  • Repeat until you run out of room.
  • Start on the other half of the bacon strip until you have made a weave.
  • Pace the loaf shaped beef mixture into the center on your bacon weave.
  • Wap the weave around the beef loaf shaped mixture.
  • Flip the bacon wrapped meat loaf upside down,making the ends of the bacon tuck under the loaf.
  • Place the loaf in the center of the oven on a cookie sheet.
  • It takes about an hour to cook.
  • To make sure it is cooked all the way through, I sometimes use a meat thermometer but that isn't really needed. Sometimes I leave it in for 15 more minutes if I am worried it isn't cooked all the way.

Ground buffalo is much leaner than ground beef, which is the biggest challenge. In case you're new, it's the fat that provides most of the flavor and moisture. Also, for whatever reason, pre-packaged buffalo is ground very fine, almost to a paste, which can lead to a rubbery meatloaf, unless you use a few tricks.

1 lb ground beef
1 egg
2 Tbsp bbq sauce (your favorite, I used Jack Daniels original)
1/4 c dry seasoned bread crumbs
1 1/2 tsp Parmesan cheese, grated
1/2 tsp garlic powder
1/8 tsp sea salt, optional
2 clove garlic zested or minced
1/4 tsp rounded, dry mustard
1/4 tsp rounded, oregano
1/4 tsp rounded, basil
1/4 tsp rounded, black pepper fresh ground
2-3 green onions, white and green part, chopped finely
1/2 small green bell pepper, small dice
1 c shredded sharp cheddar cheese (reserve 1/4c for on top)
TOPPING
3 slice bacon cut in half (6 smaller slices total)
2 Tbsp bbq sauce
1 Tbsp rounded, light brown sugar not packed

Steps:

  • 1. Preheat oven to 375° F. Get out a 9x13 baking pan. Do not use a bread pan. You can line this with foil to help with clean up, or just spray with a non-stick spray. Set aside.
  • 2. Keep hamburger in the refrigerator until the last minute. In a bowl, combine the bread crumbs, Parmesan cheese, garlic powder, salt, minced garlic, dry mustard, oregano, basil, pepper, onion and bell pepper. Stir it around a bit to get everything mixed. Add the 2 tsp bbq sauce and egg; mix. Grab the rest of the ingredients... this will go quickly so the "loaf" holds its shape.
  • 3. Take the hamburger and add this to the bowl, QUICKLY mix together with clean hands... forget the spoon. Place 1/2 of the hamburger mix in the center of your pan. Make a "well" with your hand so it looks like a hollowed out 1/2 potato. Add 3/4 cup of the cheese and gently press it in.
  • 4. Add the second half of the hamburger on top and press it together and shape like a log.
  • 5. Lay the bacon strips on top of the loaf.
  • 6. Smear the last 2 tbsp of bbq sauce on top of the bacon. Sprinkle brown sugar on top of the sauce and put this into the oven for 60 minutes. (temp should be 160°F internally)
  • 7. After 60 minutes, you can sprinkle the remaining 1/4 c cheese on top and return it to the oven for 5 minutes, just to let the cheese melt. If you don't want to to this, you can just stuff all the cheese inside and leave the outside to the bacon and bbq sauce.

1 1/2 bunches fresh Italian parsley, minced
2 pounds grass-fed ground beef
1 cup ketchup

  • Preheat oven to 375 degrees F.
  • Combine panko, milk, pecorino, Worcestershire sauce, pepper, salt, eggs, pasilla chiles and Italian parsley in a large mixing bowl and mix well. Add the ground beef and hand-mix until well blended. Set aside.
  • To make the glaze, combine ketchup, brown sugar, dry mustard and hot sauce in a small mixing bowl. Stir well using a rubber spatula. Set aside.
  • Lay bacon down slightly overlapping side-by-side in a half-sheet pan. Spray a 9-by-4-inch loaf pan that's 6 inches high with nonstick spray. Place the beef mixture in the pan and pat down to form a meatloaf. Turn pan over and tap out the meatloaf into your hand. Place the meatloaf over the center of the bacon slices. Working with one slice at a time, fold ends of each bacon slice over the top of the meatloaf. Turn loaf over and place on a rack set in a baking sheet to allow the fat to drain while baking.
  • Using the rubber spatula, spread half the glaze over the meatloaf. Bake for 1 hour, then apply remaining glaze. Continue to bake until the internal temperature reaches 165 degrees F, about another 20 minutes.

  • 1. Heat oven to 350 degrees F. Line a 13X9-inch baking pan with non-stick aluminum foil. Set aside.
  • 2. In a large bowl, combine the ground beef, Panko, dry soup mix, eggs, French fried onions, water, and ketchup. Mix well with hands.
  • 3. Form into a "football" shape loaf and place in prepared baking pan.
  • 4. Make a "trench" down the middle of the loaf. Place cheese sticks in the trench, breaking to fit.
  • 5. Re-shape top of loaf covering cheese completely with meat.

1 cup Italian seasoned breadcrumbs
1 small yellow onion, diced
8 ounces sharp cheddar cheese (cut into fourths)
6 slices bacon
2 eggs
3 tablespoons ketchup

1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon oregano

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl combine ground beef with eggs and 2 tablespoons ketchup.
  • Once beef mixture is well mixed, add dry ingredients: breadcrumbs, Parmesan cheese, garlic, salt, oregano, basil, and pepper. Followed by the diced onions.
  • Set mixture aside.
  • In 9x13 pan, line the bottom of the pan with the strips of bacon-- the width, not the length of the pan (you can use a loaf pan, but I warn you, the meatloaf is greasy, and the loaf pan can get very full).
  • Take half of the meat mixture and pat it across the top of the bacon. This should be the bottom part of your loaf. Take THREE of the four pieces of cheddar cheese and place them across the center of the meat mixture (this will be your cheesy center!).
  • Take the second half of the meat mixture and add it on top of your cheese. Mold the meat into a loaf shape. The cheese should be completely covered and in the center of the loaf.
  • Finally, pull the bacon and wrap it around the loaf. Take your final tablespoon of ketchup and thinly spread it across the top of meatloaf.
  • Put meatloaf in oven and cook for 60 minutes.
  • Take final quarter of cheddar cheese and cut in to slices.
  • Place these final cheese slices on top of the meatloaf, and put meatloaf back into oven until the cheese is melted (approximately 5 minutes.) Let meatloaf sit for a few minutes to cool before serving.

2 lb 85% lean ground beef
1 egg
1/2 c ketchup
1 c bread crumbs
2 tsp garlic powder
2 tsp emeril's seasoning
2 tsp salt
1 medium yellow onion, grated on a box grater
1 large carrot, grated on a box grater
1 lb thick cut bacon
MAPLE BOURBON GLAZE
1/4 c brown sugar
1/4 c bourbon
1/4 c maple syrup
1 c ketchup

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Make the glaze: put all of the glaze ingredients in a small saucepan and heat over medium heat. you want it to simmer, but not boil, for about 10 minutes. Stir frequently. While this simmers, you can start assembling the meat mixture.
  • 3. Mix the meatloaf: In a large bowl add ketchup, egg, onion (grate on a medium grate on a box grater), carrot (grate on a medium grate on a box grater), garlic powder, Emeril's seasoning, and salt in a large mixing bowl, and mix to combine evenly. Add hamburger and breadcrumbs to the wet ingredients and mix thoroughly to combine. Set aside.
  • 4. Make a bacon basket weave: On a piece of parchment or wax paper lay out 6 thick cut bacon slices next to each other. Fold every other one in half (3 down, 3 up), and place another piece of bacon next to the folded down bacon. Unfold the 3 pieces of bacon over the top of the piece you just laid down, and then fold down over that piece of bacon the other 3 slices that were not previously folded. where those fold down, you want to put another slice of bacon, and then repeat the process of folding back over, and folding down the other three. One more slice of bacon, and then half of the bacon weave is done. Repeat for the other half of bacon. You should have a total of 12 slices of bacon made into a basketweave mat of yumminess waiting to happen.
  • 5. Shape the Loaf: Gather up the meatloaf mix by hand and shape it into a loaf about three inches shy of the length of your bacon mat, and about 1/3 of the width. You need to eyeball it here and use your best judgment so that when you lay the loaf in the middle, the long sides will have enough bacon to wrap up and over to the top so they almost meet each other, and the short sides will wrap up to totally cover the end pieces. Lay it in the center of the bacon mat.
  • 6. Fold the bacon mat up and over the length of each of the long meatloaf sides so that it wraps up and over to the top, then fold the bacon from the ends up.
  • 7. Place the dish you want to bake the loaf in over the loaf, and then grab the paper on one side, and hold the pan tight on the other side, and flip it over so that the loaf slides inside the pan. Center it in the pan, and then brush on the glaze over the maple. Bake in a 350 degree oven for 30 minutes and then start basting every 15 minutes with the glaze. Keep basting until a meat thermometer inserted in the center

3 tablespoons extra virgin olive oil
1 large onion, diced
1/2 lb mushroom, finely chopped
3 large garlic cloves, minced (about 2 tbsp)
1 cup heavy cream
1 1/2 teaspoons fresh oregano, minced
1 1/2 teaspoons fresh thyme, minced
1 1/2 teaspoons pepper
1 1/2 teaspoons salt
1 lb ground pork
1 lb ground beef
1 lb ground veal (I use instead spicy ground pork meat)
1 egg, lightly beaten
3/4 lb smoked bacon, sliced (about 13 slices)

Steps:

  • In large skillet over medium heat heat olive oil and saute onions until translucent (about 8 minutes).
  • Add mushrooms and garlic and cook (medium high heat) 3-5 minutes.
  • Stir in cream, oregano, thyme, salt and pepper. Bring to a boil, then reduce heat and simmer about 5 minutes. Transfer to large bowl and let cool.
  • Mix beef, pork and veal; stir in egg and mix well. Add cream mixture and combine well. It will look a bit too liquid, but it is just fine.
  • Position 9" x 5" x 2 1/2" loaf pan with short side facing you. Line bottom and sides of pan with bacon, placing them parallel to the short end, slightly overlaping each other (their ends will hang over the edge).
  • Put meat mixture in pan and smooth top. Fold bacon striips over the meat, enclosing it completely.
  • Place loaf pan in the center of a roasting pan. Fill roasting pan half way up with boiling water. Cover both pans with aluminum paper.
  • Carefully place pans in middle shelf of hot oven (400 F) and bake 1 hour. Remove foil and bake until instant thermometer inserted in center of meatloaf registers 165 F (about 30 minutes more). (at this stage I unmold the meatloaf and bake it uncovered, because I like crispy bacon.).
  • Remove pan of meatloaf from oven and let rest 10 minutes. Pour juices from pan into sauceboat.
  • Cut loaf into 8 slices, taking care to cut bacon completely. Drizzle with pan juices.

  • Heat the oven to 400 degrees F and arrange a rack in the upper third. Line a baking sheet with foil and set aside.
  • Add the oil to a medium pan over medium heat. When the oil shimmers, add the onion, garlic and thyme and cook until softened, about 3 minutes; set aside.
  • In a large bowl, add the eggs, buttermilk, mustard, Worcestershire, salt, and pepper. Whisk until the eggs are broken up and evenly combined. Add the onion mixture, ground pork, sausage, cracker crumbs, and parsley. Mix until thoroughly combined (don't squeeze mixture).
