16 large Sea scallops ((thawed in the fridge if frozen; ~1 lb))
2 tbsp Lemon juice
1/2 tsp Garlic powder
1/4 tsp Sea salt
1/8 tsp Black pepper
8 strips Bacon ((cut in half to make shorter pieces))
1/4 cup Lemon butter sauce ((optional))

Steps:

  • Preheat the oven to the Broil setting. Place an oven-safe rack over a baking sheet.
  • Pat the scallops dry. Toss the scallops with lemon juice, garlic powder, salt, and pepper.
  • Arrange the short (halved) bacon slices in a row on a cutting board. Place a scallop at the end of one slice and roll up. Secure with a toothpick and place onto the rack over the baking sheet. Repeat with the remaining scallops and bacon.
  • Broil 6 inches from the heating element for 5 minutes. Flip the scallops and broil for 4-7 more minutes, until the bacon is crispy.
  • If desired, drizzle with lemon butter sauce right before serving.

9 oz. bacon (or 10 strips)
1 lb. scallops (large, about 10-12 count/pound)
2 Tbsp. butter (melted)
1 clove garlic (crushed)
2 tsp. coconut sugar (or brown sugar, optional)
¼ tsp. salt (to taste)
Pinch of black pepper (to taste)
1-2 Tbsp. avocado oil (or other high-smoke point oil)

Steps:

  • Cook bacon over medium to medium-low heat in a large skillet for 10-12 minutes. The bacon should be almost cooked through but still pliable.
  • Remove the bacon from the skillet and let drain on a paper-towel lined plate.
  • Prepare scallops by removing the tough tendons, or side muscles, and patting dry.
  • Wrap one piece of bacon around each scallop. Secure the strip of bacon with a toothpick.
  • Whisk together butter, garlic, sugar, salt, and pepper in a small bowl.
  • In a large, clean skillet over medium to medium-low heat add 1 tablespoon of a high smoke point oil.
  • Cook wrapped scallops for 3-4 minutes per side, or until the internal temperature reaches 120 degrees.
  • Brush the butter garlic sauce on top during the last 1-2 minutes of cooking.
  • Remove scallops from the skillet and let rest for 5 minutes. Once the temperature reaches 130 degrees they are ready to be served.
  • Serve scallops with a sprinkle of fresh parsley and lemon wedges. Enjoy!

12 slices applewood smoked bacon or other thick-cut bacon
12 (U-10 size) sea scallops
2 tablespoons Essence, recipe follows
1/2 teaspoon salt
12 (6-inch) bamboo skewers, soaked in warm water for about 30 minutes
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
  • Preheat a grill to medium-high heat.
  • Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.

1/8 teaspoon pepper

Steps:

  • Place bacon in an ungreased 15x10x1-in. baking pan. Bake at 375° for 7-10 minutes or until partially cooked but not crisp.
