5 strips bacon
1 1/2 lb. asparagus, trimmed
1 tbsp. olive oil
1/2 tsp. kosher salt
Black pepper, to taste
2 tbsp. maple syrup

Steps:

  • Preheat the oven to 425 ̊. Place a rack on a rimmed baking sheet. Cut each strip of bacon in half lengthwise. Divide the asparagus into 10 bunches and wind half a bacon strip around each bunch. Drizzle the asparagus bundles with the olive oil, gently turning to make sure the tips are well coated.
  • Arrange the asparagus bundles on the prepared rack. Season with the salt and a few grinds of pepper. Brush the bacon with the maple syrup.
  • Roast until the asparagus is tender and the bacon is crispy and caramelized, 30 to 35 minutes.

2 pounds fresh asparagus, ends trimmed
12 slices bacon
1/2 cup light brown sugar
1/2 cup (1 stick) butter
1 tablespoon soy sauce
1/2 teaspoon garlic salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

10 slices peppered bacon
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1/2 cup mayonnaise
2 teaspoons Sriracha (Asian chili sauce)
2 tablespoons plus 1 teaspoon fresh lime juice
1 tablespoon plus 1 1/2 teaspoons finely chopped fresh cilantro

Steps:

  • Preheat oven to 450 degrees. Separate asparagus into bundles of 3 stalks each. Carefully wrap a piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tip; secure with a toothpick. Transfer bundles to a rimmed baking sheet. 1 cup whole milk

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Divide the asparagus spears into 8 bundles. Wrap each bundle in the middle of the spears with one piece of bacon. Place the bundles seam-side down on the prepared baking sheet. Drizzle with the olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Bake until the bacon is fully cooked, about 25 minutes.

20 stalks fresh asparagus, rinsed
1 pound slice bacon
1/2 cup seedless raspberry jam
1/2 cup Dijon mustard
2 tsp honey
salt
Freshly ground black pepper

Steps:

  • Snap each asparagus stalk in two; discard the tough shorter ends. If needed, use a vegetable peeler to peel the tough outer layer from the remaining stems. Wrap each stalk entirely with bacon. In a large skillet or on a griddle, cook asparagus until bacon is just crisp and stalks are firm and bright green. Transfer to paper towels to drain. Reserve 2 teaspoons fo bacon drippings for dipping sauce. Heat the jam in a microwave for about 10 seconds or until soft. Whisk reserved bacon drippings, Dijon, honey and pinch of salt and pepper into jam until smooth. Serve asparagus with sauce for dipping.
