1 6 oz box Uncle Ben's® Long Grain & Wild Rice (Original or Fast Cook)
1 1 14.5 oz can chicken broth
1 ½ cups diced chicken (cooked)
1 cup diced apple
¼ cup milk
1 ½ cups shredded cheddar cheese (divided)
3 sliced cooked (crumbled bacon)

Steps:

  • Spray an 8x8 cooking dish with non-stick spray. Preheat oven to 400 degrees F.
  • Cook your chicken of choice before you assemble your casserole. This recipe isgreat for using a store bought rotisserie chicken, it tastes amazing and cutsout a lot of the work. You can also put your chicken in a crockpot to cookduring the day to speed this process up.
  • You also need to fry up the bacon, you can do it in the beginning or whilethe dish is baking. Cook and crumble it for the garnish.
  • In the prepared baking dish, combine the Wild Rice & seasoning packet,chicken broth, cooked and diced chicken, diced apple, milk, and 1 cup ofshredded cheese. Stir gently.
  • Cover the baking dish with foil and bake for 30 minutes.
  • Then, remove foil and bake for an additional 10 minutes.
  • Next, top casserole with remaining ½ cup cheese and crumbled bacon. Bake an additional 5 minutes.
  • Serve immediately and enjoy!

3 strips thick-cut bacon, chopped
1 1/2 cups long-grain white rice
1/2 teaspoon ground coriander
1 pinch ground cumin
1 cup chicken broth
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • Cook the bacon in a medium saucepan over medium heat, stirring occasionally, until almost crisp, about 10 minutes. Add the rice, coriander and cumin and cook, stirring, until the rice is coated and light golden, 1 to 2 minutes. Add the chicken broth and 1 cup water. Increase the heat to medium-high and bring to a boil. Cover the saucepan with a tight-fitting lid and reduce the heat to low; cook for 16 minutes, then let stand, covered, for 5 minutes. Fluff the rice with a fork and stir in the cilantro, parsley and salt and pepper to taste.

2 (14.5 ounce) cans chicken broth
1 cup uncooked wild rice
½ cup water chestnuts, sliced
¼ cup butter
1 teaspoon salt
½ pound fresh mushrooms, sliced
½ cup onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring chicken broth to a boil in a medium saucepan.
  • In a 1 1/2 quart baking dish, mix chicken broth, uncooked wild rice, water chestnuts, 2 tablespoons butter and salt.
  • Cover, and bake in the preheated oven 30 minutes.
  • While rice mixture is baking, melt remaining butter in a medium skillet over medium heat. Place mushrooms and onion in skillet, and slowly cook and stir until tender. Stir mushrooms and onion into the wild rice mixture, cover, and continue baking 30 minutes, or until liquid has been absorbed.

1 tablespoon butter or 1 tablespoon margarine
1 cup uncooked wild rice
1 1/2 cups sliced mushrooms
2 -3 green onions, thinly sliced (about 1/4 cup)
2 1/2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in 10 inch frypan (non-stick) over medium heat.
  • Cook wild rice, mushrooms and onions in butter about 3 minutes, stirring occasionally, until onions are tender.

2 tablespoons chopped onion
1 tablespoon butter
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 cup milk
1/2 cup sour cream
2 cups cooked wild rice
2 pounds fresh asparagus, cut into 2-inch pieces and cooked
3/4 cup shredded cheddar cheese
6 bacon strips, diced and cooked

Steps:

  • In a small saucepan, saute onion in butter until tender. Add flour and salt; stir to make a paste. Add milk; cook over medium heat, stirring constantly, until mixture thickens. Cool 1 minute more. Remove from heat; stir in sour cream until smooth. , In a greased 11x7-in. baking dish, layer wild rice, asparagus, sour cream mixture, cheese and bacon. Bake at 350° for 30 minutes.

Here's a tasty sounding recipe I found in a local newspaper. I haven't tried this one yet, but it's made with some of my favorite foods, so I imagine it'll be quite tasty. Per all reviewers I've changed the amount of chicken broth from the original 4 cups to 3 cups.

6 slices bacon, cut up
1/2 lb sliced fresh mushrooms
1 cup wild rice
3 cups chicken broth
salt

Steps:

  • Fry bacon til crisp and drain most of the drippings.
  • Crumble bacon and set aside.
  • Sauté mushrooms and wild rice in remaining bacon drippings about 3 minutes.
  • Add chicken broth and bring to a boil.
  • Cover pan and reduce heat to a simmer.
  • Cook 45-60 minutes or'til rice is puffed and tender.
  • Fluff rice with a fork, tast, and add salt to taste.
  • Cook uncovered to evaporate any excess moisture if necessary.
  • Toss with crumbled bacon before serving.
  • Makes about 6 cups.
