BACON TOMATO CASSEROLE

Steps:
- Cook noodles according to package directions; drain. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 2 tablespoons drippings. , In the drippings, saute the green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the noodles. Add half of the bacon., Transfer to a greased 2-qt. baking dish. Top with cheese and remaining bacon. Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted.

- Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
- Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. - Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large saucepan or skillet, add onion, bacon, salt, and pepper. Cook until bacon is crispy and onion is soft. Drain fat. Pour in tomato soup and stir; bring to boil. Reduce heat to low; add 1 cup Cheddar cheese and the milk. Stir until cheese is melted.

BACON ONION TOMATO PIE
This reminded us of a BLT. It does sound strange, but we loved the way all the textures and flavors were perfect together. It's sweet, smoky, and savory. This is a great way to use up the abundance of tomatoes this time of year.

- 1. Prick pie shell with fork and bake at 350 degrees for about 10 minutes.
- 2. Fry bacon. Cook till tender. Drain, set aside.
- 3. Peel and slice tomatoes to fill bottom of pie shell.
- 4. Sprinkle with chopped onion and salt and pepper.
- 5. Layer more tomatoes, salt and pepper (again).
- 6. Mix mayo, bacon and cheese and milk.
- 7. Spoon on top and pat down to cover tomatoes.
- 8. Sprinkle with Ritz crackers mixed with melted butter
- 9. Sprinkle Scallions on top.
- 10. Bake 350 degrees for 30 minutes.
