4 large potatoes, washed
4 slices bacon, diced
155 g packets frozen chopped spinach, thawed
4 tablespoons sour cream
4 green onions, finely sliced
salt and pepper
4 tablespoons parmesan cheese

Steps:

  • Preheat your oven to 190c.
  • Pierce the potatoes a couple of times, then bake in oven for 1 hour or until tender.
  • Meanwhile cook the bacon in a pan until crispy, then add the spinach and cook a couple of minutes more to dry it out.
  • Place spinach and bacon in a bowl.
  • Allow the cooked potatoes to cool a little, then split lengthways into two halves.
  • Scoop the flesh from the potatoes into the bowl with the bacon and spinach; Leave a bit of flesh in the shell to support it.
  • Add the sour cream and mash until smoothish.
  • Add the sliced green onions and season with salt and pepper; stir through.
  • Divide the mixture and fill the potato shells with it; sprinkle a talespoon of parmesan cheese over each.
  • Bake in the oven for a further 20 minutes or until well heated through and the cheese browned.

1 ½ large white onions, finely chopped
6 slices bacon, cut into 1 inch pieces
2 cloves garlic, minced
½ cup all-purpose flour
1 ½ teaspoons salt
¼ teaspoon ground black pepper
2 ½ cups milk
3 (10 ounce) packages frozen chopped spinach - thawed, drained, and squeezed dry
½ cup half-and-half

Steps:

  • Heat butter in a large skillet over medium heat. Cook and stir onion, bacon, and garlic until bacon is crisp, 5 to 7 minutes.
  • Whisk flour, salt, and black pepper into onion mixture until blended and the flour and drippings form a paste, 1 to 2 minutes.
  • Slowly whisk milk into onion mixture. Bring to a boil, continuously whisking, until sauce is thick and creamy, 3 to 5 minutes.
  • Stir spinach and half-and-half into sauce; cook until spinach is heated through, 4 to 6 minutes.

3 lbs idaho potatoes
1 medium onion, sliced
4 slices center cut bacon, chopped
1 cup cream
2 (8 ounce) boxes frozen spinach, thawed and drained
salt and pepper
extra virgin olive oil
1/4 teaspoon nutmeg (optional)

Steps:

  • Dice potatoes, place in pot and cover with water.
  • Bring to a boil, add salt to water.
  • Cook until tender (10-15 min.).
  • In a small skillet over medium heat, add bacon and brown (7-8 minutes).
  • Add onions, cook until soft (5 more minutes).
  • Drain potatoes and return to pot.
  • Add bacon and onions, and defrosted/drained spinach; mash to combine.
  • Add cream and EVOO; mash until smooth.
  • Add salt, pepper, and nutmeg.
  • Enjoy.

6 slices thick-sliced bacon, diced
2 lbs russet potatoes, peeled, cut into 1 1/2-inch chunks
2 garlic cloves, peeled and smashed (tasted great) or 2 garlic cloves, roasted (tasted stupendous)
9 ounces fresh spinach
3 tablespoons of onion cream cheese with chives (low cal room temperature)
1/2 cup heavy cream
2 tablespoons unsalted butter (room temperature)
kosher salt
2 pinches crushed red pepper flakes

Steps:

  • Sauté bacon in a skillet over medium-high heat until crisp; drain bacon on a paper-towel-lined plate.
  • Boil potatoes and garlic(if not already roasted) in a large pot of salted water until potatoes are tender when pierced, about 15 minutes.
  • Just before draining, stir in spinach to wilt.
  • Drain potatoes, garlic(if you use the roasted - add it now), and spinach; return to pot and cook, stirring constantly, 1 to 2 minutes to evaporate excess moisture.
  • Add cream cheese, cream, butter, and bacon.
  • Coarsely crush potatoes with a masher; season with salt and crushed red pepper flakes.

1 sheet pastry dough for 9-inch tart
5 ounces frozen chopped spinach, thawed and drained
2 cups frozen hash brown potatoes, thawed
1 ½ cups shredded Gruyere cheese, divided
7 large eggs, beaten
½ cup heavy cream
2 teaspoons everything bagel seasoning
3 dashes hot pepper sauce (such as Tabasco®), or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cut a 9-inch circle of parchment paper.
  • Place pastry crust in a 9-inch quiche or pie pan, gently shaping and stretching to fit. Prick crust with a fork several times and place parchment circle over top. Add pie weights or dried beans on top of parchment paper.
  • Set the pan on a baking sheet and place in the center of the preheated oven. Reduce heat to 375 degrees F (190 degrees C) and bake about 10 minutes. Remove to a wire rack and cool for about 5 minutes. Carefully remove pie weights or beans and parchment paper. Leave oven on.
  • While the crust is cooling, squeeze thawed spinach between several layers of paper towels, to remove most of the moisture. Set aside.
  • Add thawed potatoes to the cooled crust. Sprinkle 1 cup shredded Gruyere cheese on top.
  • Stir beaten eggs, cream, bagel seasoning, and hot pepper sauce in a large bowl until ingredients are fully incorporated. Stir in spinach, breaking up any clumps. Pour mixture over the cheese and potatoes. Sprinkle the remaining 1/2 cup Gruyere on top.
  • Place in the center of the oven and bake until eggs are set and a knife inserted into the middle comes out clean, 40 to 45 minutes. Remove from the oven and cool on a rack for 10 minutes. Serve warm.

2 medium leeks (white portion only), chopped
2 tablespoons canola oil

1 package (9 ounces) fresh spinach, chopped
