Slow-Roasted Salmon With Cabbage, Bacon & Dill image

What could be more Irish than salmon and cabbage and bacon. Recipe from Michael Shlow. Add diced potatoes to the cabbage and you have a complete Irish meal that's a far cry from corned beef and cabbage.

1 head savoy cabbage (3/4 head regular green cabbage can be substituted)
6 slices bacon, cut into 6 to 8 pieces each
1 onion, cut into small dice
1 cup water (plus additional if needed)
24 ounces salmon fillets, skin removed
1 teaspoon chopped fresh dill (plus additional for garnish)
4 tablespoons extra virgin olive oil (plus additional for drizzling over finished dish)
4 teaspoons butter
1 lemon, juice of
salt and pepper

Steps:

  • Halve the cabbage lengthwise, cut out the core, then remove the leaves and slice them into 2-1/2-inch squares.
  • Preheat the oven to 250°F.
  • Place the bacon in a medium sauce pot over medium heat. Render the bacon until cooked but not crispy.
  • You should have approximately 2 ounces (4 tablespoons) fat; if you have more, discard the excess.
  • Add the onion and sauté for 1 minute.
  • Add the cabbage and water and let simmer uncovered until the cabbage is tender, about 15 minutes.
  • If all the water evaporates during cooking, add more as needed until the cabbage is very tender.
  • Meanwhile, place the salmon fillets on a nonstick sheet pan.
  • Drizzle 1 tablespoon of the olive oil over each fillet.
  • Season with salt, pepper, and half the dill. Top each fillet with a teaspoon of butter and place in the oven.
  • Cook 15 to 18 minutes for medium rare, 21 to 24 minutes for medium (depending on the thickness of the fish), and if you cook it any longer than that, I can't be held responsible.
  • When the cabbage is meltingly soft and tender, season with salt, pepper, and the rest of the dill.
  • Keep warm while the salmon finishes cooking.
  • Remove the salmon from the oven and drizzle with the lemon juice.
  • To serve:.
  • Divide the cabbage between four dinner plates, top with the salmon fillets, and drizzle a little more olive oil over the fish.
  • Season with freshly ground pepper, sprinkled on and around the fish.
  • Garnish with additional fresh dill, if desired, and serve.

2 tablespoons finely chopped cooked bacon
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper, or to taste
1 medium head cabbage, cored and quartered

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Mix bacon, lemon juice, Worcestershire sauce, olive oil, salt, and pepper together in a bowl. Set aside.
  • Lay each cabbage quarter on a sheet of aluminum foil that is large enough to wrap it up. Pour bacon sauce evenly over each quarter to cover; wrap in foil until completely sealed.
  • Roast in the preheated oven until tender and heated through, 20 to 30 minutes.

2 pounds green cabbage, cored and sliced 1/2-inch thick
Fine sea salt
12 small new potatoes (about 1 1/2 inches in diameter)
2 tablespoons extra-virgin olive oil
1 1/3 to 1 1/2 pounds solid piece boneless pork shoulder (Boston butt)
1 pound slab bacon in 1 whole piece, cut crosswise into 2 pieces
10 bay leaves
1 tablespoon whole black peppercorns
2 cups dry white wine
3 sweet Italian sausages (about 1 pound)

Steps:

  • Heat oven to 350º with rack in middle. Combine cabbage, 1/2 cup water and generous pinch salt in a large Dutch oven or heavy pot with lid. Heat over medium heat until water simmers; reduce heat to medium-low and cook, covered, stirring occasionally, until cabbage is wilted, about 20 minutes. Meanwhile, put potatoes in a pot and cover with water by 2 inches. Bring to a boil and cook until potatoes are tender, about 12 minutes. Drain potatoes; put in a bowl and toss with oil and generous pinch salt. Drain cabbage. In the bottom of a large roasting pan, layer cabbage to make a bed for meats. Put pork shoulder and slab bacon on top of cabbage; scatter with bay leaves and peppercorns. Add ½ cup water. Roast for 30 minutes, then add wine. Roast for 1 hour more. Add potatoes, sausages and 1 cup water to roasting pan; continue roasting until meats are tender and sausages cooked through, about 45 minutes more. Remove pan from oven. Remove and discard bay leaves. Slice meats and serve with cabbage, potatoes and pan juices.

1 large head green cabbage, outer leaves removed
Olive oil
Kosher salt and freshly ground black pepper
4 slices thick bacon

Steps:

  • Heat the oven to 450°F. Cut the cabbage into quarters and slice the bottom of each quarter at an angle to remove the stem core. Cut each quarter in half again so you have eight wedges. Lay these down on a large roasting pan or baking sheet and drizzle lightly with olive oil. Sprinkle generously with salt and pepper. Cut each slice of bacon into small strips and lay on top of the cabbage. Roast for 30 minutes, flipping the cabbage wedges once halfway through. If the edges aren't browned enough for your taste after 30 minutes, put them back in for five-minute increments until they are. Serve immediately; the wedges cool down fast.
