2 pounds red potatoes, cut into bite-size pieces
1 (16 ounce) container sour cream
1 (1 ounce) package ranch dressing mix
1 ¼ cups cooked bacon, crumbled
1 ½ cups shredded Cheddar cheese
2 bunches green onions, thinly sliced

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain, then run under cold water until cool.
  • Combine the sour cream and ranch dressing mix in a small bowl until well-blended. Transfer the potatoes, bacon, Cheddar cheese, and green onions to a large bowl. Stir in the sour cream mixture until well-coated. Cover and refrigerate for about 2 hours before serving.

2 pounds whole fingerling potatoes
Kosher salt
1/2 cup mayonnaise
3 tablespoons buttermilk
1 tablespoon grated Parmesan
1 tablespoon minced fresh chives
1 tablespoon minced fresh flat-leaf parsley
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
6 strips cooked bacon, crumbled
3 scallions, white and light green parts, sliced

Steps:

  • Put the potatoes in a large pot and cover with salted water. Bring to a boil, reduce the heat to a simmer, cover and cook until fork-tender, 15 to 20 minutes. Drain and let cool completely. Slice the potatoes into bite-size pieces.
  • In a large bowl, combine the mayonnaise, buttermilk, Parmesan, chives, parsley, garlic powder, onion powder and pepper and mix until well blended. Taste and season with salt if needed.
  • Add the potatoes to the bowl along with most of the bacon and scallions (reserve some of the bacon and scallions for a garnish) and gently mix. Transfer to a serving bowl or cover with plastic and refrigerate until ready to serve. Garnish with the reserved bacon and scallions before serving.

1 clove garlic, minced
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons dry Ranch dressing mix

Steps:

  • Place the potatoes and garlic in a pot of cold water. Bring to a boil over medium-high heat. Boil for 10 to 15 minutes or until the potatoes are just done (test them by piercing a chunk with a bamboo skewer). Drain the potatoes, rinse with cold water to cool, and drain again. Refrigerate the potatoes until completely chilled. Combine the sour cream, mayonnaise and Ranch mix. Toss the chilled potatoes with 2 tablespoons of sour cream mixture at a time, until potatoes are just coated. Fold in the chives and bacon, then season with salt & pepper to taste. Chill until ready to serve, adding additional dressing to taste as needed just before serving.

6 russet potatoes, peeled and cubed
4 eggs
4 slices bacon, cooked and crumbled
¼ cup finely chopped dill pickles
¼ cup chopped green onion
¼ cup finely shredded Cheddar cheese
2 tablespoons chopped fresh parsley
salt and ground black pepper to taste
⅓ cup fat-free ranch dressing
2 tablespoons light mayonnaise
1 tablespoon prepared mustard

1 cup Hellmann's mayonnaise
1 cup sour cream

1 (2 1/4 ounce) can sliced black olives (optional)

6 medium red potatoes
lemon pepper
garlic salt
onion powder
6 slice bacon
3 whole green onions, diced
1 c ranch dressing
1 Tbsp dijon mustard
1 tsp salt
1/8 tsp pepper

Steps:

  • 1. Cut potatoes into cubes and place in microwaveable dish. Season with lemon pepper, garlic salt, and onion powder. Add 1 tablespoon vegetable oil. Cover and mircowave on high for 10 minutes.
  • 2. While potatoes are cooking, use kitchen shears to dice bacon into small pieces; place in a small skillet. Cook bacon until brown and crispy. Remove bacon and let drain on paper towel lined plate.
  • 3. Stir potatoes, cover and microwave for another 5 minutes on high, or until potatoes are tender.
  • 4. Remove potatoes from microwave; stir in bacon and the remaining ingredients. Cover and let chill.

1 1/2 cups mayonnaise

1/4 teaspoon cracked pepper (a few turns of a pepper grinder is good)

8 large potatoes; peeled, cubed, and boiled
2 stalks celery; diced
1/2 cup onion
12 pre cooked slices of bacon; crumbled
3 hard boiled eggs; peeled, diced
1 cup mayo
1 tbsp dijon mustard
1/4 cup ranch dressing
salt and pepper to taste

Steps:

  • 1. When potatoes are finished boiling, drain and let cool. Then begin adding the rest of the ingredients saving the bacon for last. I do this to keep the bacon crisp. Another tip I would give is using pre cooked bacon from the grocery store. 30 seconds in the microwave and you have a nice crisp bacon.
