8 cups thinly sliced peeled red potatoes
2 tablespoons all-purpose flour
2 large eggs, lightly beaten
1 cup sour cream
2 tablespoons butter, melted, divided
1-1/2 teaspoons salt
1-1/2 cups shredded Monterey Jack cheese
1/4 cup dry bread crumbs
8 bacon strips, cooked and crumbled

Steps:

  • Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Drain; cool for 10 minutes., In a small bowl, combine the flour, eggs, sour cream, 1 tablespoon butter and salt. Spoon over potatoes and toss to coat. Place half of the potato mixture in a greased 13x9-in. baking dish; top with half of the cheese. Repeat layers., Toss bread crumbs with remaining butter; sprinkle over the top. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 160° and potatoes are tender. Sprinkle with bacon.

6 -8 slices uncooked bacon, more if desired
4 medium potatoes, peeled and diced into 1/2 inch pieces
1 small onions or 4 -5 green onions, chopped
1/3 cup green bell peppers (or a mixture) or 1/3 cup red bell pepper, chopped (or a mixture)
1 teaspoon salt or 1 teaspoon seasoning salt
black pepper
2 -3 tablespoons grated parmesan cheese
6 -7 large eggs, lightly beaten
1 1/2 cups shredded swiss cheese or 1 1/2 cups cheddar cheese
1 cup whole milk or 1 cup half-and-half cream
1/3 cup Bisquick baking mix
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • In a extra-large OVEN-PROOF saute pan or frypan, cook bacon until crisp, do not drain (leave the bacon in the frypan).
  • Add in the diced potatoes, chopped onion, green pepper, salt and pepper; saute until the potatoes are fork-tender (this should take 20 minutes to half an hour).
  • Turn off the heat, and mix in the grated Parmesan cheese, mix to combine.
  • Set the oven to 350 degrees.
  • In a large bowl, combine the lightly beaten eggs, whole milk, Bisquick baking mix, grated cheese and the melted butter; mix well.
  • Pour over the bacon/potato mixture in the frypan, sprinkle with extra Parmesan cheese if desired; mix gently.
  • Bake, uncovered for 20-25 minutes, or until a knife inserted in the middle comes out clean (don't overbake).

I bought 2 jars of white cheese sauce to make lasagne with the other day and had enough left over to try something without wasting the rest of the sauce. I made this and it worked. It's super easy and ready in 45 mins. You can add other ingredients such as onion, leek and herbs if you wish but I just used bacon this time.

3/4 jar of white cheese sauce
Upto 4 potatoes sliced thinly
4 unsmoked bacon rashers
Grated Cheddar cheese
Grated parmesan

Steps:

  • Preheat oven to 180 degrees (fan)
  • Peel your potatoes and slice thinly (about 1/2 cm thick)
  • Cook your bacon in a frying pan to your preference.
  • Layer your potatoes in a oven proof dish and cover with half of the cheese sauce, if you think there isn't enough to cover you can add a little whole milk and stir to thin it out.
  • Cut up 2 bacon rashers onto your first layer randomly placing on top of the potatoes. Repeat steps 4 and 5 once more.
  • Place in the oven for 20 minutes
  • Remove from oven and sprinkle on the cheddar cheese and parmesan. Place back into the oven for a further 20 minutes.
  • Remove from oven and serve.

BETTY'S CREAMY CHICKEN, BACON AND POTATO BAKE

Creamy comfort food made into a complete meal - delicious! I like chicken thighs as they remain moist during oven baking. This reheats beautifully and can be made ahead. Note - you can add mushrooms when you are frying the bacon if you are a fan of them.

2 pounds or 1 kilo of potoates
6 - 8 bacon rashers
2 pounds or 1 kilo of chicken thighs, cut into thirds
1 tin cream of chicken soup
1 teaspoon minced garlic
1 cup milk or evaporated milk (if you want it extra creamy)
1 heaped teaspoon onion flakes
2 cups grated cheese

Steps:

  • 1. Dice and fry the bacon to your liking in a frying pan. While that is happening peel and slice the potatoes into thin slices and place in the base of greased lasagna style dish. Scatter the bacon over the top in an even fashion. Pre-heat oven to 375oF/180oC
  • 2. Cook the chopped chicken until it is just seared and scatter over the bacon.
  • 3. Place the soup, garlic, onion flakes and milk in a bowl and whisk to combine. Pour evenly over and top with cheese.
  • 4. Bake in the prepared oven for 1 hour. Cool for 10 - 15 minutes before serving. This is great on it's own or with a tossed salad or steamed vegetables.

1/2 tablespoon olive oil
1/2 onion, diced
1 garlic clove, minced
1/2 yellow bell pepper, diced
1/2 red bell pepper, diced

1/2 teaspoon fresh ground black pepper
1 cup shredded cheddar cheese or 1 cup monterey jack cheese
4 slices bacon, cooked and crumbled

Steps:

  • Preheat oven to 350°F Grease an 8x8 baking dish with non-stick spray an set aside.
  • Microwave peeled potato on high until barely tender, 3-4 minutes. Allow to cool slightly, then cut into 1/4" dice.
  • In a medium skillet over medium heat, heat oil until shimmering. Add the onion and a pinch of salt. Saute until onions are soft and translucent, about 5 minute Add garlic, bell peppers and half the salt, Saute until the peppers are fragrant and soft, about 5 minutes more. Remove from heat and set aside.
  • Whisk together eggs and milk with remaining salt and pepper. Add 3/4 c cheese, potatoes, crumbled bacon and sauteed vegetables. Stir well and spread into baking dish.
  • Bake in preheated oven for 30 minutes. Spread remaining cheese on top and return to oven until cheese is melted and top is puffy, about 15 minutes more. Serve at once.

EASY BACON PASTA BAKE (USING POTATO BAKE SAUCE)

I rarely have leftover pasta to make pasta bakes, so this recipe is an easy way to make an easy-to-prep meal using store bought potato scallop sauce and uncooked pasta. You can adjust the amount of bacon you use, I just find it an easy flavouring to throw into the dish. This pasta bake can be very rich and although I serve it as a main in my household (its a bacony treat for us) so serve with lots of fresh tomato or as a side to barbecued meats.

500 gram(s) uncooked pasta
2 can(s) potato bake sauce (store bought, use any kind of pasta/potato bake sauce))
1 cup(s) milk
1 cup(s) water (add in small amounts at a time if necessary)
250-400 gram(s) bacon (cooked not too crisp, chopped)
1/2 cup(s) grated cheese (reserve half for topping)

Steps:

  • Preheat oven to 180C. In a large baking dish pour in 2 cans of potato bake sauce. Add the milk and a quarter of the water. Stir well.
  • Mix in the pasta, bacon and half the grated cheese.
  • Place a sheet of tinfoil over the top of the mixture and press the sides down until covered and foil is kept in place.
  • Bake in oven for 30 minutes then stir mixture from bottom to top. You can add more water at this point but add in small amounts until you're satisfied there is enough liquid for pasta to soak up. Return to oven and continue baking for another 15 minutes until last step.
  • For the last 15 minutes add grated cheese to top and bake uncovered until topping is golden and crisp. Serve with fresh tomatoes and salad.

1lb cooked potatoes, sliced
2 hard boiled eggs, sliced
1 small onion, sliced and lightly fried
6 rashers bacon, chopped and fried
1oz butter
1oz plain flour
1 beef stock cube dissolved in half a pint of boiling water
Qtr pint of milk
5oz grated cheese
1 - 2 oz breadcrumbs

Steps:

  • Arrange the potatoes, eggs, onion and bacon in layers in an ovenproof dish.
  • Melt the butter, add the flour and cook for 1 minute. Remove from the heat, gradually stir in the stock and the milk. Return to the boil, stirring, and cook for 1 minute. Remove from the heat, season as required and add 4oz of the cheese, stirring to mix.
  • Pour the sauce over the ingredients in the ovenproof dish. Mix the remaining cheese and breadcrumbs, and sprinkle over the top.
  • Bake at Gas Mk 6 (200 C) for about 25 minutes, or the top is until golden brown.

1/4 c milk
1/2 c butter, softened
2 eggs
1 tsp seasoned salt
1/2 tsp pepper

  • Preheat oven to 200. Cook pasta in boiling water. Meanwhile, chop potato, leek, onion, garlic
  • While the pasta is boiling, add potato. Chop bacon into small pieces; chop/crumble the 2 kind of cheese.
  • After the pan come back to a boil for a little while. Drain. (Make sure the pasta and potato is not boiling for longer than 7 minutes and the pasta should still be undercooked.)

This bake is a cross between two classics - creamy dauphinoise and pommes boulangère (potatoes cooked in stock), the perfect side dish

600ml chicken or vegetable stock
1kg potato, thinly sliced
6 leeks, thinly sliced into rounds
25g butter
3-4 rashers streaky bacon, snipped
3 tbsp double cream (optional)

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the stock in a large pan, bring to the boil, then add the potatoes and the leeks. Bring back to the boil for 5 mins, then drain well, reserving the stock in a jug.
  • Meanwhile, butter a large baking dish. Layer up the potatoes and leeks higgledypiggledy, seasoning as you go, then scatter the bacon over the top. Season well, pour over 200ml of the reserved stock, then spoon over the cream (if using) and cover with foil. Can be made up to 1 day ahead and chilled. Bake for 40 mins, uncovering halfway through so that the bacon crisps.

5 large potatoes, thinly sliced
160 g chicken noodle soup mix
1 garlic clove, minced
1 red onion, finely diced
500 ml light cream, Thickened
250 g bacon, finely diced

Steps:

  • Peel and slice potatoes.
  • Layer into a baking dish.
  • Mix soup mix, onion, bacon, crushed garlic and cream over low heat for 5 minutes.
  • Pour heated cream mix over potatoes.
  • Bake in a moderate oven for 1 - 1.5 hours or until potatoes are soft.
  • Garnish with Grated Cheese (Parmesan is nice) and Chives if Desired.

2-1/2 lb. baking potato es (about 7)
1/4 cup butter
1 small onion, chopped
1/4 cup flour
2-1/2 cups milk
1-3/4 cups KRAFT Shredded Colby & Monterey Jack Cheeses, divided
2 Tbsp. GREY POUPON Dijon Mustard
1/4 cup KRAFT Grated Parmesan Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
  • Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups shredded cheese; cook and stir 1 min. or until melted. Stir in mustard.
  • Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
  • Bake 25 to 30 min. or until heated through. Top with remaining cheeses and bacon; bake 5 min. or until shredded cheese is melted.
