BACON TOMATO PIE

Number Of Ingredients 9

1 pie crust shell
3 medium tomatoes, peeled, sliced thick
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil, dried
1/4 c onion, chopped
4 slice bacon, cut up, cooked
1/2 c mayonnaise
2 c cheddar cheese, shredded

Steps:

  • 1. Bake pie shell for 5 minutes at 425 degrees. "Fork" crust to keep it from rising up. Reduce heat to 400 degrees.
  • 2. Fry bacon and add onion. Cook till tender. Drain, set aside.
  • 3. Place tomatoes in browned pie shell. Combine salt, pepper and basil flakes. Sprinkle over tomatoes. Place bacon and onions over tomatoes.
  • 4. Mix mayonnaise and cheddar cheese. Spread and seal over pie. Bake for 35 minutes until cheese melts and is golden brown. Cool before cutting.

This reminded us of a BLT. It does sound strange, but we loved the way all the textures and flavors were perfect together. It's sweet, smoky, and savory. This is a great way to use up the abundance of tomatoes this time of year.

1 9 inch pie shell
5 large tomatoes, peeled and sliced
4 slice bacon, cooked and chopped
1 sweet onion, sliced or chopped
1 tsp salt
1/2 tsp pepper
2 Tbsp milk
1/2 c mayonnaise
1 1/2 c sharp cheddar cheese, shredded
1/4 c Ritz crackers, crushed
2 tsp butter, melted
2 green onions (scallions), sliced

Steps:

  • 1. Prick pie shell with fork and bake at 350 degrees for about 10 minutes.
  • 2. Fry bacon. Cook till tender. Drain, set aside.
  • 3. Peel and slice tomatoes to fill bottom of pie shell.
  • 4. Sprinkle with chopped onion and salt and pepper.
  • 5. Layer more tomatoes, salt and pepper (again).
  • 6. Mix mayo, bacon and cheese and milk.
  • 7. Spoon on top and pat down to cover tomatoes.
  • 8. Sprinkle with Ritz crackers mixed with melted butter
  • 9. Sprinkle Scallions on top.
  • 10. Bake 350 degrees for 30 minutes.

1 unbaked deep-dish pastry shell (9 inches)
3 medium tomatoes, cut into 1/4-inch slices
10 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
1 cup mayonnaise

Steps:

  • Bake pastry shell according to package directions; cool. Place tomatoes in the crust; sprinkle with bacon. In a small bowl, combine the cheese and mayonnaise. Spoon over bacon in the center of pie, leaving 1 in. around edge. , Bake at 350° for 30-40 minutes or until golden brown (cover edges with foil if necessary to prevent over browning).

2 1/4 lbs potatoes, peeled and cubed
1 tablespoon vegetable oil
9 ounces bacon, cut into strips
2 ounces butter
4 onions, finely sliced
1 pinch sugar
5 ounces cheddar cheese, grated
2 tomatoes, sliced
salt & freshly ground black pepper

Steps:

  • Bring a pan of salted water to the boil and cook the potatoes until soft. Drain and mash.
  • While the potatoes are cooking, heat and cook the bacon in half the butter and the oil in a frying pan until just beginning to brown and crisp. Remove from the pan with a slotted spoon.
  • Add the onions to the pan. Add seasoning and the sugar. Fry gently until the onions are soft and caramelized. Take care not to allow them to burn.
  • Return the bacon to the pan and stir evenly through the onions. Add a little broth or water to de-glaze the pan and then tip the mixture into a heatproof dish.
  • Add the remaining butter and 4oz of the cheese to the potato. Season and mix well. Preheat the broiler to high.
  • Spoon the mixture over the onions and bacon, scatter with the remaining cheese and top with the slices of tomato.
  • Place under a hot grill until the cheese is melted and brown. Serve.

8 cups thinly sliced sweet onions
2 tablespoons butter
12 bacon strips, cooked and drained
2 cups soft bread crumbs
3 to 4 medium tomatoes, thinly sliced
2 cups shredded cheddar cheese
3 large eggs
1/4 teaspoon salt
1/8 teaspoon pepper
Additional tomato slices, optional

Steps:

  • In a large skillet, saute onions in butter until tender. Crumble nine bacon strips; set remaining strips aside. Place the bread crumbs in a greased 9-in. deep-dish pie plate. Layer with half of the tomatoes, onions, crumbled bacon and cheese. Top with the remaining tomatoes, onions and crumbled bacon., In a bowl, beat the eggs, salt and pepper; pour over the top. 1 refrigerated 9 inch pie shell
2 medium ripe tomatoes, sliced thinly
5 slices turkey bacon, chopped
1 medium red onion, sliced thin
3 eggs
1/2 cup milk
1 1/2 cups shredded parmesan cheese
1 pinch basil
1 pinch thyme
1/8 teaspoon mustard powder
salt and pepper

Steps:

  • Place pie crust in pie pan, and prebake it for 10 minutes at 375 degrees.
  • Cook chopped turkey bacon and red onion until carmelized in frying pan, and place in separate dish.
  • Mix eggs, milk, cheese, and seasonings in mixing bowl. Add the onions and bacon, and pour into prebaked pie crust. (Note: pie crust does not have to be browned,only a little hardened.).
