BACON LOLLIPOPS

Steps:
- Soak about 28 bamboo skewers in cold water for 20 minutes.
- Preheat the oven to 350 degrees F. Coat a baking sheet with nonstick cooking spray and line it with parchment paper.
- Combine the sugar, maple syrup and cayenne in a medium bowl; stir in the water.
- Cut the bacon strips across in half. One at a time, dunk the pieces of bacon in the sugar mixture, wipe off the excess with your fingers, and place the pieces flat on the baking sheet. When the bacon has formed one layer on the pan, thread a skewer through each slice, keeping the slices flat and leaving some of the skewer sticking out at the bottom as a handle.
- Top the skewered bacon with a second piece of parchment paper and place an empty baking sheet on top. This keeps the bacon weighted down so it stays nice and flat. (The sheet pan goes directly over the parchment-topped bacon.) Bake until the bacon is cooked through and dark brown around the edges, about 35 minutes. Transfer to a wire rack set over a baking pan to cool.
- Once cooled, you can store the bacon lollipops for 1 to 2 days in the refrigerator; place them flat on a baking sheet lined with parchment paper and wrap tightly in plastic wrap.
LAMB LOLLIPOPS

- Toast the coriander seed and mustard seed in a small, dry saute pan over low heat until fragrant. Place the toasted seeds in a spice grinder and grind to a powder. Place lamb, pork, and bacon in a large bowl. Add all herbs and seasonings and toss to combine well.
- Grind the meat in a meat grinder with a medium die and then chill overnight.
- Wrap 1 tablespoon of ground meat around the end of an ice pop stick. Repeat until all meat is used. Refrigerate for 2 hours.
- Heat olive oil in a large saute pan over medium heat. Saute lollipops, in batches, until meat is cooked through, about 2 minutes on the first side and 1 minute on the other side. Serve hot.

- Mix all dry ingredients. Mix well.
- Preheat oven to 350. Cut bacon strips into 2 1/2 inch pieces
- Weave bacon pieces onto a bamboo skewer. Arrange skewers on metal rack on top of a sheet pan
- Evenly dust 5 Tbsp. cinnamon sugar over top of bacon and let rest for 10 to 15 minutes.
- Bake at 350 for 10 to 12 minutes or til bacon fat is rendered at least 50 percent. Remove from oven
- Flip skewers and dust with 5 Tbsp. of cinnamon sugar. Put back in oven and continue baking, checking frequently, til bacon is crispy. Remove from oven and serve warm.
CANDIED BACON BITES

- Put the bacon in a container so it lays flat. Pour over the cola to cover. Refrigerate and let soak 2 to 3 hours.
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil, place a cooling rack over top and spray with cooking spray.
- Drain the bacon from the cola, place on the cooling rack and pat dry. Combine the brown sugar, paprika and black pepper in a bowl and toss to combine and loosen up the brown sugar. Sprinkle the brown sugar mixture on both sides of the bacon, pressing and patting so it adheres. Place the slices on the cooling rack; they can be close to one another but shouldn't touch.
- Bake until the bacon is deeply caramelized but still pliable (it will crisp as it cools), about 20 minutes. Flip the bacon occasionally as it cools to crisp on both sides. Let cool completely.

- Cut each bacon strip in half widthwise. Wrap one piece of bacon around each sausage. , Place in a foil-lined 15x10x1-in. baking pan. Sprinkle with brown sugar. Bake, uncovered, at 400° until bacon is crisp and sausage is heated through, 30-40 minutes.
