12 eggs
½ cup mayonnaise
4 slices bacon
2 tablespoons finely shredded Cheddar cheese
1 tablespoon mustard

Steps:

  • Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
  • Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

12 large eggs
6 tablespoons sour cream
2 tablespoons mayonnaise
6 strips bacon, cooked and crumbled
4 tablespoons chopped chives
Kosher salt and freshly ground black pepper

Steps:

  • Place the eggs in a medium saucepan with enough water to cover and bring to a boil. Remove from the heat, cover and let the eggs stand in the water for 20 minutes. Pour off the hot water and fill the saucepan with cold water. Let the eggs sit in the cold water for 5 minutes. Then crack the eggshells and peel. Cover and chill for at least 1 hour.
  • Halve the eggs lengthwise. Carefully remove the yolks and transfer them to a small bowl. Mash the yolks with a fork, stirring in the sour cream and mayonnaise. Reserve 1 tablespoon of the bacon and chives for garnish and add the remaining bacon and chives to the yolk mixture, stirring well. Season with salt and pepper to taste.
  • Scoop a spoonful of the yolk mixture into each egg white half. Sprinkle the tops with the reserved bacon and chives.

1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon hot sauce, such as Tabasco
1/2 teaspoon paprika, plus additional for dusting
Juice from 1/2 large lemon
Kosher salt and freshly ground black pepper
1/3 cup heavy cream
3 scallions, thinly sliced, green and white parts separated
Coarse sea salt, for garnish
8 strips bacon, cut into thin strips and cooked crispy, warm

Steps:

  • Gently place the eggs in a medium pot of boiling water. Reduce the heat, cover and cook for 11 minutes. Gently pour off the hot water and run cool water over the eggs until they feel cool to the touch.
  • Gently crack the egg around the shell and peel the eggs. If necessary, rinse quickly under cool water to remove any small shell bits; dry them off thoroughly. Using a sharp knife, cut the eggs in half lengthwise, wiping the blade between each egg. Remove the yolks from the centers. Push the yolks through a strainer into a medium bowl. Arrange the egg white halves on a platter.
  • Use a whisk to blend the egg yolks with the mayonnaise, mustard, Worcestershire, vinegar, hot sauce, paprika and lemon juice. Season with salt.
  • Whip the cream in a separate bowl until it holds medium (but still fairly soft) peaks. Using a rubber spatula, gently fold the whipped cream into the yolk mixture. Taste for seasoning. Spoon the egg yolk mixture into a pastry bag fitted with a fluted tip or a resealable plastic bag with one of the bottom corners cut off.
  • Sprinkle the egg whites with the scallion whites, coarse sea salt and pepper. Fill a tea strainer with some extra paprika and lightly dust the whites with an even layer. Fill the hollows in the egg whites with the yolk mixture. Top with the scallion greens. Refrigerate until ready to serve. Just before serving, top with the bacon.

4 slice bacon, cooked & crumbled
4 oz cream cheese, softened
1/4 c mayonnaise
2 Tbsp yellow prepared mustard or 2 tsp of dry mustard, your preference
1/2 Tbsp Worcestershire sauce
cayenne pepper, to taste
salt and pepper, to taste
paprika, your choice

Steps:

  • 1. Prepare eggs. Slice hard boiled eggs lengthwise with a knife.
  • 2. Gently remove yolks and place in a mixing bowl (or food processor which makes it very creamy).
  • 3. To the yolks, add cream cheese, mayo, mustard, Worcestershire sauce, cayenne pepper, salt, and pepper.
  • 4. Mash or mix until smooth.

I had an epiphany today and came up with these. Make them when you have leftover bacon (if there is such a thing). I had to make bacon, but it was worth it! Note: When I buy pickled jalapeno slices, I mince the entire jar in a 'Bullet' food processor (with the brine) because it's so much easier to evenly distribute on nachos and to use in recipes too.

8 eggs, hard boiled and peeled
1/2 teaspoon mustard powder
1/4 teaspoon sugar
1/2 tablespoon white vinegar
1 dash garlic powder
1/3 cup mayonnaise (not Miracle Whip, it has sugar)
salt or celery salt
3 -4 tablespoons minced onions
2 -5 tablespoons minced pickled jalapeno peppers
4 slices crispy bacon, chopped fine
1 quart ziploc bag (for piping the yolk mixture into the egg)
paprika (to garnish, chives or cilantro leaves would be good, too)

Steps:

  • Cook your eggs and bacon at the same time if you don't have leftovers.
  • Slice the eggs lengthwise in half and pop the yolks into a small mixing bowl.
  • Mash the yolks thoroughly with the next four ingredients.
  • Add the mayo in 3rds till it's the consistency you like, mashing any lumps of yolk. I use all the mayo but some people don't want to consume that much. More mayo makes a lighter filling.
  • Salt to taste, then add the onion, jalapeno and bacon and mix well.
  • Place in the quart ziploc bag (fold the top edge well down so you don't get yolk all over it and spoon the mixture into one of the corners. Unfold the bag top, smooth out any air, twirl the bag to seal the egg into it and clip the corner off the bag.
  • Pipe the yolk into the egg halves. It makes quite a bit so you can mound the yolk over on the solid white part of the egg, as you fill it.
  • Garnish.

DEVILED BACON AND EGGS

6 slices peppered bacon
1 dozen eggs
1/4 cup mayonnaise
1/4 cup heavy cream
1 teaspoon yellow mustard
1 teaspoon sugar
1 teaspoon white vinegar
Hot sauce, such as Tabasco, as needed
Kosher salt and freshly ground black pepper
Paprika, for sprinkling

Steps:

  • Fry the peppered bacon in a pan over medium heat until crisp, 12 to 15 minutes. Remove to a paper-lined plate.
  • Fill a large pot with enough water to cover the eggs, then bring to a boil (without the eggs). Using a slotted spoon, gently lower the eggs into the boiling water. Cover and simmer for 10 minutes. Run the eggs under cold water until completely cooled.
  • Peel the eggs, cut in half and scoop out the yolks into the bowl of a stand mixer fitted with the whisk attachment. Add the mayo, cream, mustard, sugar and vinegar. Add hot sauce if using and salt and pepper to taste. Whip until smooth.
  • Using a small spoon, fill each egg white half with a generous teaspoon of the filling. Lightly sprinkle with paprika. Cut the bacon into chunks and decorate the tops of the egg halves with a shard of bacon.

1 1/2 tablespoons light brown sugar
cayenne pepper
1 pinch ground cinnamon
1/8 lb thick-cut bacon (about 3 strips)
8 large eggs, straight from the refrigerator
1/4-1/2 cup mayonnaise (or as much as desired)
2 teaspoons whole grain mustard
1 tablespoon finely chopped fresh dill, plus more for garnish
1 tablespoon cider vinegar
1 teaspoon Worcestershire sauce
2 scallions, minced
1/2 teaspoon kosher salt
paprika, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, mix together the brown sugar, a pinch of cayenne and the cinnamon. Place the bacon on a wire rack set over a rimmed baking sheet. Sprinkle each slice of bacon with some of the spiced sugar and bake, about 10 minutes. Flip the bacon, sprinkle with the remaining spiced sugar and continue to cook until crispy, about 10 more minutes. Remove the bacon from the oven and allow to cool. When the bacon is cool, mince it and set aside, reserving a quarter of it for garnishing the eggs.
  • Put the cold eggs in the bottom of a medium saucepan and cover with cold water. Bring water to a boil and remove the pan from the heat. Cover the pan with a lid and let stand for 12 minutes. Drain the eggs and rinse with cold water. Let the eggs cool a bit and then peel when they are still warm (eggs are much easier to peel when they are warm). After they are peeled, you can then store them, covered, in the fridge.
  • Mix together the mayonnaise, mustard, dill, cider vinegar, Worcestershire sauce, 1/4 teaspoon cayenne, the scallions and the minced bacon in a medium mixing bowl. Season with the salt.
  • Slice the eggs in half lengthwise. Gently remove the yolks by pressing your thumb against the back of the yolk to pop it out of the white. Add the yolks to the bowl with the mayonnaise mixture. Mash together, using a fork, until smooth.
  • Put the filling in a re-sealable bag. Cut one end off and pipe the filling into the egg whites. Sprinkle with the paprika, extra bacon bits and dill before serving.
  • Cook's Notes:.
  • A wire rack is a great way to cook bacon because the air can circulate around the bacon making it crispy and delicious.
  • Plastic bags are a great tool to use in place of a piping bag, easy and disposable.

12 eggs
4 slices bacon
½ cup mayonnaise
2 tablespoons finely shredded Cheddar cheese
1 tablespoon spicy mustard
1 tablespoon wasabi paste

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel. Slice eggs in half lengthwise. Remove yolks to a small bowl and mash; reserve hollow egg whites.
  • Fry bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.
  • Reserve a small amount of bacon and Cheddar cheese in separate bowls; stir remainder into mashed egg yolks with mayonnaise. Stir in mustard and wasabi. Fill egg whites with a heaping spoonful of the yolk mixture. Sprinkle with reserved bacon and Cheddar cheese before serving.

3 cups water
7 dried chipotle chiles, stemmed and seeded
⅓ cup sliced onion
5 tablespoons cider vinegar
¼ cup ketchup
2 garlic cloves, crushed
¼ teaspoon salt
¼ cup heavy whipping cream
12 eggs
4 thick slices maple-cured bacon, cut into 1-inch pieces
½ cup mayonnaise
2 tablespoons shredded Cheddar cheese

Steps:

  • Place water, chiles, onion, vinegar, ketchup, garlic, and salt in a saucepan; bring to a simmer, and cook, stirring occasionally, until reduced and very thick, about 1 hour.
  • Pour chile mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend until smooth. Stir cream into chipotle sauce; refrigerate until ready to use.
  • Place eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Place bacon in a large skillet; cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble half the bacon; reserve remaining bacon for garnish.
  • Cut each egg in half lengthwise; place egg yolks into a bowl. Mash egg yolks with a fork; stir in mayonnaise, crumbled bacon, and Cheddar cheese. Stir 1 tablespoon chipotle sauce into yolk mixture, or more to taste.
  • Place egg whites cut-side up on a serving plate. Spoon yolk mixture into egg white halves. Sprinkle remaining bacon over filling; drizzle with chipotle sauce.
