4 large eggs
2 ounces full-fat cream cheese (divided into ½ inch cubes and chilled well)
2 tablespoons unsalted butter
2 teaspoons fresh chives, finely chopped
Kosher salt and fresh ground pepper to taste

Steps:

  • Gather the ingredients.
  • Crack the eggs into a large bowl and beat vigorously with a wire whisk until foamy.
  • Add the chunks of cream cheese to the beaten eggs.
  • Add the butter to a large nonstick pan and place over medium-high heat. Have a rubber or silicone spatula ready.
  • When the butter just begins to foam, add the egg mixture. If you hear a sizzle when the eggs hit the pan, the pan is too hot; reduce the heat.
  • Wait a few seconds for the egg on the surface of the pan to begin coagulating, then scrape the bottom of the pan with the spatula to lift up the just-cooked egg and allow the raw egg to flow onto the hot surface.
  • When about 1/2 to 3/4 of the egg has coagulated into curds, remove the pan from the heat while continuing to shift the eggs around with the spatula. At this point, pay some attention to the distribution of the cream cheese, spreading it slightly with the spatula.
  • Continue gently shifting the eggs around until the last of the raw egg has almost thickened into a sauce-like texture.
  • Immediately transfer the eggs to plates and top with the chives and salt and pepper to taste.

3-4 slice(s) bacon, crispy cooked and drained on a paper towel (rashers)
4-6 - eggs
2 tablespoon(s) cream or 1/2 and 1/2
- salt and pepper, to taste
1/3 cup(s) dubliner or skellig cheese, grated (or any good quality extra sharp white cheddar)
1 tablespoon(s) fresh chives, chopped
- butter, for frying the eggs

Steps:

  • After the bacon has drained crumble the strips into little pieces.
  • Whisk the eggs together with the crumbled bacon/rashers, cream, salt and pepper, cheese and 1/2 the chives.
  • Heat up a non-stick pan on medium heat. Add the butter and melt.
  • Gently scramble the egg mixture. Plate and garnish with the remaining fresh chives.

I had these a looong time ago at a restaurant in Eugene, Oregon and loved them. The cream cheese makes them rich and delicious. You can easily alter the amounts to suit the number of people you are trying to feed. This recipe quantity made 2 large portions (could have easily been 3 appropriately sized servings).

8 - eggs
4 - slices bacon
1/3 - of a block of 8 oz cream cheese, cubed
1/4 teaspoon(s) ground/rubbed thyme
- salt & pepper to taste
1/8 cup(s) heavy cream, optional

Steps:

  • Dice raw bacon. Place in large skillet over medium heat and brown.
  • Remove bacon from skillet to a paper napkin to drain. Reduce heat to low-medium. Remove all but about 1 Tbsp of the bacon grease.
  • In large bowl, crack eggs. Add heavy cream and combine with whisk.
  • Add eggs to skillet. Season with thyme, salt and pepper. Cook slowly, stirring occasionally. When eggs are about 1/2 cooked, add bacon back into skillet and combine to distribute throughout.
  • When eggs are mostly done, add the cubed cream cheese, tossing to combine just until cream cheese is mostly melted.

  • Heat oven to 400ºF.

1 dozen egg

2 teaspoons mustard powder
1/4 cup ranch dressing
3 slices bacon
salt and pepper

Steps:

  • Hard boil eggs, then place in ice water to cool, at least 10-15 minutes. Peel, cut in half and scrape yolks into a large mixing bowl.
  • Fry bacon up in a pan, until crispy. Drain on paper towels, and crumble once cool enough to handle.
  • Cut cream cheese into bite-size pieces, and add to yolks. Begin to beat with a hand mixer on low. Add mustard powder and then begin to pour ranch into bowl in a thin stream. The desired texture is a thick filling, just wet enough to form a paste and be blended by the hand mixer. 4 eggs
2 tablespoons half-and-half
2 tablespoons butter

Steps:

  • Cook bacon pieces in skillet until crisp.
  • Remove from pan and drain on paper towels.
  • Remove bacon grease from skillet, wash and dry pan and return to heat.
  • Scramble eggs and add half and half and mix well.
  • Add butter to heated pan and add egg mixture.
  • Let the eggs set a bit and then sprinkle bacon over.
  • Stir eggs until soft set or until they are done to your liking.
  • Note: I sometimes also add small diced cubes of cheese when I add the eggs to the pan. Then proceed with recipe.

1 (17.5 ounce) can refrigerated cinnamon roll dough with icing (such as Pillsbury® Grands!®)
1 ¼ cups shredded Cheddar cheese
5 tablespoons cream cheese, softened

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 8 minutes. Drain bacon slices on paper towels.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch pie plate.
  • Melt 1 tablespoon butter in a nonstick skillet over medium-low heat. Pour in eggs; cook, stirring often with a spatula, until soft and fluffy, 3 to 5 minutes. Transfer to a plate to cool. Season with salt and pepper.
