CHEESEBURGER EMPANADAS

These hand-held bites have all of the classic flavors of a cheeseburger, wrapped up in crispy puff pastry and dipped in "special sauce." They're perfect to put out for a sports-loving crowd or at a potluck.

1/2 cup ketchup
1/2 cup mayonnaise
1/2 cup finely chopped dill pickle chips plus 18 whole dill pickle chips
1/4 cup yellow mustard
Kosher salt and freshly ground black pepper
1 tablespoon canola oil
8 ounces ground beef chuck
1/2 small red onion, finely chopped
4 slices American cheese, roughly chopped
1 large egg
One 1.1-pound package frozen puff pastry (2 sheets), thawed
All-purpose flour, for dusting

Steps:

  • Position 2 racks in the middle of the oven and preheat the oven to 425 degrees F. Line 2 large baking sheets with parchment.
  • Stir together the ketchup, mayonnaise, chopped pickles and mustard in a medium bowl. Season with salt and set the sauce aside.
  • Heat the oil in a large skillet over medium-high heat. When it starts to shimmer, add the ground beef, a pinch of salt and a few grinds of pepper. Cook, breaking the meat apart with a wooden spoon or heatproof spatula, until lightly browned in spots and just cooked through, 3 to 4 minutes. Add the onion and cook, stirring constantly, until crisp-tender, about 2 minutes. Use a large slotted spoon to scoop the meat mixture into a medium bowl and stir in 1/3 cup of the sauce. Allow to cool slightly. Fold the American cheese into the cooled mixture.
  • Lightly beat the egg with 1 tablespoon of water in a small bowl for the egg wash and set aside.
  • Unfold 1 puff pastry sheet onto a lightly floured surface. Roll out into a 12-inch square. Cut out 9 rounds with a 4-inch round cookie cutter. Spoon 1 leveled tablespoon of the meat filling just off center on each round. Top the filling with 1 whole pickle chip. Brush the edge of each round with the egg wash and fold the puff pastry over the filling, slightly stretching if necessary. Press the edges together and crimp the edges with a fork. Transfer to one of the prepared baking sheets and brush each empanada with more egg wash. Repeat this process with the remaining sheet of puff pastry and filling. Bake until puffed and golden brown, about 15 minutes. Serve hot with the remaining sauce for dipping.

3 cups all-purpose flour
1/4 cup white sugar
1/2 cup salt
1/2 cup cold butter (cut into 1/2 inch cubes)
10 Tbsp. iced water
1/4 cup atchuete oil (mix atchuete seeds with oil then remove the seeds)
1 egg beaten
cooking oil for frying
1/2 kilo ground beef
1 medium size onion (chopped)
1/2 tsp. salt
1/2 tsp. ground white pepper
1 1/4 cups grated cheddar cheese
1/2 kilo bacon (chopped and pan fried)
vegetable oil for brushing

Steps:

  • Place the ground beef and onion in a large bowl. Season with salt and pepper. Mix until evenly combined.
  • Divide the mixture into 6 equal parts. Shape each portions into burger patties. Chill the patties.
  • Preheat the grill to high and brush it with vegetable oil. Grill the patties until cooked for 4 to 5 minutes.
  • Place the burger patties in a bowl and let it cool. Crumble the patties using your fingers and mix the grated cheese and bacon. Set aside for use in filling the empanadas.
  • Combine flour, sugar, salt and mix thoroughly. Mash the cold butter into the flour mixture. Slowly mix in the ice water into the mixture to make a dough.
  • Color the dough with achuete oil by continuously kneading the dough and slowly adding the oil.
  • Place the dough in a bowl, cover with plastic wrap and let rest for about 30 minutes to an hour.
  • Dust a clean table with flour so that the dough will not stick to the table. Flatten the dough with a rolling pin and roll until 1/4 inch thick.
  • Using a round cookie cutter, cut the flattened empanada dough into circles about 3 inches in diameter. Dust a baking pan with flour and place the shaped empanada dough, cover and set aside.
  • To assemble the empanadas, stuff each empanada dough wrapper with 2 tablespoons of the filling at the center. Dampen the edges of the dough wrapper with beaten egg.
  • Fold the dough over to form a semicircle. Pinch out the corner of the dough, and fold it onto itself. Pinch and pull out another 1/2 inch section then fold it over so that it slightly overlaps the first one. Repeat along the length of the folded side until you form a twisted seal.
  • Preheat deep fryer to 175°C. Deep fry the empanadas for 6 to 7 minutes or until golden brown. Transfer to paper towels to absorb excess oil. Serve with catsup and mustard.

3 pounds 80/20 ground beef
1/3 cup heavy cream
6 to 8 dashes hot sauce, such as Tabasco
4 dashes Worcestershire sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
6 kaiser rolls
Softened butter, for spreading, plus 2 tablespoons
6 slices Cheddar
6 slices cooked bacon, halved

Steps:

  • Place the beef into a medium mixing bowl. Add the cream, hot sauce, Worcestershire, salt and pepper. With clean hands, mix the meat well. Set aside.
  • Next, slice the rolls in half and spread each half with some softened butter. Place the rolls face-down on a skillet over medium heat. Lightly grill the rolls so they're nice and golden. Let the rolls cool on a plate until you need them.
  • Heat a skillet over medium-high heat and add the butter. Form the beef mixture into 6 patties and place in the skillet, in batches if needed. Allow each to cook about 4 minutes on the first side, flip them and place a slice of Cheddar on to melt.
  • When the patties are done in the middle, place them on the base of the halved buns. Top each with 2 pieces of the bacon and top with the other half of the rolls.

8 slices thick-cut bacon
4 sesame seed hamburger buns, split

4 thin slices sharp white Cheddar

8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Steps:

  • Prepare Empanada Dough. Wrap tightly in plastic wrap; set aside while preparing empanada filling.

1/2 tsp. baking powder
1/4 cup shortening
1/4 cup plus 1 Tbsp. cold water, divided

1 small onion, chopped

1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese

Steps:

  • Heat oven to 375ºF.
  • Mix flour and baking powder in medium bowl. Cut in shortening with pastry blender or 2 knives until mixture resembles coarse crumbs. Gradually add 1/4 cup water, stirring until mixture forms ball. Knead dough on lightly floured surface 5 min. or until smooth and elastic. Wrap tightly in plastic wrap; refrigerate while preparing filling.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
