12 large eggs
1 cup mozzarella cheese (grated)
1 cup bacon bits (fully-cooked)
1/2 cup heavy whipping cream
cooking oil spray

Steps:

  • Gather all the ingredients for the recipe.
  • Crack the eggs into a large bowl and season them with salt. Add in the heavy whipping cream and whisk to combine.
  • Stir in the bacon and cheese into the egg mixture.
  • Spray a muffin pan generously with cooking oil. Fill each cup with the egg mixture, leaving just a small amount of space to account for rising.
  • Bake the egg bites at 350°F for about 20 minutes or until fully-cooked through.

Yield about 2 dozen (2/3 cup sauce).

8 maple-flavored bacon strips
1 package (6 ounces) dried apricots
1/2 cup honey barbecue sauce
1 tablespoon honey
1-1/2 teaspoons prepared mustard

Steps:

  • Cut bacon strips widthwise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain. , Wrap a bacon piece around each apricot; secure with a toothpick. Place in an ungreased 15x10x1-in. baking pan., Bake at 350° until bacon is crisp, 18-22 minutes. Meanwhile, in a small bowl, combine the barbecue sauce, honey and mustard. Serve with warm apricot bites.
