Crimini mushrooms (also known as portabellini mushrooms) are stuffed with Cheddar cheese and bacon. This appetizer is an impressive and irresistible accompaniment to any meal.

3 slices bacon
8 crimini mushrooms
1 tablespoon butter
1 tablespoon chopped onion
¾ cup shredded Cheddar cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, dice and set aside.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove mushroom stems. Set aside caps. Chop the stems.
  • In a large saucepan over medium heat, melt the butter. Slowly cook and stir the chopped stems and onion until the onion is soft. Remove from heat.
  • In a medium bowl, stir together the mushroom stem mixture, bacon and 1/2 cup Cheddar. Mix well and scoop the mixture into the mushroom caps.
  • Bake in the preheated oven 15 minutes, or until the cheese has melted.
  • Remove the mushrooms from the oven, and sprinkle with the remaining cheese.

I was looking for make ahead appetizer for the holidays and found this one. It's hard enough during those times to get the "meal" on the table. I thought I'd make it a bit easier on the appetizers!

6 slices bacon
16 cremini mushrooms
2 tablespoons butter
2 tablespoons chopped onions
1 1/2 cups shredded cheddar cheese

Steps:

  • Place bacon in a large, deep skillet.
  • Cook over medium high heat until evenly brown.
  • Drain, dice and set aside.
  • Preheat oven to 400 degrees F.
  • Remove mushroom stems.
  • Set aside caps.
  • Chop the stems.

  • Put into the oven for a couple of seconds to melt if desired.
  • To freeze: Flash freeze them before baking in the oven.
  • A freezer bag would work great for storing these.
  • Let defrost and then add cheese and bake in oven for 15 minutes.

These are my daughter's favorite! I love stuffed mushrooms and they are so simple to make!

Number Of Ingredients 8

1 lb large white mushrooms
6-8 slice bacon, crisply cooked and finely crumbled
3/4 c cheddar cheese, separated
1/2 small onion, grated
2 clove garlic, minced
1 Tbsp reserved bacon drippings
2 Tbsp butter, melted
1/2 sleeve of ritz crackers, crushed

Steps:

  • 1. Preheat oven to 350 degree. While oven is preheating, wash mushrooms, remove stems. Dice stems very finely; set aside.
  • 2. In a small skillet, heat about a tbsp of bacon grease over med heat; add the minced stems and onion. Saute for about 2 minutes, mushroom stems and onions are soft. Add the minced garlic, continue cooking for another minute or until fragrant from the garlic. Add a bit more bacon grease if necessary.
  • 3. In a medium bowl; mix cracker crumbs, diced mushroom stem mixture, bacon, 1/2 cup of the shredded cheddar and spoon about a tablespoon into each mushroom cap.
  • 4. Sprinkle with remaining 1/4 cup shredded cheddar cheese. Drizzle mushrooms with 2 Tbsp. melted butter.
  • 5. Bake uncovered in a 350 degree oven for about 15 minutes.

These are very popular at my house. I had my niece over who loves mushrooms and just couldn't get over how good they were. In fact, she ate most of them.

2 lbs fresh mushrooms
3/4 cup Miracle Whip (may use mayo also)
10 slices bacon
1 small onion, chopped
grated cheddar cheese (as desired)

Steps:

  • Clean mushrooms, remove stems.
  • Fry bacon until crisp and then crumble.
  • Sauté onions in a bit of the bacon grease until softened.
  • In a small bowl mix crumbled bacon, Miracle Whip and onions. Sometimes I go ahead and mix in cheese.
  • Fill each cap with mixture, then if you didn't mix in your cheese already, sprinkle the tops with cheese.
  • Bake at 300°F until cheese is melted and warmed through.
