1½ pounds bacon, (cooked until crisp (see Recipe Notes below))
1/2 cup green onions, (chopped)
1/2 cup mayonnaise ((can use light))
24 cherry tomatoes, (stems removed)

Steps:

  • Dice or crumble into very small pieces.
  • In a medium bowl, combine the bacon, onions and mayonnaise.
  • Place the tomatoes stem side down on cutting board. Cut a thin slice off the bottom. Scoop out the pulp with a melon ball scooper. Invert the tomatoes on a paper towel for 30 minutes to drain.
  • Fill the tomatoes with the bacon mixture. Refrigerate several hours, or overnight.

My very favorite appetizer recipe of all time, Bacon Stuffed Cherry Tomatoes, is made using only five ingredients, including mayonnaise and Parmesan cheese.

2 pints cherry tomatoes
3/4 cup mayonnaise
1/2 cup freshly grated Parmesan cheese (NOT packaged)
1/8 teaspoon garlic powder
1 to 2 tablespoons fresh minced basil leaves
1 (16-ounce) package thin-sliced bacon, crisply cooked, drained, and crumbled

Steps:

  • Gather the ingredients.
  • Cut the top off each cherry tomato, as well as a very small portion of the bottom of each tomato so that they stand upright.
  • Using a melon baller or a sharp knife, carefully scoop out the seeds and pulp. Place each little tomato upside down on a paper towel to drain.
  • Combine the mayonnaise, Parmesan cheese, garlic powder, basil leaves, and bacon in a small bowl and mix well.
  • Stuff each cherry tomato with the bacon mixture using a very small spoon.
  • Cover all of the stuffed tomatoes and chill in the fridge for at least 2 hours to blend flavors before serving.

1 pint cherry tomatoes
FILLING:
3 ounces cream cheese, softened
1/4 cup ranch salad dressing
2 tablespoons thinly sliced green onion
2 tablespoons finely chopped water chestnuts
2 tablespoons finely chopped walnuts
Whole chives, optional

Steps:

  • Make an "X" in the top of each tomato, cutting two-thirds of the way to the bottom. Scoop out pulp with the tip of a knife. Drain tomatoes, upside down, on a paper towel. Combine filling ingredients in small bowl. Stuff tomatoes with filling. Keep refrigerated until serving. If desired, garnish with chives for flower stems.

This is an easy, simple recipe that goes over well. You can make the filling ahead and scoop out the tomatoes well ahead of time but do not fill the tomatoes until just before serving. I like to add the lettuce to the filling just before filling the tomato however the original recipe said you can mix it in when you combine all the stuffing ingredients. Looks great on a buffet table

20 cherry tomatoes
1/4 cup chopped fresh chives or 1/4 cup green onion
10 slices bacon, fried crisp and crumbled
1/2 cup lettuce, very finely chopped
3 tablespoons mayonnaise
salt and pepper

Steps:

  • Cut the top off the tomatoes, scoop out the seeds& pulp. Use the seeds & puld in some other recipe.
  • Salt the inside of the tomato and put them upside down on a paper towel to drain for about15 minutes.
  • Meanwhile combine the bacon, chives, lettuce and Mayo, season with salt and pepper (remember that you have already salted the inside of the tomatoes).
  • Fill the tomatoes just before serving.

30 cherry tomatoes
3 slices cooked OSCAR MAYER Bacon, crumbled
1/4 cup MIRACLE WHIP Dressing
1/4 cup KRAFT Grated Parmesan Cheese
4 green onions, finely chopped

Steps:

  • Cut tops off tomatoes; discard tops. Scoop out seeds from tomatoes; place tomatoes, cut sides down, on paper towels to drain.
  • Meanwhile, combine bacon, dressing, cheese and onions. Refrigerate 30 min.
  • Spoon bacon mixture into tomatoes.
