Yield 6

Number Of Ingredients 13

4 slices bacon
¾ pound chicken breasts, diced
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 medium shallot, finely chopped
1 clove garlic, minced
2 cups water
1 cup whole milk
4 cups elbow macaroni
1 tablespoon ranch dressing mix
3 cups broccoli florets
1 (8 ounce) package shredded Cheddar cheese
¼ cup sour cream

Steps:

  • Heat bacon in a large Dutch oven over medium heat. Cook, flipping occasionally until browned and crisp, about 10 minutes. Drain on paper towels.
  • Sprinkle chicken evenly with salt and pepper; cook in hot bacon drippings over medium-high heat, stirring often, until chicken is golden brown on all sides, about 4 minutes. Transfer chicken to a plate and set aside. Chicken will not be fully cooked at this point.
  • Add shallot and garlic to drippings and cook, stirring often, until fragrant, 2 minutes. Stir in water and milk; use a wooden spoon to scrape any browned bits from bottom of the Dutch oven. Stir in pasta and ranch dressing mix. Bring to a boil and simmer for 6 minutes.
  • Return chicken to the Dutch oven and add broccoli. Cook until pasta is tender and chicken is cooked through, 3 to 4 minutes. Stir in Cheddar cheese and sour cream to combine. Crumble cooked bacon over the top and serve hot.

Time 55m

Yield 6

Number Of Ingredients 10

1 (12 ounce) package farfalle (bow tie) pasta
7 slices bacon
1 onion, diced
3 cloves garlic, minced
1 cup heavy cream
3 tablespoons butter, divided
1 cup shredded Gouda cheese
salt and ground black pepper to taste
½ cup panko bread crumbs
½ cup riced broccoli

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet. Let bacon cool enough to handle, about 5 minutes; crumble and set aside. Drain cooked pasta and set aside.
  • Heat 2 tablespoons bacon grease in a medium saucepan over medium heat. Saute onion and garlic in the hot grease for 2 to 3 minutes. Add crumbled bacon, heavy cream, and 1 tablespoon butter; continue cooking until sauce becomes thick and creamy, 5 to 7 minutes. Mix in gouda cheese and stir until melted. Season with salt and pepper. Remove from heat and mix pasta into the cream sauce. Pour mixture into the prepared casserole dish.
  • Melt remaining 2 tablespoons butter in a medium, microwave-safe bowl in a microwave for 20 seconds. Mix in panko bread crumbs and riced broccoli; stir very well to coat in butter. Spread mixture on top of pasta.
  • Bake in the preheated oven for 15 minutes. Remove from the oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Continue to bake in the preheated oven until crumble is browned, about 5 minutes more.

Cheesy Chicken Pasta with Broccoli and Bacon image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 14

Kosher salt and freshly ground black pepper
1 pound penne pasta
1 head broccoli, cut into small (1-inch) florets
4 tablespoons unsalted butter
2 cloves garlic, minced
1/2 cup all-purpose flour
5 cups whole milk
2 cups grated Gruyere
1 cup sour cream
2/3 cup grated Parmigiano-Reggiano
2 teaspoons hot sauce
12 ounces cooked chicken breast or deli chicken, cut into 1/2-inch dice
1/2 cup chopped crispy-cooked bacon
1/4 cup chopped fresh chives

Steps:

  • Bring a large pot of water to a boil. Season with salt until it tastes like the sea. Cook the pasta until not quite al dente, about 7 minutes. Transfer with a spaghetti scoop or slotted spoon to a bowl and set aside. Add the broccoli to the pasta water and blanch briefly. Transfer with a slotted spoon to a bowl. Reserve the pasta water.
  • While the pasta is cooking, heat the butter in a large pan over medium heat. Once the butter is melted, add the garlic and cook until fragrant, about 30 seconds. Whisk in the flour and cook for 2 minutes. Whisk in the milk, then bring to a boil. Reduce the heat to a simmer and cook, whisking, until the sauce is slightly thickened, about 5 minutes. Stir in the Gruyere, sour cream and Parmesan and whisk until smooth. Add the hot sauce and season with salt and pepper.
  • Add the pasta, chicken and broccoli to the sauce. Continue to cook until the pasta is al dente and the sauce coats the pasta, 4 to 5 minutes. Use pasta water to adjust the consistency of the sauce if needed.
  • Distribute the pasta into bowls and top with the bacon and chives.

BROCCOLI, GRAPE, PASTA, BACON SALAD

Broccoli, Grape, Pasta, Bacon Salad image

A wonderful summer meal, sweet and sour pasta, with the tastey undertones of bacon. This is from Southern Living Sept 2011. When I first saw it, I did not think it was going to be a good combination, but I made it because it seemed kid-friendly; but now *I'm* converted! I'm listing the ingredients the way they listed them, but honestly, half the sugar is perfectly yummy. Also, I did not find it necessary to chill the salad, so if you're running short on time, go ahead and eat it room temp! I also hid some boiled egg in this salad for extra protein for my kids--I just minced up the whites and blended the yolks into the mayonnaise mixture. They LOVED it! Lastly, the reviews for this on myrecipes.com gets 5 stars with 42 reviews, so it's worth a try!

PASTA WITH TUNA, BACON, AND BROCCOLI

Pasta With Tuna, Bacon, and Broccoli image

I know how this sounds, but it is actually a really great combination. You can change it up by adding chicken, shrimp or scallops. I also like sauted mushrooms in it. It's great for left over spaghetti noodles when you're tired of plain old marinara.

Time 30m

1/4 cup olive oil
1 tablespoon olive oil

2 cups frozen broccoli
2 (6 ounce) cans canned tuna
italian seasoning
fresh ground black pepper
1/4 cup dry white wine (this is approx. it depends on you)
3/4 cup parmesan cheese
1 lb cooked spaghetti

  • heat olive oil and saute onion and garlic until soft.
  • add broccoli and tuna, cook until broccoli is tender.
  • add bacon, Italian seasoning, black pepper and wine. Heat through.

How to make Easy Weeknight Bacon Broccoli Pasta.

Provided by @MakeItYours

Number Of Ingredients 8

8 ounces pasta, cooked
4 slices bacon, chopped
3 garlic cloves, minced
2 cups broccoli florets
1/4 cup freshly shaved/grated parmesan
1/2 teaspoon crushed red pepper flakes
lots of fresh cracked black pepper
extra virgin olive oil, if needed for drizzling

Steps:

  • Bring a pot of salted water to a boil and cook the pasta according to the directions. While the water is boiling, heat a large skillet or saucepan over medium-low heat and add the bacon. Cook until it is browned, crispy and all the fat is rendered, then removed the bacon with a slotted spoon and set it on a paper towel to drain and excess grease.Remove all but 2 tablespoons of the bacon grease from the pan and turn the heat up to medium. Stir in the garlic and the broccoli florets and cook, tossing occasionally, for about 5 minutes until the broccoli is bright green and slightly soft. Add a lot of fresh cracked pepper and if you'd like, a tiny pinch of salt. I find that I usually don't need the salt because the bacon grease is salty! At this time, you can toss in the cooked pasta. Toss well to combine every and keep it over low heat. If it seems too dry, you can drizzle in the remaining bacon grease or you can just drizzle some olive oil on top and toss well. Add in the parmesan shavings and crushed red pepper. Toss well. Serve it!
