CHOCOLATE DIPPED SMOKED ALMOND BACON BRITTLE
Not even remotely healthy, but oh so good. The chocolate drizzle can be optional. From Jane Rockmill's "I Love Bacon" cookbook. Great as a gift or bakesale.

Steps:
- Cut bacon into bite-size pieces. Place pieces in large saute pan and cook over medium heat until crispy, about 10 minutes. Drain and set aside. Coarsely chop smoked almonds and set aside. Line baking sheet with silicone liner or waxed paper.
- In large saucepan, combine sugar, corn syrup and water. Cook mixture on medium-high heat about 4 minutes or until sugar turns thick and syrupy. Slowly add softened butter and continue stirring until mixture emulsifies. Keep cooking and stirring until mixture is golden brown, about 4 minutes longer.
- Remove pan from heat. If mixture is not smooth, whisk until it is. Stir in baking soda, salt, peppercorns, crispy bacon bits and almonds. Quickly but carefully pour brittle onto prepared baking sheet. When cool and hard, break brittle into bite-size pieces.
- Melt chocolate in microwave in a microwave-safe bowl in 30-second intervals, stirring in between intervals, until mixture is entirely melted but not hot. Cool chocolate to room temperature, then either dip pieces of brittle in the chocolate or drizzle the chocolate on top. Chill brittle until chocolate is set. Store in a tightly sealed container for up to 1 week.

I adapted this recipe one night after having seen a peanut-bacon brittle on TV. It is sooooo good. I have trouble waiting for this stuff to cool before eating!

- Bring sugar, water, corn syrup, and maple syrup to a boil in a large skillet over medium-high heat, stirring constantly. Heat to 250 degrees F (120 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
- Stir pecans and vanilla into syrup mixture until mixture begins to turn brown; add bacon. Cook until bacon mixture turns light brown, 1 to 3 minutes. Remove from heat and stir baking soda into bacon mixture. Pour brittle out onto a sheet of parchment paper set on a heat-proof surface and cool brittle to room temperature before breaking into pieces, at least 30 minutes.

TWICE-BAKED SWEET POTATOES WITH BACON-SESAME BRITTLE

- Line a rimmed baking sheet with a silicone baking mat or parchment paper.
- Cook bacon in a medium nonstick skillet over medium heat until most of the fat is rendered and bacon is starting to crisp. Transfer bacon to a sieve set over a small bowl; reserve drippings.
- Return bacon, 1 tablespoon drippings, sugar, and sesame seeds to same skillet. Cook over medium heat, stirring frequently, until sugar turns the color of milk chocolate, about 5 minutes. Transfer mixture to prepared baking sheet and use a spatula to spread out evenly; let cool. Break brittle into shards. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.
- Preheat oven to 400°F. Place sweet potatoes on a foil-lined baking sheet. Roast until tender, 45-55 minutes. Let sit until cool enough to handle.
- Slice potatoes in half lengthwise. Working over a large bowl, scoop out flesh from 8 halves, leaving a 1/2"-thick layer inside skins. Place potato halves on same foil-lined baking sheet. Scoop flesh from remaining 4 halves; discard skins. Mash flesh with a whisk; add eggs, butter, miso, and ginger and stir until mixture is smooth. Spoon or pipe filling into reserved skins. DO AHEAD: Can be made 6 hours ahead. Cover and chill.
- Bake potatoes until the tops are lightly puffed and golden brown, 30-35 minutes (potatoes will take longer if they've been chilled). Top potatoes with bacon-sesame brittle and scallions.

I made this recipe for my husband and friends. It's a huge hit that I make every Christmas for gifts. It's perfect for any bacon lover. I personally think this tastes better the second day.

- Cook bacon in a large skillet over medium-high heat, turning occasionally, until crisp and browned, about 10 minutes. Drain the bacon slices on paper towels and reserve 1 tablespoon bacon grease. Crumble bacon once drained and slightly cooled.
- Line a large baking sheet with parchment paper.
- Combine sugar, syrup, and salt in a large microwave-safe bowl. Heat in microwave oven until bubbling, about 4 minutes.

- Grease or butter a large nonstick baking sheet.
- In a medium heavy saucepan, combine the sugar, corn syrup and water over medium heat.
- Stir until the sugar dissolves and the syrup comes to a boil.
- Attach a candy thermometer to the pan, increase the heat to high, and cook, without stirring, until the mixture reaches 290 degrees.
- Immediately remove from the heat.
- Stir in the butter, vanilla, baking soda, pecans and bacon bits.
- Watch out, as the mixture will foam.
- When the foam subsides, pour the hot mixture onto the prepared baking sheet as thinly as possible.
- Do not use a spatula.

SPICY MAPLE BACON PEANUT BRITTLE

- Preheat oven to 400 degrees.
- Place bacon on a rack over a cookie sheet and cook until crispy, about 15 minutes. Reserve bacon fat. The recipe calls for 8 tablespoons of butter (fat) - replace as much of butter as you have bacon fat. Once bacon is done, drain on paper towels and chop into bits.
- Place the sugar and maple syrup in a large, heavy saucepan over high heat and stir with a wooden spoon until sugar begins to melt. Lower the heat to medium-high and keep stirring just until the sugar is melted. Stop stirring and watch for it to turn a medium caramel color. About 10 minutes total.
- Stir in peanuts, and then bacon fat and butter. Then add Old Bay, cayenne and dry mustard. Allow peanuts to cook for about two minutes, stirring constantly. Stir in the bacon.
- Turn the mixture out onto a sheet pan lined with parchment paper, and spread it evenly to the desired thickness with a wooden spoon or stiff rubber spatula. Sprinkle salt on top, while brittle is still warm.
- Allow to cool completely--at least one hour--then break the brittle into pieces and store in an airtight container at room temperature. If your brittle isn't brittle enough to break into pieces, pop it in the freezer for 10 to 15 minutes, until it hardens enough to snap easily.

BACON BRITTLE
Bacon, It's not just for breakfast anymore! This recipe for Bacon Brittle uses my Jamaican Jerk Butt Kickin' Blacken to give it a little kick. The bacon is as much a carry for the candy and flavors as it is for the taste. Butt Kickin' Blacken contains neither salt nor sugar and is available at http://www.capnrons.com/index.html?id=rz Most other blacken seasonings contain a lot of salt and sugar, you'll have to adjust this recipe accordingly.

- Cook the bacon over a medium heat until almost crisp. You can do this either in a fry pan, or the oven.
- Place the sugar in a pot wide enough to hold the cooked bacon strips. Add the water. and corn syrup,, mix well, and be sure that no sugar or blacken are on the sides of the pot.
- Cook over medium / high heat, being careful not to burn, until the mixture is a light golden brown. Now you can add the blacken. Hot enough for the hard ball stage.
- You can test the mixture, by dropping a drop into cold water, then touching it to see if it's hard or soft. If it's soft, you've reached the "soft ball stage" and must cook it a little longer. When you drop a drop into cold water, and it becomes hard, you're ready for the next step.
- Turn off the heat, and dip the bacon strips in the caramel one strip at a time. Place them on a parchment lined sheet pan, and let cool. You might have to leave the heat on real low, to keep the caramel warm. The cold bacon will cool it down pretty quick.
- When the bacon brittle has cooled, you can chop it up, or serve as strips.
- I always keep some pecans on hand, and I'll through a good handful into any leftover caramel for a Spicy Pecan Brittle.
- Hint:.
- I like using a Teflon pot for this recipe. The easiest way to clean your pot after making candy in it, is to fill have way with water, and boil. This will melt and dilute the sugar, making cleanup easy.
BOURBON BACON BRITTLE
Steps:
- To MAKE THE CANDIED OSCAR MAYER BACON:
- Heat oven to 400ºF. Line a large rimmed baking sheet with parchment paper. Set oven-safe cooking rack inside. Arrange bacon in single layer on rack.
- Top bacon with 2 Tbsp. bourbon whiskey, brown sugar, and crushed red pepper. Bake for 13 to 15 minutes per package instructions. (Alternatively, you can bake bacon in a preheated 300°F oven for 50 to 60 minutes.) Cool slightly.
- Once cool enough to handle, roughly chop the candied bacon. Set aside.
- To MAKE THE BRITTLE:
- In a large saucepan, combine the sugar, water, butter and corn syrup. Bring to a boil. Continue to cook over medium-high heat, stirring occasionally, until the caramel is light brown and reaches 300°F on a candy thermometer, about 10 minutes. (Note that around 250°F the mixture will start to thicken.)
- Remove saucepan from the heat and carefully stir in the remaining tablespoon of bourbon, plus the vanilla and baking soda. Stir in the nuts, then immediately scrape the brittle onto a lined baking sheet. Spread the brittle into a thin, even layer. Work fast - it will set quickly. Sprinkle with the chopped candied bacon.
- After the brittle cools for at least 30 minutes, you can break it into large chunks. (Note: This is best if eaten the same day it is made.)

- Line a large baking sheet with foil and grease with butter. In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Cook, stirring occasionally, until a candy thermometer reaches 260°, about 10 minutes. Remove from heat and add butter and a large pinch of salt. Stir once then return over medium-high heat and cook, without stirring, until the syrup turns golden and the thermometer reaches 285°, about 5 more minutes. Add bacon, vanilla, bourbon, and baking soda. (It will foam!) Cook, stirring occasionally, until the mixture turns a deeper golden and the thermometer registers 300°. Immediately pour the mixture onto prepared baking sheet, tilting and spreading the mixture into a thin layer. Let cool completely before breaking into pieces.
BACON PEANUT BRITTLE
Sweet and salty peanut brittle studded with crumbled bacon.

- Place a small skillet over medium-high heat. Add the bacon and cook for 6 to 8 minutes or until golden and crispy. Remove bacon from the skillet and drain it on some paper towels and set aside.
- Spray a large rimmed baking sheet and a metal spatula with nonstick cooking spray. Combine the sugar, butter, water and corn syrup in a large saucepan over high heat. Bring to a boil and cook for 10 to 12 minutes or until the mixture registers 325°F on a candy thermometer. Remove pan from the heat and whisk in the salt and baking soda. Stir in the peanuts and cooked bacon.
- Working quickly, pour the brittle out onto the prepared baking sheet and, using the coated spatula, spread it out into an even 1/2-inch thick layer. Let it cool completely at room temperature before breaking into pieces.
BACON BRITTLE
Steps:
- 1. Brush 9x13 baking sheet with butter and set aside.
- 2. Cook bacon until easily crumbled. Crumble and set aside.
- 3. Combine Corn Syrup, Sugar, Water and salt in medium saucepan. Bring to a boil over medium-high heat, stirring constantly until sugar dissolves. Continue cooking, swirling occasionally, until reaching 'softball stage' on a candy thermometer (238 degrees.)
- 4. Add bacon, continue cooking and stirring often to keep from burning bacon, until liquid turns amber. Remove from heat.
- 5. Carefully stir in Vanilla and Baking Soda, immediately. Mixture will foam up in pan.
- 6. Pour mixture on to prepared baking sheet, spread evenly immediately. Then set aside until completely cooled.
- 7. Gently break brittle into pieces and enjoy.

How to make Beer Bacon Brittle

- Lightly butter a baking sheet and set aside.
- In a large saucepan, melt butter over medium heat. Add sugar, beer and salt and continue to stir over low heat until sugar is dissolved. Bring sugar mixture to a boil and cook to hard crack stage, 300°F.
- Remove from heat and stir in bacon, rice cereal and pecans before quickly pouring onto prepared cookie sheet.
- Let brittle cool to room temperature, then crack into bite size pieces. Store in an airtight container for up to 1 week.
