BACON CHEDDAR SCONES

2 ¼ cups flour, plus more for dusting
1 tablespoon sugar
½ teaspoon kosher salt
2 teaspoons baking powder
½ cup (1 stick) cold unsalted butter
4 slices cooked bacon, roughly chopped
2 scallions, minced
¾ cup shredded sharp cheddar
1 egg
¾ cup half and half

Steps:

  • Heat the oven to 400°F and line a baking sheet with parchment paper. In a large bowl, stir together the flour, sugar, salt, and baking powder. Use the large holes of a box grater to grate the butter into the flour mixture, tossing occasionally as you shred. Stir in the bacon, scallions, and cheese.
  • In another bowl, whisk together the egg and half and half. Combine the two mixtures and blend until the flour is moistened. Do not overmix.
  • Turn the dough out onto a lightly floured surface. Pat it into a ½-inch-thick circle. Slice the round into 8 even wedges and transfer the scones to the prepared baking sheet, spacing them 2 inches apart.
  • Bake the scones until golden brown on the top and bottom, rotating the pan halfway through, about 20 to 25 minutes. Let cool slightly before serving.

I love scones. My husband does now. This is a traditional scone but with a lot more flavor with smokey bacon, sharp cheddar, rich stout, and sour cream. These are best served warm, but when cooled, they make a great bread for breakfast sandwiches.

3 1/2 cup(s) all purpose flour
4 tablespoon(s) baking powder
1/4 teaspoon(s) salt
1/2 cup(s) butter-cut into small pieces
1/2 cup(s) milk
1/2 cup(s) stout (like guinness)
1/2 cup(s) sour cream
1 pound(s) bacon-fried crisp & crumbled
2 cup(s) shredded sharp cheddar cheese

Steps:

  • Preheat oven to 400 degrees. Sift flour, baking powder, and salt. Cut in butter. Stir in bacon and shredded cheddar. Mix milk and sour cream in a cup. Add stout. Mix liquid into flour mixture. Stir until just combined. Turn out onto a floured surface. With extra flour available for handling, press dough into a 1 inch thick and 6 inch wide rectangle. This may take repeating several times to use all of the dough. Cut the dough with a sharp knife into triangles. Place dough triangles on a parchment lined cookie sheet. Brush with egg wash made from one egg white and 1 TBSP water. Bake at 400 degrees for 10-15 minutes or until lightly brown. Remove from oven and cool.
