- In a large bowl, whisk eggs, milk, Worcestershire sauce and mustard until blended. Stir in cheeses, bacon, ham and pineapple. Gently stir in cubed rolls. Transfer to a greased 13x9-in. baking dish. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, 35-45 minutes or until golden brown and a knife inserted in the center comes out clean, sprinkling with onions halfway through baking. Let stand 5-10 minutes before cutting.

- Preheat oven to 350°F Lightly oil a 9 x 13 glass baking dish. In a large bowl, toss the bread with the olive oil and spread on a large rimmed baking sheet. Bake for about 20 minutes, tossing once or twice, until the bread is golden and lightly crispy.
- Meanwhile, in a large skillet, cook the bacon over moderately high heat, stirring occasionally, until crisp, about 8 minutes. Transfer the bacon to paper towels to drain: reserve 2 Tablespoons of the fat in the skillet.
- Add the onion to the skillet and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the tomatoes and cook until liquid is evaporated, about 3 minutes.
- Return the toasted bread cubes to the bowl. Add the contents of the skillet, along with the bacon, shredded cheeses, chives and broth. Stir until the bread is evenly moistened. Spread the mixture in the baking dish and cover with lightly oiled foil.
- Bake the bread mixture in the center of the oven for 30 minutes. Remove the foil and bake until the top is crispy, about 15 minutes longer. Carefully remove the baking dish from the oven and using a ladle, press 6 indentations into the bread mixture (you can do 8 if you want to). Crack an egg into each indentation. - Spray 11x7 inch glass baking dish with nonstick cooking spray.
- Spread potatoes evenly in baking dish.
- Add cheese; stir gently to mix.
- Beat eggs thoroughly in medium bowl.
- Add milk, Mrs. Dash seasoning, salt and hot sauce; beat until well blended.

- In a large bowl, whisk together the eggs, cream, milk, maple syrup, vanilla and a pinch of salt. Tip about two-thirds of the blueberries into a baking dish (about 20cm x 30cm) that is quite deep. Dip each brioche piece into the egg mixture until well soaked, then arrange on top on the blueberries and pour any remaining egg mixture over the top. Scatter over the remaining blueberries. Cover with cling film and chill for 1 hr, or overnight if serving it for breakfast.
- Heat oven to 180C/160C fan/gas 4. Uncover the dish and scatter over the pecans. Bake for 25 mins until the egg mixture is set and the blueberries are starting to burst. Meanwhile, line a baking tray with foil and arrange the bacon on top. When the brioche bake is ready, remove from the oven and cover loosely with foil to keep warm. Heat the grill to high and cook the bacon for about 5 mins each side until crispy.
- Dust the brioche bake with icing sugar and top with the crispy bacon. Serve with extra maple syrup for drizzling.

EGG AND BACON BREAKFAST BAKE
You can prepare this the night before and refrigerate it, just take it out about 30 minutes before you want to cook it or increase the baking time to 30-40 minutes. If increasing the baking time, don't sprinkle the cheese on top until the last 15 minutes.

BACON BREAKFAST BAKE
This a great breakfast dish to serve to overnight visitors. It is very easy to prepare and keeps you out of the kitchen so you can be with your guests. I fixed it with white bread, but I would use French bread and more bacon the next time around. Everything is always better with "Just a Pinch" more bacon!

- 1. Preheat oven to 350.
- 2. Cook bacon until crispy.
- 3. Butter bread slices. Arrange buttered bread on work surface and top with bacon, 1/2 of the onion and 1/2 of the cheddar cheese. Top with remaining bread slices.
- 4. Cut sandwiches in half and arrange in casserole dish, top with sliced tomatoes.
- 5. Whisk together eggs, mustard, milk and worcestershire sauce and pour over sandwiches. Refrigerate 6-24 hours.
- 6. Sprinkle casserole with remaining cheese and green onions. Bake 50 minutes to 1 hour or until center is set. Remove from oven and let set 10 minutes. Cut into serving pieces and serve.
