BARBECUE BACON CHICKEN QUESADILLAS RECIPE

Number Of Ingredients 7

3 boneless skinless chicken breasts (cooked and diced)
8 strips bacon (cooked and crumbled)
1/3 cup diced red onion
1 cup barbecue sauce
6 soft flour tortillas
1 cup shredded mozzarella cheese
salt and pepper, to taste

Steps:

  • Heat stove-top to medium-high heat.
  • In a medium size bowl, combine the diced chicken, bacon, red onion, and barbecue sauce
  • Spray a pan with non-stick cooking spray or butter.
  • Place tortilla on the pan, and place about 1/2 or 3/4 cup of the chicken barbecue mixture and spread around so it is evenly spread.
  • Sprinkle mozzarella cheese on top and place another tortilla on top of that.
  • Once one side of the tortilla is golden brown and starting to harden, flip to the other side and cook until golden brown (this will take about 3 minutes each side).
  • Take off the stove top and serve with your favorite toppings such as:barbecue sauce, ranch, or sour cream.

1 tablespoon butter, softened
2 flour tortillas (6 inches)
1/4 cup shredded Colby-Monterey Jack cheese
2 bacon strips, cooked and crumbled
1 tablespoon salsa
Sour cream, guacamole and additional salsa, optional

Steps:

  • Butter one side of one tortilla; place in a small skillet, buttered side down. Top with cheese, bacon and salsa. Butter remaining tortilla; place on top, buttered side up., Cook over low heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Serve with sour cream, guacamole and additional salsa if desired.

5 slice(s) bacon, cooked and crumbled
2 - burrto sized flour tortillas
1/2 - yellow onion, thinly sliced
3/4 cup(s) Monterey Jack cheese, shredded
1/4 cup(s) crumbled blue cheese
4 ounce(s) sour cream
1 tablespoon(s) peach preserves
1/4 teaspoon(s) sriracha hot chili sauce
1 teaspoon(s) balsalmic vinegar
1 tablespoon(s) olive oil

Steps:

  • Saute onion in skillet in olive oil over medium-high heat until limp. Add balsamic vinegar and cook another minute. Remove onions and set aside.
  • Take one tortilla and top with onions, bacon and cheeses. Top with another tortilla.
  • Spray skillet with cooking spray and brown quesadilla on both sides. Remove and cut into slices with a pizza cutter.
  • Combine sour cream, preserves and chili sauce. Stir and serve with quesadilla.
