OVEN-BAKED BEEF BACON
Beef bacon is amazing! It's fatty and flavorful and makes an excellent alternative to pork bacon.

Steps:
- Preheat your oven to 400°F. Line a rimmed baking sheet with foil for easy cleanup.
- Arrange the bacon slices in a single layer on the prepared baking sheet. It's okay if they touch each other, but they should not be stacked on top of each other.
- Place the pan in the oven and bake the strips until well browned, 15-20 minutes.
- Be careful when removing the pan from the oven - its bottom will have quite a bit of hot rendered fat.
- Using tongs, remove the strips to a plate lined with paper towels. Serve immediately.

BEEF AND PASTA BAKE - THE BEST!
I have tried so many pasta bakes but this one from the Australian Women's Weekly is still the best IMHO! Easy and very delicious, reheats great and everyone loves it - what more could you want! I've tried to translate the recipe into American as much as possible; hope you enjoy it as much as my family does.

Steps:
- Preheat oven to 180 (350F).
- Heat oil in large pan; cook onion, garlic, bacon and carrot, stirring, til carrot is just tender - about 8 minutes *.
- Add mince and cook, stirring, til mince changes colour; then add undiluted soup, tomato paste, sauce and oregano and simmer, covered, about 15 mins or til mixture has thickened slightly.
- While beef mixture is simmering, cook pasta and drain. Stir pasta into beef mixture, then spoon into an oiled deep 8 cup capacity ovenproof dish and sprinkle with cheese. Bake, uncovered, for 15 mins or until browned slightly.
- *If you want to, you can add a stick of chopped celery along with the onion etc or add some mushrooms just before the mince.

I have been making a larger version of this recipe for as long as I can remember, more than 40 years. I am very happy to share with you this smaller version for an average size family. I am sure it will become your favorite as it has ours. Recipe is found in my cookbook. I have now added a picture.

- 1. Most of the ingredients used to create this recipe.
- 2. PREHEAT OVEN TO 350 DEGREES F. In a large skillet over medium heat, brown ground beef, chopped onions and bell peppers, until cooked thourgly. Drain any excess fat.
- 3. In a separeate pan over medium heat , saute' bacon pieces, until cooked and crispy in microwave or skillet. Remove and drain on paper towels.
- 4. Add crumbled bacon to ground beef mixture. Mix well and stir in catsup, brown sugar,vinegar or mustard, molasses, drained kidney beans,& baked beans or pork n Beans. Stir to mix. Cover skillet and bake in preheated oven for 1 1/2 to 2 hours. Makes 8 hearty servings.

- 1. Preheat the oven to 375 degrees. Cover a cookie sheet with foil. Spray with cooking spray.
- 2. Lay the bacon slices onto cookie sheet. It's ok if the slices touch, but they should not overlap.
- 3. Put the bacon in the preheated oven on the middle rack for 10 minutes.
- 4. Take the bacon out and flip the slices.
- 5. Place bacon back in the oven for another 10-15 minutes depending on preferred crispness.
- 6. Take the cookie sheet out of the oven.
- 7. Drain cooked bacon on a plate lined with paper towels.
- 8. The oven-baked bacon is ready to be served.
