Spiralized Vegetables and Bacon Salad image

This Honey Mustard Sweet Potato Salad is made with with spiralized sweet potatoes, zucchini and shaved brussels sprouts in a bacon honey mustard dressing.

4 slices of bacon (chopped)
1 sweet potato (large, peeled and cut in half)
2 zucchinis (ends trimmed, cut into 3 inch pieces)
2 yellow squash (ends trimmed, cut into 3 inch pieces)
8 brussels sprouts (end trimmed)
¼ tsp salt
¼ tsp black pepper
2 tbsp honey
2 tsp Dijon mustard
½ tsp dried sage
2 tbsp of dried cranberries
2 tbsp of sliced almonds

Steps:

  • In a large skillet over medium heat render bacon until crisp. Transfer to plate with paper towel to drain. Reserved 2 tablespoons of bacon fat in pan and save balance for other use.
  • Thinly slice the brussels sprouts and place in small bowl with cranberries and almonds. Set aside.
  • Use Hamilton Beach 3-in-1 Spiralizer and using spiral cutter, cut sweet potato, zucchini, squash per instructions into "noodles". Add to skillet and toss to coat and sauté for 3 minutes over medium-high heat. Stir as water releases from squash and season with salt, pepper.
  • Add the honey, mustard and dried sage and toss to coat. Cook another minute or two for al dente vegetables.
  • Add the brussels sprouts, cranberries and almonds to pan and mix well. Sauté another 2-3 minutes. Top with cooked bacon pieces and serve warm.

1/2 cup white wine vinegar
1 tablespoon coarse-grained mustard
1 tablespoon sugar
2 1/2 pounds red potatoes, diced into 1-inch cubes
Salt
6 bacon slices, chopped
1 medium sized red onion, diced
Freshly ground black pepper
2 cloves garlic, chopped
1/4 cup freshly chopped dill leaves, plus more for garnish
Vinaigrette:

Steps:

  • For the vinaigrette:
  • Mix all the ingredients together in a small bowl and set aside.
  • Add potatoes to pot of salted cold water. Bring to a boil, over high heat, then reduce heat to a simmer and cook for 20 minutes until tender. Drain and place in a large bowl. Cover with foil to keep warm, if necessary.
  • Add bacon to large saute pan and cook until crisp over medium heat. Remove to a paper towel-lined sheet tray and reserve. Add onion, dash of pepper and garlic to bacon grease and saute until tender, about 3 minutes. Add vinaigrette to vegetables. Let cook until reduced and thickened, about 2 to 3 minutes.
  • Add potatoes, dill and bacon to the pan and toss to coat with dressing. Allow to cook for 3 minutes. Season, to taste, with salt and pepper. Transfer potato salad to a serving platter and sprinkle with chopped fresh dill.

1 1/2 pounds sweet potatoes, peeled and cut into bite-sized chunks
Salt
Extra-virgin olive oil, for liberal drizzling
4 slices good quality lean bacon, chopped
1/2 cup beef stock
2 tablespoons wine vinegar
A few dashes hot sauce
1 teaspoon smoked sweet paprika or sweet paprika
Freshly ground black pepper
1/2 small red onion, finely chopped
2 to 3 small ribs celery, finely chopped
A handful parsley leaves, finely chopped

Steps:

  • Put the potatoes in a pot over medium heat and cover them with water. Bring to a boil then salt the water and cook until just tender, about 15 minutes. Drain the potatoes and return them to the hot pot. Heat a small pan over medium-high heat and drizzle in some extra-virgin olive oil. Add the bacon and cook until just about crisp. Add the stock to the pot with the potatoes along with the vinegar and hot sauce and stir over low heat until combined. Turn off the heat and season with paprika and salt and pepper, to taste. Transfer the potatoes to a serving bowl and stir in chopped onions, celery and parsley. Dress the salad with a liberal drizzle of extra-virgin olive oil and serve immediately.

4 bacon strips, diced
2 cups honey-Dijon mustard
1/2 cup sugar
1/3 cup orange juice
1 tablespoon cider or red wine vinegar
1/4 teaspoon ground mustard
1/4 cup honey
Torn salad greens or fresh spinach

Steps:

  • In a skillet, cook bacon until crisp. Drain, reserving 3 tablespoons drippings; set bacon aside. To the drippings, add Dijon mustard, sugar, orange juice, vinegar and ground mustard; bring to a boil. Stir in honey and bacon. Serve warm over salad greens or spinach. Refrigerate leftovers; reheat before serving.

1 (5 ounce) bag Baby Spinach
1 cup water
1 pinch salt
1 lb sweet potato, peeled, halved lengthwise, then cut crosswise in 1/4 inch thick slices
8 ounces green beans, ends trimmed, beans cut in half
2 teaspoons vegetable oil
8 ounces Canadian bacon, thick sliced, stacked and cut in strips
1 red onion, cut in thin wedges
1/3 cup honey Dijon salad dressing

Steps:

  • Line a serving plate with baby spinach leaves.
  • Add water and salt to skillet. Bring to a boil.
  • Add sweet potatoes and green beans to skillet and cook until sweet potatoes are tender, about 7 minutes.
  • Drain potatoes and green beans in colander.
  • Wipe skillet and add vegetable oil. Heat over medium heat.
  • Add Canadian bacon and onion to hot oil and sauté 5 minutes or until bacon is lightly browned and onions are tender.
  • Spoon sweet potatoes, green beans, bacon and onions over spinach leaves.

6 slices bacon, medium dice
1 red onion, finely sliced
3 cloves garlic, finely chopped
3/4 cup white wine vinegar
1/2 cup olive oil
2 tablespoons granulated sugar
4 sweet potatoes, peeled, cooked and cut into 1-inch dice, kept warm
Salt and freshly ground pepper
4 green onions, finely sliced
1/4 cup chopped parsley

Steps:

  • Heat pan over high heat. Add bacon and cook until just crisp. Remove bacon to a towel-lined plate. Pour off all but 2 tablespoons of the fat. Add onions and garlic and cook until soft. Remove pan from heat, add vinegar, olive oil, sugar and reserved bacon. Place the potatoes in a large bowl, pour the dressing over and season with salt and pepper. Fold in the green onions and parsley. Serve at room temperature.

200g lardon , or chopped bacon
bunch chives , snipped
1 tbsp walnut oil or hazelnut oil
2 tbsp sunflower oil , groundnut oil or corn oil
3 tbsp Dijon mustard
5 tsp white wine vinegar
200ml single cream

Steps:

  • For the dressing put the oils, mustard and vinegar into a bowl with ¼ tsp each salt and pepper and whisk hard for 3 mins. Add cream and stir in. Keep at room temperature until ready to serve.
  • Boil potatoes for 12-15 mins until tender, drain, then when cool enough to handle, halve. Meanwhile, fry lardons with lots of black pepper until golden. Mix together the potatoes, lardons and chives. Pour over the dressing and mix again.

1 1/2 cups mayonnaise
1/2 cup coarse grain mustard or 1/2 cup mustard, your favorite
1/4 cup cider vinegar
3 garlic cloves, minced
salt and pepper, to taste
1 lb bacon
5 lbs white potatoes, peeled if desired, cut into 3/4 inch pieces
4 stalks celery, sliced thin
6 green onions, sliced thin
1 1/2 cups red onions, chopped
9 hard-boiled eggs, peeled and chopped

Steps:

  • Whisk mayonnaise, mustard, vinegar and garlic in medium bowl to blend.
  • Season to taste with salt and pepper.
  • Cover, chill.
  • Cook bacon in large skillet until crisp.
  • Drain on paper towels.
  • Crumble.
  • Boil potatoes in large pot until just tender.
  • Drain and transfer to a large bowl.
  • Cool for 15 minutes or so.
  • Mix bacon, celery, green and red onions, eggs and dressing into potatoes.
  • Season with additional salt and pepper if needed.
  • Chill.
  • Note: I usually hold back about ¾ cup of the dressing to toss with salad just before serving.
  • While chilling the potatoes soak up a good bit of the dressing and if not careful it can become dry. If this happens just moisten with a small amount of milk and stir to encorporate.
