GARLIC MASHED POTATOES WITH ROASTED GARLIC CHEDDAR AND BACON



Garlic Mashed Potatoes with Roasted Garlic Cheddar and Bacon image

Mashed potatoes with Cheddar and cream cheese, sour cream, and bacon make a rich, delicious side dish.

5 pounds russet potatoes
10 slices Dietz & Watson Gourmet Smoked Bacon
1 (8 ounce) package cream cheese, room temperature
½ cup unsalted butter, melted
1 cup sour cream
¼ cup minced chives
2 ½ cups Dietz & Watson Roasted Garlic Cheddar Cheese, grated
2 teaspoons kosher salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Peel potatoes, and cut into 1 inch chunks. Place in a large saucepan, (remove comma) and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until tender, about 20 minutes. Drain potatoes, return to pan, cover, and set aside.
  • Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, and crumble into pieces.
  • Using a fork, mash the potatoes in pan until light and fluffy. Add the cream cheese, butter, and sour cream, and stir until combined and smooth. Add the chives, 2 cups cheddar cheese, half the bacon, salt, and pepper. Stir until well combined.
  • Transfer to a buttered 3 quart baking dish. Top with remaining 1/2 cup cheddar cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.

2 1/2 pounds russet potatoes, peeled and cubed
1/2 cup (1 stick) unsalted butter
1 cup warm milk
1/2 teaspoon garlic salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dry ranch dressing seasoning
1 1/2 cups shredded cheddar cheese, divided
2 cups cooked, crumbled bacon pieces

Steps:

  • Boil cubed potatoes for 10 to 15 minutes, or until fork tender. Drain and place into bowl of stand mixer. Add butter, milk, garlic salt, pepper, ranch seasoning and 1/2 cup shredded cheese. Mix until just combined. Transfer potatoes to large Dutch oven or pot over medium heat. Top with remaining shredded cheese and close lid for 3 to 5 minutes to melt cheese. Remove lid and serve with crumbled bacon on top. Serves 8

  • Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Cheddar, Bacon, and Onion Mashed Potatoes image

2 slice bacon or turkey bacon
4 medium russet or baking potatoes,(about 1 1/2lb), peeled, cut into quarters
1/2 tsp salt
1/8 tsp pepper
1/2 c milk,heated
2 Tbsp chopped green onions
2 oz shredded cheddar cheese

Steps:

  • 1. Cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside.
  • 2. Place potatoes in medium saucepan; add enough water to cover. Bring to a boil. Reduce heat to medium low; cover loosely and boil gently for 15 to 20 minutes or until potatoes break apart easily when pierced with fork. Drain well.
  • 3. Mash potatoes until no lumps remain. Add salt,pepper and milk; continue mashing until potatoes are smooth. Spoon potatoes into medium bowl. Top with green onions,cheese and crumbled bacon.
