ASIAN SESAME DRESSING

A fantastic standby dressing to have on hand because it keeps for 3 weeks! Use this Asian dressing for leafy green salads, Asian slaws, noodle salads and chopped salads. It's also a terrific dressing to make steamed vegetables so much tastier. Finish with a sprinkle of fresh sesame seeds and sliced greens onions!

1/4 cup soy sauce
2 tbsp toasted sesame oil
1/4 cup white vinegar ((adjust to taste for sharpness))
1/4 cup olive oil ((Note 1))
1 tbsp sugar ((any type) or 1 1/2 tbsp honey)
1 tbsp soy sauce
2 tsp toasted sesame oil
1 tbsp white vinegar
1 tbsp olive oil ((Note 1))
1 tsp sugar ((any type) or 1 1/2 tsp honey)

Steps:

  • Place ingredients in a jar and shake well until sugar is dissolved. Adjust saltiness with salt and sweetness with sugar to taste.
  • Keep for up to 3 weeks, in the fridge (to be safe). Bring to room temp and shake well before use.
  • Single serving batch is enough for 3 - 4 cups of shredded cabbage / leafy greens i.e. a side salad for 4 people.
  • Big batch - my rule of thumb for how much dressing to use is generally 1 tbsp of dressing per 1 packed cup of shredded vegetables and 2 tsp per handful of leafy greens.

SOY SIMMERED COLLARD GREENS



Soy Simmered Collard Greens image

3 bunches collard greens
1 tablespoon olive oil
1/2 onion, thinly sliced
2 cups low-sodium chicken broth
2 tablespoons soy sauce
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 tablespoon apple cider vinegar
Hot pepper vinegar, for serving, optional

Steps:

  • Remove the white ribs from the centers of the collard leaves. Stack the leaves on top of each other and slice into 1-inch pieces. Thoroughly wash the greens (I soak them and continue to change the water until no dirt or sand remains). Set aside.
  • Heat the olive oil in a Dutch oven over medium heat. Add the onions and cook until translucent, about 5 minutes. Pour in the broth and use a wooden spoon to scrape up any brown bits. Stir in the soy sauce, pepper, garlic powder and salt. Bring to a low boil. Add the greens and reduce the heat to a very low simmer. Cover and cook, stirring occasionally, for 30 minutes. Stir in the cider vinegar and simmer an additional 15 minutes.
  • Serve with hot pepper vinegar if desired.

4 tablespoons soy sauce (I use low sodium)
1 1/2 tablespoons sesame oil
2 teaspoons toasted sesame seeds
2 tablespoons apple cider vinegar
2 teaspoons garlic, minced
4 cups mixed baby greens
1/2 cup canned corn
1 small shallot, finely chopped
1/4 cup crisp chow mein noodles
1 small carrot, shredded finely

Steps:

  • Dressing:
  • Combine all ingredients for dressing in small bowl and whisk well.
  • Salad:.
  • Combine mixed baby geens, corn, shallot, chow mein noodles and carrot in large bowl.
  • Pour dressing over salad and toss well.
  • Season with freshly ground black pepper, to taste.
