1 ½ cups white sugar
3 eggs
¾ cup vegetable oil
2 (4 ounce) jars plum baby food
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon ground cloves
1 cup chopped walnuts
¼ cup applesauce

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch Bundt pan.
  • Sift together the flour, baking powder, cinnamon, cloves and salt. Set aside.
  • In a large bowl, combine sugar, eggs, and oil. Beat until smooth. Mix in baby food and nuts. Beat in flour mixture alternately with applesauce. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 45 minutes. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

A co-worker always brought this cake for birthdays. It is very simple, quick to make and VERY moist. Use any flavor cake mix with pudding in the mix.

1 (18.25 ounce) package moist yellow cake mix
½ cup white sugar
1 cup vegetable oil
4 eggs
1 (4 ounce) jar apricot baby food
1 (4 ounce) jar plum baby food
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (175 degrees C). Grease and flour one 9 or 10 inch Bundt pan.
  • Combine the cake mix, sugar, vegetable oil, eggs, apricot baby food and plum baby food. Mix for 2 minutes. Stir in walnuts and pour batter into the prepared pan.
  • Bake at 375 degrees F (190 degrees C) for 1 hour. Wonderful with a light dusting of confectioner's sugar or with an almond frosting.

1 cup canola oil
4 eggs
2 (4 ounce) jars carrots, baby food
1/2 teaspoon salt

2 teaspoons cinnamon
2 teaspoons vanilla
1 (8 ounce) package cream cheese
1 (16 ounce) box powdered sugar
1 teaspoon vanilla

Steps:

  • Cake method: Preheat oven to 350ºF.
  • Grease and flour a 9x13 baking pan.
  • Place first 9 ingredients (through 2 teaspoons vanilla) in a large mixing bowl.
  • Beat with electric beaters or mixer paddle for 2 minutes on medium speed.
  • Pour the batter into the prepared pan.
  • Bake in 350ºF oven for 30 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool completely; prepare icing in the meantime.

1 (4 ounce) jar peach baby food
3 ounces cream cheese
3/8 cup butter
1 tablespoon milk
1 teaspoon vanilla

  • Mix all the ingredients together well.

2 c sifted self-rising flour
2 c granulated sugar
1 c vegetable oil
1 tsp vanilla extract
3 eggs
2 jar(s) baby food plums
1 tsp cinnamon
1 tsp ground cloves

1 c sifted confectioners' sugar
enough lemon juice to make a "drizzle"

Steps:

  • 1. Sift together flour, sugar, cinnamon, and cloves.
  • 2. Add oil, vanilla, eggs, and plums. Beat until thoroughly mixed.
  • 3. Pour batter into a greased Bundt pan. Bake at 350 for 45 minutes.
  • 4. Icing: Mix the sifted confectioners' sugar and lemon. Just make a little more if this isn't enough icing to give as much flavor as you'd like.
  • 5. SANDY'S NOTE": I've had a hard time finding baby food plums lately. Apples and Blueberries will probably work just as well. Just anything with a purple color, but I don't know how well prunes will do.

Steps:

  • Cake: Preheat oven to 350 degrees.
  • In a large mixing bowl, combine dry ingredients and mix well.
  • Add oil, eggs and baby food and mix on low speed until well combined.

  • Pour into 2- 9 inch greased and floured pans.
  • Bake for about 35 minutes or until center tests done.
  • Cool for 15 minutes on wire rack and then remove from pans.

  • Frost cakes and sprinkle top with additional chopped walnuts and coconut, if desired.

1 tsp baking powder
1 c vegetable oil
2 tsp cinnamon, ground
2 tsp baking soda
1/2 tsp salt
1 1/2 c sugar
2 c flour (mum always used all purpose)
2 jar(s) junior size baby food carrots (or 1 small jar of each carrots, applesauce & apricots as a variant)
1 1/2 tsp pure vanilla extract (or imitation)
2 Tbsp fresh grated carrot (optional if you like a little texture in your cake)

Steps:

  • 1. Mix eggs, sugar and oil together. Sift together and add dry ingredients to wet mix, then vanilla. Fold in carrots.
  • 2. Bake in preheated 350° oven in a lightly greased and floured 9 x 13 pan for 40 to 45 minutes.

1 c cooking oil (i use corn)
4 large eggs
8 oz junior baby food carrots
1/2 tsp salt
2 tsp baking soda
2 tsp ground cinnamon
1 tsp ground allspice
1 tsp vanilla extract
1 c finely chopped pecans
BUTTER CREAM FROSTING MIX
4 oz softened cream cheese
4 oz softened butter
16 oz confectioners sugar
1 tsp vanilla extract

Steps:

  • 1. Grease and flour two 9" cake pans and set aside Turn oven to 350º to preheat
  • 2. Sift flour, salt, baking soda and spices into mixing bowl Pour pecans into flour mixture and blend to cover pecans Set aside
  • 3. In large mixing bowl, place sugar, oil and eggs Beat at medium high speed with electric mixer until light and fluffy Add in carrots and continue to beat until thoroughly mixed
  • 4. Add flour mixture 1/3 at a time as you continue to beat. Continue adding flour mixture until all is transferred to oil/sugar/egg/carrot mixture Beat until batter is smooth and of custard consistency Transfer into cake pans equally
  • 5. Place pans in preheated oven and bake 30-35 minutes until toothpick inserted in middle comes out clean. Turn out on cooling rack When cake is completely cool, ice with frosting below
  • 6. PREPARING BUTTER CREAM FROSTING: Place cream cheese and softened butter in mixing bowl and mix with electric mixer Sift confectioners sugar into butter/cream cheese mixture until well blended Add vanilla and blend in well Do not over mix or butter/cheese mixture will separate. ENJOY!

1 tsp salt
1 1/2 tsp double-acting baking powder
2 1/4 c all-purpose flour
3 medium eggs
1/4 c clover honey
1/2 c light brown sugar
3/4 c granulated sugar
3/4 c unsalted butter, softened
2 tsp ground cinnamon
1 (4-ounce) jar pumpkins with pears baby food
2 (4-ounce) jars applesauce and apricots baby food

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2. In a small mixing bowl add the baking soda, salt, baking powder and flour. Mix thoroughly with a fork and set aside. In a large mixing bowl add the eggs, honey, both sugars and butter. Mix until smooth using a hand mixer. Add the cinnamon and baby food. Mix until smooth. Slowly add the flour mixture using a sifter and fold in until ingredients are evenly mixed.
  • 3. Place 24 mini baking cups (2-inch, nonfoil) into each hole of the mini muffin pan. Place a 1-gallon resealable freezer bag into a bowl (for support) and pour the cupcake batter into the bag. Seal the bag and cut the tip off 1 of the bottom corners of the bag. Squeeze the batter into each baking cup, filling them only 3/4 of the way full. 1 cup oil
2 cups sugar
3 eggs
1 (4 3/4 ounce) jar baby plums
1 (4 3/4 ounce) jar baby apricots
2 cups flour
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup pecans, chopped

Steps:

  • Mix all but pecans.
  • when well mixed fold in pecans.
  • and pour into greased and sugared bundt pan.
  • Bake at 350 for 1 hour.
