Chili is always a little bit of experimentation, a whole lot of flavor, and one of my absolute favorite dishes. There is always a little give and take but here is my honed recipe with the (staple) list of ingredients. Serve in a bowl on a cold night or even spread over white or brown rice sometimes. Always sprinkle generously with Cheddar cheese and crumbled tortilla chips and maybe a dollop of sour cream and enjoy!

2 tablespoons olive oil, divided
2 pounds lean ground beef
1 onion, chopped
2 tablespoons chopped garlic
salt and ground black pepper to taste
2 (15 ounce) cans pinto beans
2 (15 ounce) cans ranch-style beans
2 (15 ounce) cans white kidney beans (cannellini)
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can Mexican-style stewed tomatoes
1 (7.75 ounce) can Mexican-style hot tomato sauce (such as El Pato®)
1 green bell pepper, chopped
2 stalks celery, chopped
3 tablespoons chili powder
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 tablespoon garlic powder
1 tablespoon ground cumin
1 tablespoon dried parsley
1 tablespoon dried basil
1 tablespoon brown sugar
½ cup red wine

Steps:

  • Heat 1 tablespoon olive oil large skillet over medium-high heat; cook and stir beef, onion, and garlic in the hot oil until browned and crumbly, about 10 minutes; drain and discard grease. Season beef mixture with salt and pepper.
  • Mix ground beef mixture, remaining 1 tablespoon olive oil, pinto beans, ranch-style beans, white kidney beans, tomato sauce, Mexican-style stewed tomatoes, Mexican-style hot tomato sauce, green bell pepper, celery, chili powder, Worcestershire sauce, balsamic vinegar, garlic powder, cumin, parsley, basil, and brown sugar together in a slow cooker.
  • Cook on High for 4 hours; stir in red wine and continue cooking for 2 more hours. (Cook on Low for 8 hours.)

18 jumbo pasta shells, cooked al dente
1 (16 ounce) jar Ragú® Pasta Sauce, alfredo sauce, divided
3/4 lb cooked shrimp, peeled, deveined and roughly chopped
8 ounces lump crabmeat
1 egg
6 slices bacon, cooked crisp and crumbled
2 tablespoons diced red bell peppers
2 green onions, thinly sliced
4 ounces chive & onion cream cheese, softened
1/2 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese, divided
1/3 cup panko breadcrumbs
2 tablespoons butter, melted

Steps:

  • Heat oven to 350 degrees F. Spoon 2 tablespoons of the Alfredo sauce into an 8"X11" glass baking dish and spread evenly on bottom. Set aside.
  • In a large bowl, combine the shrimp, crabmeat, egg, bacon, red bell pepper, green onion, cream cheese, mozzarella, all but 2 tablespoons of the grated Parmesan and 1 tablespoon Alfredo sauce. Mix well with hands.
  • Carefully stuff each shell with about 2-3 tablespoons crab mixture, mounding slightly and packing into pasta shell. Place each in prepared baking dish.
  • Spoon remaining Alfredo sauce evenly over stuffed shells.
  • In a small bowl, combine the breadcrumbs, butter and remaining Parmesan. Mix well. Sprinkle evenly over stuffed shells.
  • Place in oven and bake for 30-35 minutes or until hot and bubbly and breadcrumbs are golden brown.

1 onion, chopped
1 (16 ounce) can black beans
1 (16 ounce) can pinto beans or 1 (16 ounce) can kidney beans
1 (8 ounce) can tomato sauce
10 ounces frozen corn kernels
2 (14 1/2 ounce) cans diced Rotel Tomatoes
1 (1 1/4 ounce) packet taco seasoning
1 tablespoon cumin
1 tablespoon dried chipotle powder or 1 tablespoon mild chili powder
1 1/2 lbs boneless skinless chicken breasts
1 small jalapeno pepper, chopped (optional)
1/4 cup chopped fresh cilantro

Steps:

  • Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for approximately 8 hours or on high for 6 hours. Check towards end time so as not to overcook.
  • Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir. Top with fresh cilantro.

1 lb extra lean ground beef or 1 lb ground turkey breast
1 large onion, chopped
2 garlic cloves, finely chopped
2 (15 ounce) cans red kidney beans, drained and rinsed
1 (26 ounce) jar pasta sauce
2 tablespoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
grated cheddar cheese (to garnish)

Steps:

  • Brown meat, onion, and garlic in a large skillet.
  • Stir in remaining ingredients. Simmer uncovered for 20 minutes, stirring occasionally.
  • If desired, sprinkle with grated cheese before serving.

1 head cauliflower
4 tablespoons olive oil, divided
1 (16 ounce) jar Ragú® Pasta Sauce, roasted garlic parmesan cheese, divided
3/4 cup uncooked polenta (cornmeal)
1 3/4 cups water (plus more if needed)
1 tablespoon butter
1 lb shrimp, extra large, peeled, deveined
10 ounces cherry tomatoes
3 garlic cloves, minced
2 cups baby arugula, packed
2 tablespoons pine nuts, toasted

Steps:

  • Preheat oven to 425°F Cut 1 head cauliflower into florets and spread in one layer on a large rimmed baking sheet. Drizzle with 2 TBSPs of olive oil and season with salt and pepper. Roast for 20-25 minutes, or until cauliflower is tender and golden brown.
  • Transfer cauliflower to food processor and add butter. Process, scraping sides of processor as needed, until cauliflower has the texture of smooth grits or polenta. Add about ½ jar of the Ragu Roasted Garlic Parmesan Sauce and pulse to combine. Add additional salt and pepper to taste. Set aside.
  • While the cauliflower is roasting, make the polenta. Bring the water to a boil in a medium saucepan over medium high heat. Add the butter. While whisking gently, pour the polenta into the boiling water in a steady stream. Turn down the heat to low and continue whisking until the polenta has thickened enough that it doesn't settle back on the bottom of the pan when you stop stirring. Add additional water if polenta gets too thick. Cook polenta for 5-7 minutes over medium heat, stirring occasionally, making sure polenta doesn't get too thick, adding small amounts of water, if necessary.
  • Add the remaining Ragu Roasted Garlic Parmesan Sauce and the prepared cauliflower to the cooked polenta and stir well. Cover and keep warm.
  • Next, roast the shrimp and tomatoes. Spread the shrimp on a rimmed baking sheet. Add the tomatoes and the garlic to the baking sheet and drizzle 2 TBSPs of olive oil over all. Season with salt and pepper and toss so that the shrimp and tomatoes are coated with the oil and garlic. Roast at 425 degrees F for 7-8 minutes, or until shrimp is cooked through and tomatoes are bursting and starting to char. Remove the shrimp and tomatoes from the oven and add the arugula to the pan. Using tongs, toss the arugula with the hot shrimp and tomatoes so that it wilts slightly.
  • To serve, spoon some polenta onto a plate or into a shallow bowl. Top with the shrimp and tomato mixture. Sprinkle with pine nuts and serve.

1 (26 ounce) jar Ragú® Pasta Sauce, chunky sundried tomato and sweet basil flavor
1 (15 ounce) can chickpeas
8 large eggs
1 teaspoon extra virgin olive oil
2 tablespoons pine nuts
3 tablespoons crumbled feta cheese
1 loaf crusty bread (optional)

Steps:

  • Pour jar of Ragu tomato sauce on a 11" skillet.
  • Heat on medium for 5-7 minutes.
  • Add rinsed and drained chickpeas and distribute them evenly through the sauce and skillet.
  • Make a well for each egg on the tomato sauce and crack eggs inside.
  • Cover the pan and cook over medium heat until the whites are set and the yolks have the consistency of your preference (runny or cooked all the way). About 7-10 minutes.
  • While the eggs are cooking, heat 1 olive oil in a small separate skillet add pine nuts and cook at medium heat for 3-5 minutes until golden brown. Watch pine nuts carefully as they can easily burn.
  • Before serving top tomato sauce and eggs with crumbled feta cheese and pine nuts. Serve warm and enjoy with crusty bread.

8 ounces mild Italian sausage, casings removed
1 (24 ounce) Ragu tomato sauce, Old World Style Traditional, divided
1 (15 1/2 ounce) can black beans, drained and rinsed
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
4 avocados, peeled, pitted and mashed
2 spring onions, sliced
3/4 cup cilantro, chopped, divided
2 jalapeno peppers, seeded and minced

Steps:

  • Cut each tortilla into 6 wedges. Spray cookie sheets with no-stick cooking spray. Add tortilla wedges in a single layer. Spray tops of tortilla wedges with no-stick cooking spray. Sprinkle with 1/4 teaspoon freshly ground sea salt. Bake in a preheated 350 degree oven for 15 minutes, or until crisp.
  • In a 9-inch skillet over medium heat, cook and stir Italian sausage until browned. Drain off any fat. Measure out 1/2 cup Ragu sauce and set aside. Add remaining Ragu sauce, black beans, chili powder, cumin, garlic powder, onion powder and crushed red pepper. Cook and stir over medium heat until mixture begins to boil. Set aside.
  • In a medium bowl, combine mashed avocados, remaining 1/2 cup Ragu sauce, spring onions, 1/2 cup cilantro, jalapeno peppers, minced garlic, lime juice, remaining salt, black pepper and pine nuts.
  • To serve, place one cup arugula on each of 4 serving plates. Spoon on sausage, Ragu and black bean mixture. Top each with avocado mixture. Spoon onto each 1 tablespoon sour cream followed by the cheddar cheese and remaining 1/4 cup cilantro. Serve with the crispy tortilla triangles.

  • then add stewed tomatoes.
  • then add ground sausage (that has been drained of grease).
  • then add onions.
  • then add garlic.
  • then add black beans.
  • then add green peppers.
  • then add pasta.
  • then add water.
  • then add chili seasoning packet.
  • then mix together.
  • medium heat for 1 hr and 30 minute.
  • when finished cooking serve in bowl topped with feta cheese.
  • enjoy.
