A healthier version of a BLT, this easy vegan ALT (Avocado, Lettuce, and Tomato) Wrap has layers of lettuce, tomato, and avocado wrapped in a gluten free tortilla. Jalapeño Cilantro Hummus adds some kick. Perfect for lunch or a quick weeknight meal!

1 gluten free tortilla (- I used spinach amaranth)
1/4 cup Jalapeño Cilantro Hummus (or your favorite hummus)
2 slices tomato
1/4 of an avocado (sliced)
2 pieces of Romaine lettuce

Steps:

  • Heat tortilla over gas stovetop or in a pan without oil if you have an electric range. Be careful not to burn it. This makes the tortilla more pliable.
  • Spread hummus on tortilla. Top with lettuce, tomato, and avocado. Fold over sides of tortilla and roll away from you making a tight burrito. If you fill the tortilla with too much, it will be harder to roll.

You can smell the bacon from the outside the house. Fall is approaching and the wind has picked up a little bit, and a nice breeze is blowing from the south, which in turn transfers the aroma of fresh bacon right out the window and into your nose. Dennis was wondering what was going on, after all, it was the middle of a fall afternoon. The door creaks open, Dennis slips off his boots, hangs up his hat on the pegged hanger, and rushes into the kitchen. I turned around to greet him with a smile, and laughing at his questioning look, I tilt my head and say, "It's bacon Dennis!" "I know, I know...." tests Dennis with a small voice. Dennis loves bacon. He will eat a couple of pieces a day, that would be, if I let him. I decided I would at least bring some healthfulness to him, and something tasty at the same time. One piece of bacon, wrapped in a tortilla, (or pita for that matter) with an abundance of lettuce, tomato, and special spritely green onion with a spot of cheese dotted on the top would be the answer to his dream.

2 slices cooked bacon or 2 slices optional vegetarian bacon
1 medium tomatoes, sliced
1 green onion, sliced
1 tablespoon monterey jack cheese (or any your prefer) or 1 tablespoon brie cheese (or any your prefer)
1 teaspoon sour cream (mayonnaise could be subed as well.)
nice crispy lettuce (2 leaves)
1 dash salt
1 dash pepper
avocado, sliced (optional)
1 dash Tabasco sauce (optional)

Steps:

  • Cook bacon your preferred method. Could be in microwave, iron skillet, or baked.
  • Warm tortilla's or pita in microwave for 10 seconds, or in oven wrapped in foil for 10 minutes at 350degrees.
  • As tortilla's (or pitas) are warmed, spread sour cream, or mayonnaise thinly on inner part.
  • Add cheese lightly.
  • Add lettuce, tomato, bacon (blotted from excess grease), green onion, and avocado (if using) nicely and roll carefully.
  • Add salt and pepper, and devour at one end.
  • Make sure your shoes are off, and you have a candle lit. It makes this extra special.
  • Try it and see.

2 slices bacon
⅓ cup shredded rotisserie chicken
coarse salt and ground black pepper to taste
1 avocado
1 tablespoon lemon juice
1 clove garlic, minced
1 tomato, chopped
1 onion, chopped
2 lettuce leaves, or as needed

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet.
  • Add chicken to skillet and stir to coat with bacon drippings. Season with salt and pepper.
  • Mash avocado in a bowl and season with lemon juice, garlic, salt, and pepper. Add tomato and onion to taste.
  • Divide cooked bacon, chicken, and avocado spread between lettuce leaves and wrap up.

2 chicken leg quarters, skin removed
1 tablespoon canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1/3 cup chopped onion
1/2 teaspoon ground cumin
1/8 teaspoon salt
Dash cayenne pepper
1/2 medium ripe avocado
2 tablespoons lime juice
4 whole wheat tortillas (8 inches), warmed
Fresh cilantro leaves, optional

Steps:

  • In a large skillet, brown chicken in oil. Stir in the tomatoes, onion, cumin, salt and cayenne. Bring to a boil. Reduce heat to low; cover and cook for 25-30 minutes or until a thermometer inserted in chicken reads 180°, stirring occasionally., Remove chicken. When cool enough to handle, remove meat from bones; discard bones. Shred meat with 2 forks; return to skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until sauce is thickened., Peel and slice avocado; drizzle with lime juice. Spoon 1/2 cup chicken mixture over each tortilla. Top with avocado and, if desired, cilantro; roll up.
