Avocado Salad With Herbs and Capers image

This salad is both dead simple to make and highly luscious. It gets a velvety richness from the avocados. The salad is enlivened by a splash of red wine vinegar in the dressing and a handful of briny capers sprinkled on top. The herbs here are used in two ways, both chopped into a garlicky salsa verde-like dressing, and strewn in whole leaves across the plate. Choose your avocados carefully for this; look for firm but not rock-hard fruit, without any mushy spots. If you'd like to substitute another variety of avocado for the Haas you can, but the salad may not have the same texture. Then serve it either as a side dish or an appetizer with a meal of roasted or grilled meats, chicken or fish. Or make it the foundation of a light lunch, with some crusty bread and tangy cheese on the side.

1 large bunch cilantro
1 large bunch parsley
2 scallions, very finely chopped
1 jalapeño, seeded and very finely chopped
1 to 2 garlic cloves, finely grated or minced
1/2 teaspoon fine sea salt, more to taste
2 tablespoons red wine vinegar, more to taste
1/2 cup extra-virgin olive oil, more for serving
4 Haas avocados, peeled, pitted and sliced
4 teaspoons capers, drained
Flaky sea salt and black pepper

Steps:

  • Reserve a cup of whole cilantro leaves; finely chop the rest of the leaves and tender stems. Transfer chopped leaves to a medium bowl.
  • Reserve a cup of whole parsley leaves; finely chop the rest of the leaves and tender stems. Transfer chopped parsley to the bowl with the cilantro. Add scallions, jalapeño, garlic, fine salt and vinegar. Stir in oil. Taste and add more salt, vinegar or both, if needed.
  • Scatter the whole cilantro and parsley leaves over 4 serving plates. Fan the avocados out on top, and sprinkle lightly with fine salt to taste. Spoon the herb dressing over the avocado, making sure to include the oil in the bowl, and top with capers. Sprinkle with flaky sea salt and black pepper and serve.

2 semi-ripe avocados
2 tablespoons torn fresh flat-leaf parsley leaves
1 mini cucumber, sliced
1/2 small red onion, thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1/4 teaspoon ground cumin
1 lime, juiced (about 2 tablespoons)

Steps:

  • For the salad: Peel the avocados, cut into 1-inch chunks and put all but 2 chunks into a large mixing bowl for the salad. Put the remaining 2 chunks into a small mixing bowl and set aside for the dressing.
  • Add the parsley, cucumber and onion to the avocado chunks in the large mixing bowl. Sprinkle generously with salt and pepper.
  • For the dressing: Mash the reserved 2 chunks of avocado with a fork until smooth. Add the oil, honey, cumin and lime juice and whisk until smooth.
  • Pour the dressing over the avocado salad and gently toss with your hands to combine. Serve immediately.

16 oz. grape tomatoes*
1/2 small red onion,** (sliced into small pieces)
2 medium avocados ((firm but ripe), sliced into bite size pieces)
1 1/2 Tbsp fresh lemon juice***
1 1/2 Tbsp red wine vinegar
3 1/2 Tbsp extra virgin olive oil
1 tsp honey
1 1/2 tsp minced garlic
1/4 cup chopped cilantro

2 ripe avocados, pitted and flesh roughly diced
1 red onion, finely diced
1/2 cup diced English cucumber
8 (16/20 count) cooked shrimp (peeled and deveined and cut lengthwise in half)
1/2 cup jumbo lump crabmeat
Salt and freshly ground black pepper
1/2 cup plain yogurt
1/4 cup tomato ketchup
1 lemon, juiced
1 teaspoon hot sauce (recommend: Tabasco)
2 tomatoes, thinly sliced
1/4 cup freshly chopped chives

Steps:

  • In a large bowl mix together the diced avocado, onions, cucumber, shrimp, and crabmeat and season with salt and pepper, to taste. In another bowl or a kitchen blender mix together the yogurt, ketchup, and lemon juice. When mixed thoroughly, slowly add the hot sauce, (not too much as it will over power the seafood).
  • To finish the dish, slowly add the dressing to the avocado mixture until slightly wet. Place 3 to 4 slices of tomato in the center of each serving plate, slightly separate just so the tomatoes touch.
  • Fill an ice cream scoop with the salad and place in the center of the tomatoes. Garnish with chopped chives and serve.

Crunchy cucumbers and creamy avocados are the stars of this simple five-ingredient salad. Peeling the cucumbers in alternating stripes helps them soak up seasonings while maintaining their shape. After being cut into bite-size pieces, they are combined with salt to draw out moisture, concentrating their flavor. Cubed avocado is tossed with lemon juice or vinegar to prevent browning, then everything is stirred together vigorously so that the avocado breaks down a bit to add a glossy coating. Finish with a hit of red-pepper flakes for heat, or embellish with herbs, lettuces, beans, soft-boiled eggs, feta, nuts and so on.

2 scallions, trimmed then sliced crosswise 1/4-inch-thick
Ice
1 pound cucumbers (such as 6 Persian or mini seedless, or 1 English)
Kosher salt
2 very ripe avocados
2 tablespoons fresh lemon or lime juice, or unseasoned rice vinegar, plus more as needed
Red-pepper flakes or hot sauce, for serving

Steps:

  • Transfer the scallions to a small bowl of ice water to crisp.
  • Peel the cucumbers in alternating stripes, trim ends and cut cucumbers lengthwise. Scoop out the seeds, if desired. Cut cucumbers into bite-size pieces (thin slices, 1/2-inch cubes, or smashed into irregular shapes), then transfer to a colander set in the sink. Toss with 1 teaspoon salt and set aside to drain, at least 5 minutes or up to 15.
  • When you're ready to eat, halve the avocados and remove the pits. Using a spoon, remove the flesh from the skins, then cut the flesh into 1/2-inch cubes. Transfer to a large bowl, add the lemon juice and season with salt. Stir to combine.
  • Shake the cucumbers in the colander to get rid of any excess moisture, then transfer to the bowl with the avocado. Drain and shake the scallions in the colander. Add the scallions to the bowl.
  • Stir the salad ingredients vigorously just until the avocado breaks down a bit. The cucumbers should be glossed with avocado but the majority of the avocado pieces should still remain cubed. Season to taste with salt, lemon and red-pepper flakes or hot sauce.
