This is a great brunch or lunch sandwich. It would also be great on lightly toasted French bread. You can leave off the brie and it's still wonderful and refreshing.

2 bagels, halved and lightly toasted
butter or margarine, to spread on bagel
2 -4 slices brie cheese, a few thin slices, depending on size of cheese
4 slices sweet onions, 4 thin slices
1 Hass avocado (the one with the brown skin)
1 small lime
salt and pepper

Steps:

  • Spread butter or margarine on bagel halves.
  • Put thin slices of brie on that.
  • Layer 1 slice of onion on the brie.
  • Put a layer of sliced avocado on the onion.
  • Squeeze some lime juice on the avocado.
  • Sprinkle salt and pepper on top.
  • Eat open faced.

1 medium ripe avocado, peeled and cubed
1/4 teaspoon kosher salt
1/8 teaspoon pepper
1/4 teaspoon crushed red pepper flakes, optional
1 whole grain bagel, split
1 tablespoon unsalted butter, softened
2 small eggs
Optional: Minced fresh cilantro, parsley or chives

Steps:

  • In a small bowl, mash avocado; stir in salt, pepper and, if desired, pepper flakes. , Using a paring knife or round cutter, enlarge center hole to at least 1-1/2-in. in width. Spread butter on cut side of bagel. Place bagel, butter sides down, in a skillet over medium heat. Cook until golden brown, 1-2 minutes; remove to plate. Spread avocado mixture over browned sides, building up outside edge slightly., Return bagel to skillet, avocado sides up. Crack egg into center hole. Cook, covered, over medium heat until egg is cooked to desired degree of doneness. Transfer to serving plate; garnish as desired.

Number Of Ingredients 8

1 small ripe avocado, preferably Hass (see Note)
1 teaspoon fresh lemon juice, or to taste
Salt and freshly ground black pepper
2 bagels
2 slices or 4 thin strips of lox, or smoked salmon
2 thin slices of red onion
4 thin slices of tomato
1 teaspoon capers, rinsed (optional)

Steps:

  • A short time before serving, mash avocado and add lemon juice. Season with pepper and only a bit of salt, as there will be enough in the lox. Split bagels and spread each half with avocado. Top with lox. Put onion, tomato, and capers (if using) on bottom half, then set top half of sandwich in place. Serve at once.
