AUSSIE BURGERS WITH THE LOT



Aussie burgers with the lot image

Stack your grilled beefburgers with cheese, bacon, pineapple, beetroot, tomato and lettuce - the Australian way

Number Of Ingredients 15

1 ½kg minced beef , not lean
2 red onions , finely chopped
5 garlic cloves , crushed
large handful of parsley , chopped
75ml tomato ketchup
50ml oyster sauce
2 egg yolks
6 smoked back bacon rashers
6 slices fresh pineapple
6 slices good melting cheese , such as cheddar
6 burger baps , split in half
2 tbsp mayonnaise
12 slices pickled beetroot
2 large tomatoes , sliced
1 Cos lettuce , separated into leaves

Steps:

  • To make the burgers, mix together all the ingredients and knead well so everything is thoroughly mixed. Separate the mix into 6, roll each into a large ball, then shape into burgers (see photos, right). Put them in the fridge and, if possible, leave to chill for at least 1 hr. They can be made up to 2 days ahead.
  • To cook the burgers, get the barbecue good and hot with the coals glowing. You don't need to add any oil to the burgers. Put them on the barbecue and leave for a few mins until the edges start to colour, then slide a fish slice under the burgers and turn over. Repeat the process, then turn again. Remove to the cooler side of the barbecue and leave to cook for a good 15 mins if you like them well cooked.
  • While the burgers are cooking, BBQ the bacon and pineapple. Top the burgers with the bacon, then add the cheese and put back on the barbecue to melt. Warm the baps over the barbecue, too, if you like.
  • Divide the mayo between the bap bases and top with the burgers. Add the pineapple, beetroot, tomato and lettuce, then put the lids on top.

1 small yellow onion
coarse salt and ground pepper
1 1/2 pounds ground beef chuck (80% lean)
4 plain or sesame-seed buns, split
4 large eggs, cooked over easy
Ketchup or barbecue sauce
Sliced canned beets
Lettuce leaves

Steps:

  • Heat a grill to medium-high. Clean and lightly oil hot grill. Cut onion into thin rings and season with salt and pepper. Grill until lightly charred and crisp-tender, about 4 minutes per side. Transfer to a plate. Form ground beef into 4 patties and season with salt and pepper. Grill 4 minutes per side for medium. Transfer to bottom halves of buns. Top each burger with an egg, grilled onions, your choice of sauce, sliced beets, and lettuce.

500g lean minced steak
100g cooked beetroot
2 mini garlic and coriander naan bread
50g bag rocket
4 tbsp soured cream and chive dip

Steps:

  • Make the burgers: Tip the meat into a bowl and sprinkle over 1 tsp salt and a good grinding of black pepper.Work with wet hands to mix in the seasoning. Divide into four with your hands and shape into burgers. (It can be frozen at this stage.)
  • Sort out your ingredients: Slice the beetroot and split the naan breads.
  • Toast the naans: Heat a griddle pan or barbecue. Griddle the naans on both sides until lightly toasted and set aside. Add the burgers to the grill or barbecue and cook for 2-3 minutes, then turn and cook the other side for a further 2-3 minutes.
  • Assemble the dish: Set half a toasted naan on each serving plate and put a pile of rocket on each. Top with a burger, then a few slices of beetroot and a dollop of soured cream. Sprinkle with salt and freshly ground black pepper and serve immediately with a big green salad and chips. A glass of red wine wouldn't go amiss, either.

1 3/4 lbs ground lamb
1 shallot, peeled and chopped
1 tablespoon capers, chopped
6 -8 large basil leaves, julienned
1/4 teaspoon fresh ground pepper
1/2 cup cornmeal, for coating (or flour)
1 tablespoon vegetable oil, for cooking
3 tomatoes, diced
1 red onion, diced
1 teaspoon sugar
1 teaspoon balsamic vinegar
salt
pepper
1 teaspoon olive oil
4 kaiser rolls, split (or hamburger buns)
2 -3 tablespoons soft fresh goat cheese (or chevre)

Steps:

  • To make the burgers:.
  • Combine the ground lamb, shallot, capers, basil and pepper in a large bowl and mix well. Divide mixture into four burgers. Spread cornmeal(or flour) over a plate and press burgers into the mixture to coat. Preheata barbeque(or broiler) and brush with oil. Cook the burgers over a medium high heat for 6-7 minutes each side or until cooked as desired.
  • To make the relish:.
  • Place the tomatoes and onion into a preheated saute pan with the olive oil. Cook for 5 minutes. Add sugar, vinegar, salt and pepper. Remove from the heat and let cool. Grill the buns(or broil), cut side down, until lightly toasted. Spread with goat cheese and top with the burgers. Serve with the tomato relish. Enjoy!

2 -4 slices bacon (fried or microwaved until desired crispness.)

1 1/4 pounds ground dark meat chicken
1 tablespoon sambal oelek (Asian chili paste)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil, plus more for brushing on pineapples
4 pineapple rings, drained and patted dry
2 tablespoons unsalted butter
4 large eggs
4 Kaiser rolls, split
12 slices pickled beets, drained
4 lettuce leaves
4 tomato slices
Mayonnaise and ketchup, for serving

Steps:

  • 1. Preheat a grill with a medium-high heat fire.
  • 2. Gently mix together the chicken, sambal oelek, 11/2 teaspoons salt, and 3/4 teaspoon pepper in a large bowl. Form into 4 (4-inch) patties with an indentation in the center of each burger.
  • 3. Brush the grill grate with 1 tablespoon oil. Lay the burgers on the grill and cook until grill marks appear, 5 to 6 minutes. Flip the burgers and continue grilling until an instant-read thermometer inserted sideways registers 160 degrees F, about 5 minutes. Set burgers aside to rest.
  • 4. Lightly brush the pineapple rings with oil, then grill the rings turning once, until distinct grill marks appear, about 3 minutes per side.
  • 5. Meanwhile, heat a large heavy nonstick skillet on the grill or on the stovetop over medium-high heat. Melt the butter and fry the eggs, sunny-side up, 3 to 4 minutes.
  • 5. Tuck the burgers into the rolls, top with pineapple rings, beets, lettuce, tomato slices, and eggs. Serve.

An Australian beef burger that puts all the flavour in the burger and can be served with plain sides like bread and a little sauce. This is quite a mild tasting burger, if serving for people who enjoy hot foods add chili sauce and/or chopped chili.

1 large onion, finely diced
1 small carrot, finely diced
1/4 cup breadcrumbs
2 medium eggs
1 tablespoon garlic, crushed
1 tablespoon Worcestershire sauce

Steps:

  • Mix all ingredients very well in a bowl and place in refrigerator for an hour or so (optional).
  • Form into burgers the size and shape of your liking, keeping them rounder but fairly flat helps them cook throughout.
  • Cook on a BBQ or grill around 7 minutes per side or until done to your preference. The carrot and onion make this a little crumblier than some burgers so turn carefully.

1/3 cup breadcrumbs
2 tablespoons ketchup
1 teaspoon steak seasoning
salt and pepper
40 g butter
2 large onions, cut in thin rings
4 slices cheese
4 eggs
4 slices bacon, rind removed
4 large hamburger buns, halved
shredded lettuce, for serving
1 large tomatoes, sliced
4 large pickled beets, sliced, drained (out of tin)
4 pineapple rings, drained
ketchup, for serving

Steps:

  • Combine ground beef, chopped onion, egg, breadcrumbs, ketchup, steak seasoning, salt and pepper in bowl, mix with hands to combine.
  • Divide mixture into 4 and shape into round patties.
  • Heat 1/2 butter in pan, add onion rings and cook over medium heat until browned, drain, keep warm.
  • Heat skillet or grill (broiler), brush with oil.
  • Cook patties 3-4 minutes each side or until cooked through, place cheese slice on each patty.
  • While patties are cooking heat remaining butter in skillet and fry eggs and bacon until cooked.
  • Toast buns and place bases on serving plates.
  • On each bun place lettuce, tomato, beetroot, pineapple, then meat patty, onion rings, bacon, egg and finally bun top.
  • Add extra ketchup.
  • Enjoy with an icy cold beer!
