Palusami is a main dish from Samoa made with coconut milk. In the islands of Samoa, we use taro leaves and the Samoan corn-beef but here in America, my family can not live with out it so we use other substitute you can buy at the grocery store.

2 (10 ounce) bags fresh spinach
1 (12 ounce) can corned beef, broken into pieces
2 (10 ounce) cans coconut milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Make a layer of spinach leaves in the bottom of a 9x13 inch baking dish. Sprinkle with some of the corned beef, then keep repeating layers of spinach and corned beef until you run out of spinach. Don't worry about how full the dish is because the spinach will shrink as it cooks. Pour both cans of coconut milk over the dish, pressing the leaves down with a spoon. Cover tightly with a lid or aluminum foil.
  • Bake in the preheated oven for 45 to 55 minutes, or until spinach has completely wilted and the sauce is bubbly. Cool for 10 minutes before serving.

For convenience you can use canned corned beef, but my friend now cooks extra corned silverside and then makes this the next day. 6 -8 large cabbage leaves
1 (400 g) can corned beef
1 onion, chopped
1 tomatoes, chopped
2 cups coconut cream

Steps:

  • Place the cabbage leaves on foil paper to make a cup shape. (It would help to put all these in a round cake tin). Into the cup-shaped cabbage leaves, put the corned beef, onion, tomato, some shredded cabbage and coconut cream.
  • Wrap the foil around and bake in a moderate oven for about 1 to 1 1/2 hours.

4 (8 ounce) packages bean thread noodles (cellophane noodle)
4 cups chicken broth
1 large onion, diced
1 -1 1/2 cup soy sauce
3 bunches bok choy, cut long (may substitute spinach leaf)
1 lb new zealand corned beef (don't substitute American corn beef)
1/4 cup oil

Steps:

  • Cook bean thread in broth 3-4 minutes. Turn off heat and set aside until soft enough to cut with scissors. Saute onions in oil until tender. Add corned beef, cook thoroughly. Add bok choy, mix well; then add cut bean thread mixture. Add soy sauce to taste.

1 small can Crown Brand New Zealand corn beef
4 pkgs beef ramen
1 can mixed vegetables
Do not use American corn beef!

Steps:

  • Open and drain corn beef, boil until most the fat has liquefied. Add ramen to boiling beef until noodles are soft but not soggy. Pour off the fatty water and add 3/4 C fresh water and return to the heat. Add ramen flavoring packets and mix well. Stir fry until almost all the water is gone then add the drained can of mixed vegetables. Continue to stir fry until vegetables are tender crisp and almost all the liquid is gone.
