Steps:
- Preheat the oven to 425 degrees.
- Place a 12 inch cast iron skillet over medium heat on the stove top to preheat while you mix the batter.
- Mix dry ingredients in a large bowl and set aside.
- Mix wet ingredients and then stir into the dry mix.
- Pour the 1/4 cup oil into the skillet and turn the heat to high.
- When the oil begins to shimmer pour the batter into the pan.
- Bake approximately 25 minutes or until the top is golden brown.
- Serve hot with plenty of butter.
- Enjoy!

APPALACHIAN CORN BREAD
Both of my sister-in-laws parents were born in the mountains of North Carolina. This is her family recipe; couldn't believe how simple it is!

Steps:
- Put corn oil or bacon grease in a 6" iron skillet and put your skillet in the oven to preheat to 400 degrees. While it's preheating, slightly beat eggs into milk.
- Sift together the corn meal, flour, baking powder, salt, and sugar.
- Mix the dry and wet ingredients together.
- When the oil/oven is preheated, pour the oil or grease into the mixture, leaving a layer in the pan. Stir quickly. Pour batter in the pan, and bake for about 20 minutes or so, until when you stick a toothpick in it, it comes out clean.

ALBERS BEST CORNBREAD
This is a recipe I got from the Alber's brand cornmeal box a number of years ago. It's my favorite cornbread recipe. It's sweet, but not too sweet. They've since changed the recipe on their box and I'm grateful I kept the old one...while the new isn't bad, it's really sweet...it tastes like corn-flavored cake. This is a happy medium. Best served hot with lots of butter (imo), but good cold, also. I'm posting this here for safe-keeping. Note: You can measure out and mix the dry ingredients together and keep in in a tightly closed container for those times when you need to whip up a quick batch of cornbread. For a killer crust on the cornbread, use a cast-iron skillet.

- Combine oil, eggs and milk together and mix well.
- Stir dry ingredients into liquid ingredients just until blended; do not over-mix.

Steps:
- combined dry ingredients in a large bowl.
- combined wet ingredients in a small bowl.
- pour wet ingredients into dry and mix.
- melt butter in the oven in the 8x8" pan first and coat the pan. Then add once ingredients are mixed, stir and pour into pan. Bake at 425 until lightly golden. About 20-25 minute.
- Optional - Pour 1/2 the batter into the pan, lay the cheddar cheese slices on it, carefully spread the salsa over that, then pour in the rest of the batter. Bake the same as above.
