GRANDMA'S RUSSIAN TEA



Grandma's Russian Tea image

I grew up drinking this tea at my grandmother's house. I now fix it at my house on really cold days, when I am sick (lots of vitamin C!), and at Christmas. It is perfect to let simmer on the stove to make the house smell good and to serve to guests. I have no idea why its called 'Russian' tea; that is just what my grandmother always called it. Use any tea you like. I've used regular black tea, decaf, and cinnamon spice, and it's all great. If using spiced tea, you may want to adjust the amount of cinnamon, cloves, and allspice. This is also great reheated!

2 family-sized tea bags
1 quart boiling water
1 ½ quarts water
6 whole cloves
1 cinnamon stick
1 (12 ounce) can pineapple juice
1 cup white sugar
1 (6 ounce) can frozen orange juice concentrate
1 (6 ounce) can frozen lemonade concentrate
1 teaspoon ground allspice

Steps:

  • Steep tea bags in boiling water until the tea is of desired strength, 4 to 5 minutes. Remove and discard tea bags.
  • Combine 1 1/2 quarts water, cloves, and cinnamon together in a large pot; bring to a boil. Stir brewed tea, pineapple juice, sugar, orange juice concentrate, lemonade concentrate, and allspice into the boiling water to dissolve the sugar. Serve immediately or reduce heat to low and keep at a simmer until ready to serve.

1 can (20 ounces) pineapple chunks, drained
1 can (15-1/4 ounces) sliced peaches, drained and cut into bite-size pieces
1 can (11 ounces) mandarin oranges, drained
3 bananas, sliced
2 unpeeled red apples, cut into bite-sized pieces
FRUIT SAUCE:
1 cup cold whole milk
3/4 cup sour cream
1/3 cup thawed orange juice concentrate
1 package (3.4 ounces) instant vanilla pudding mix

  • In a large bowl, combine fruits; set aside. Whisk sauce ingredients until smooth. Gently fold into fruits. Cover and chill for 3-4 hours before serving.

When I was growing up I always looked forward to the Russian Tea that my Aunt Dorothy made every Christmas Eve. As soon as the weather turned chilly, I would start longing for a hot, steamy cup. It wasn't unitl I was away at college that I finally thought to ask her for the recipe! I place the whole cloves into a tea ball strainer so they're easy to remove when the tea is ready. 2 teaspoons whole cloves
1 cinnamon stick (2 inches)
12 cups water
6 tea bags
1-1/2 cups sugar
1-1/2 cups orange juice
1/4 cup lemon juice

Steps:

  • Place cloves and cinnamon stick on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place in a 6-qt. stockpot., Add water; bring to a boil. Remove from heat. Add tea bags; steep, covered, 5 minutes according to taste. Meanwhile, in a small saucepan, combine sugar, orange juice and lemon juice; bring to a boil. Discard spice bag and tea bags. Stir juice mixture into tea. Serve immediately.

I love this tangy beverage on a cold winter's morning when I want something tasty and hot, but don't want coffee! It makes a great gift from your kitchen, too! If calories are your concern, use an artificially sweetened orange drink mix, eliminate the sugar and sweeten to taste with sugar substitute.

1 (3 ounce) package powdered lemonade mix
2 cups white sugar

Me, personally I had a hard time finding a recipe for Russian Tea that wasn't a dry mix. Love the dry mix, but I wanted the before Tang version as well. Before instant tea. Found this one, finally. But I was really, really wanting my husband's Aunt Marion's recipe. She is departed now, & I think that we can honor those by using their recipe & let the recipe not die with them. Posted it here so should be easy for anyone to find that version, if interested. I think both sound good. YAY! Got what I call the Wet version, TWO recipes now for Russian Tea.

HOT SPICE JUICES
5 cup(s) water
1 1/2 cup(s) sugar
- juice of 4 oranges or 1 cup (aka *8 oz.) orange juice
- juice of 1 lemon or 3 tablespoons lemon juice
8 - whole cloves
2 teaspoon(s) ground cinnamon
BREWING THE TEA STUFF
8 cup(s) water
1 1/2 tablespoon(s) loose black tea or about 4 tea bags
OPTIONAL TO GARNISH
- lemon or orange slices, or both

Steps:

  • HOT SPICE JUICES: Bring the Water to a boil. Add the Sugar, Orange Juice, Lemon Juice, Cloves & Cinnamon. Boil about 5 minutes.
  • BREWING THE TEA: Now bring the other Water to a boil in another pot, add your Loose Black Tea Leaves. Let it steep for 3 to 4 minutes.
  • Add your HOT SPICE JUICES s l o w l y to the brewed Tea until you reach your desired flavor & aroma. Sit back with friends & enjoy.
  • NOTE: I found it odd that with all the other ingredients used that ground cinnamon was used instead of a cinnamon stick. But I figure that if anyone wants to use a cinnamon stick with this, it is acceptable. Personally, I thought ground cinnamon was rude to the loose tea leave considering how hard it can be for me to find black loose tea leaves. So they deserve the best treatment, is how I see it. If I use tea bags, then I probably wouldn't feel guilty using the ground cinnamon.

RUSSIAN TEA WITH FRUIT



Russian Tea With Fruit image

This tea uses preserved fruit to give it added sweetness and taste. The lemon helps balance out the sweet. You can substitute strawberry or raspberry preserves if you prefer. Using loose tea allows the leaves to steep better. Don't use a delicate tea for this. Adapted from the New Settlement Cookbook.

1 tablespoon loose black tea
4 cups boiling water
4 cubes sugar
4 lemon slices
4 teaspoons cherry preserves

Steps:

  • Put tea in a container that will preserve heat and pour 1 cup boiling water over it. Let it steep for 3 minutes.
  • Strain 1/4 cup tea into each tea cup. Fill with boiling water.
  • Put 1/4 of the sugar, lemon, and preserves in each cup to taste.
  • Stir and serve.

9 cups water, separated
4 family-size black tea bags (such as Lipton®)
1 cup white sugar
1 cup pineapple juice
1 (6 ounce) can frozen orange juice concentrate, thawed
½ cup lemon juice
6 cloves whole cloves, or more to taste
2 cinnamon sticks

Steps:

  • Bring 8 cups water to a boil in a large stockpot. Remove from heat. Add tea bags; steep, 5 to 7 minutes. Remove and discard tea bags and return pot to medium heat.
  • Bring 1 cup water to a boil in a separate pot. Add sugar; stir well until dissolved. Pour mixture into the stockpot with the tea. Add pineapple juice, orange juice concentrate, and lemon juice. Stir.
  • Put cloves in a tea ball and place into the stockpot with the tea-juice mixture. Cook for 10 minutes; do not boil. Turn heat down to very low; let simmer until flavors blend, 15 to 20 minutes more.

Literally, my husband's aunt would make this. Considering many recipes out there that are a dry mix and they are wonderful...I wanted her's that is not a dry version. Finally got it tonight when I fed her daughter. Compared it to one I finally found online & they are similar but there are differences. I will be posting the one I found online as well. No matter how you fix Russian Tea, it is great beverage when you are sick. I like to take a safe to use cup and won't break, to a tub of hot as I can stand it water. Soak & sip on Russian Tea. Then go to bed. And I do feel lil better afterwards.

SPICY TEA BREW STUFF
3 quart(s) water
3 - small tea bags or 1 family size tea bag
- cheese cloth to put spices, optional cause you can use a tea strainer later
1 stick(s) cinnamon
1 teaspoon(s) whole cloves
SWEETENER
1 cup(s) sugar
JUICES
1 cup(s) orange juice, freshly squeezed or not (3 to 4 oranges used)
1/4 cup(s) lemon juice, using fresh lemon, no substitute

Steps:

  • Bring Water to a boil. Then take off heat & add the Tea Bags, the Cinnamon Stick & Whole Cloves. (you can tie the spices in a cheesecloth but fine if you don't. just strain it with a tea strainer once brewed). BREW for 10 minutes. Take out cheesecloth stuff or just strain.
  • Add the Sugar. Add the Orange Juice & Lemon Juice.
  • This is to be drank HOT. So if you refrigerate any leftovers, just heat up as you would do any hot beverage. OPTIONAL: Garnish with Lemon slices or Orange slices or both.
