WALNUT MERINGUE LAYERS
Use this to make our Gingerbread Town-Square Cake.

Steps:
- Preheat oven to 200 degrees. Line 3 baking sheets with parchment. Using a cake pan or a ruler, trace a 9-inch square on each piece of parchment.
- Whisk walnuts, 3/4 cup superfine sugar, the confectioners' sugar, and salt.
- With an electric mixer fitted with the whisk attachment, beat egg whites on medium-high speed until soft peaks form. Gradually add remaining 1/4 cup superfine sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold in walnut mixture with a spatula. Spread batter evenly onto traced squares on parchment, and smooth tops.
- Bake for 2 1/2 hours. Turn off oven, and let cool in oven until completely dry, about 75 minutes.
- Carefully peel meringue layers from parchment, and let cool completely on wire racks.

Steps:
- Whip whites until foamy. Gradually add sugar and whip until very, very stiff, about 5 minutes. On low speed gradually add powdered sugar and whip 10 seconds. Do not over mix!
- With a large star tip pipe onto a parchment paper lined sheet pan either finger shapes or round rosettes. Let dry overnight over a hot oven or place in a 200 degree oven for 4 hours.
- Whip cream with sugar until stiff. Pipe whipped cream on finger shaped meringue and top with another finger to form a sandwich. Tuck sliced fruit and mint leaves into cream laying meringue on its side. For rosette meringues, pipe cream on top an place fruit and mint leaves on cream.
MERINGUES, CHOCOLATE WALNUT

- 1. Preheat oven to 275°F. Line 2 cookie sheets with parchment paper.
- 2. In a medium, clean, grease-free bowl with an electric mixer on high speed, whip egg whites until foamy. Add cream of tartar and whip until soft peaks form. Add sugar gradually, whipping until stiff but not dry peaks form. Beat in vanilla. Fold in chocolate chips and walnuts. Drop by generously rounded teaspoon 2 inches apart on cookie sheets.
- 3. Bake until completely firm and dry, but still white, about 25 minutes; you should be able to lift cookies from pan. Slide parchment onto racks to cool cookies completely.
AUNT JIMMY'S BUTTERSCOTCH MERINGUE PIE
This is one of my brother Gary's favorite pies made by my Aunt Jimmy. She was called Jimmy because when she was little she got a very short haircut which made her look like a boy so instead of her brother calling her by her right name, Sylvia, he called her "Jimmy". It's good after spicy food like barbecue.

- Preheat the oven to 325 degrees F.
- Make the Filling: In a large saucepan, combine the milk and cream and bring to a simmer over medium heat. Immediately remove from the heat and set aside.
- Melt the butter in a large, heavy skillet over medium-high heat. Stir in the brown sugar, raise the heat to medium-high, and cook, stirring constantly, until caramelized, 5 to 7 minutes. (You'll smell a characteristic nutty caramel odor when the butter browns, signaling that the mixture is ready.)
- Whisking constantly, gradually add the butter/brown sugar mixture to the hot milk/cream mixture. If the mixture isn't smooth, blend for 20 seconds with a hand blender or pour through a fine sieve.
- Put the egg yolks in a medium bowl. Whisk in about 1/2 cup of the hot milk mixture. Whisk in the cornstarch and salt until dissolved. Whisk the cornstarch mixture back into the hot milk mixture in the saucepan. Whisk in the Scotch.
- While whisking constantly, cook over medium-high heat until thick and just boiling. When the mixture thickens, the whisk will leave trail marks on the bottom of the pot and the mixture will have a few large bubbles boiling up to the top.
- Turn off the heat and whisk in the vanilla extract. Pour into the prebaked pie shell and set aside while you make the meringue.
- Make the Meringue: In a standing mixer fitted with a whip attachment, whip the whites in a clean dry bowl on low speed until foamy. Add the cream of tartar and continue whipping on medium speed until soft peaks are formed. Gradually pour in the sugar and continue whipping on high speed until stiff and glossy. Pile the meringue onto the pie and swirl to cover, spreading it to the edge. (Making sure it touches the edge.) Bake the pie until the meringue is lightly browned, about 15 to 20 minutes.
- Chill the pie, uncovered, at least 2 hours or overnight before serving.
WALNUT AND BROWN SUGAR MERINGUES

Steps:
- Break walnuts into small pieces and dry toast them, allow to cool completely.
- Put the egg whites into a bowl and whisk till stiff, gradually whisk in the combined sugars a spoonful at a time whisking until you have a stiff meringue and all the sugar is mixed well inches.
- With a large metal spoon fold the walnuts quickly and thoroughly through the meringue.
- Divide into 2 or more as required and place onto parchment paper in baking trays, this mix should make enough for 6 servings.
- Bake in a cool oven130C 250F for 2-21/2 hours.
- Take out of oven to cool.

GEODE MERINGUES
Crushed rock candies sparkle like crystals in these hollowed-out meringues. The secret to shaping the interiors is scooping out the cookies while they are still warm and soft.

- Preheat the oven to 250 degrees F. Line a baking sheet with parchment.
- Place the egg whites in the bowl of a stand mixer fitted with the whisk attachment; beat on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Beat in the granulated sugar 1 tablespoon at a time, adding a couple drops of black food coloring with the final tablespoon of sugar to tint the mixture light gray. Beat in the vanilla if using. Continue beating until the meringue is thick and glossy and holds stiff peaks, 6 minutes more.
- Spray a 3-tablespoon (#20) cookie scoop with nonstick spray and scoop balls of the meringue onto the prepared baking sheet, about 1 inch apart. Lightly dust the tops with cocoa powder--you should see meringue underneath.
- Bake the meringues until set, about 1 hour. Remove from the oven, turn off the oven and keep the oven door closed. Let the meringues sit until cool enough to handle, about 5 minutes. Then, hollow them out this way: Hold a meringue flat-side up in one hand. With the edge of a metal teaspoon, gently carve a hole in the center of the meringue's base, leaving some lip around the opening. Press your thumb into the hole and push the inside of the meringue up against the walls to hollow out the interior (see Cook's Note).
- Return the meringues to the baking sheet and place them in the turned-off oven until completely dried out, at least 3 hours and up to 8 hours.
- With a wooden spoon, smash the rock candy sticks in their bags to break the sugar off the sticks and into smaller crystals. Pour the crystals into small bowls separated by color.
- Place the white candy melting wafers in a microwave-safe bowl and microwave in 30 second intervals, stirring between each, until melted.
- Use a pastry brush to paint a circle of melted wafers (about the size of a quarter) on the bottom of a meringue cavity. Immediately fill the cavity with dark-colored rock candy. Wait a few seconds, then pour the excess rock candy back into its bowl. Paint the rest of the cavity with melted wafers. Immediately fill the cavity with light-colored rock candy. Wait a few seconds before pouring out the excess. Repeat with the remaining meringues, wafers and rock candy.
