1970'S FRENCH STRAWBERRY PIE

My mom used to make this for our family back in '72. I totally loved it then as I do now! Very quick and easy to make! Chill time is 2 hours. My mom used to make homemade pie crust but I always have trouble with mine and I recently found these Keebler Ready Made pie crusts.

Number Of Ingredients 6

4 cups strawberries, quartered into pieces
4 ounces cream cheese, softened
8 ounces whipping cream
1 cup sugar
4 tablespoons cornstarch
1 ready shortbread crust, Keebler brand

Steps:

  • Spread cream cheese which has been softened with a little cream on bottom of pie shell.
  • Place cut up strawberries on top of cream cheese.
  • Place left over fresh strawberries in sauce pan and mash.
  • Add sugar and cornstarch.
  • Cook for 10 minutes on medium until really thick.
  • Cool strawberry mixture. (Make sure its cooled).
  • Pour over pie.
  • Chill pie for 2 hours.
  • Whip whipping cream (I add a couple tablespoons of sugar and some vanilla for extra flavor).
  • Spread over top of cooled pie.
  • EAT and ENJOY!

This is a summer favorite from my childhood! Sliced strawberries, mixed with whipped cream and gelatin for texture, on top of a yummy graham cracker crust.

1 cup graham cracker crumbs
¼ cup white sugar
¼ cup butter, melted
1 tablespoon unflavored gelatin
¼ cup cold water
1 cup heavy whipping cream
½ cup chopped strawberries
⅓ cup white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; mix until evenly moistened and press into the bottom and sides of a 9-inch pie pan.
  • Bake in the preheated oven until the crust is lightly browned and smells toasted, about 12 minutes. Remove from the oven and cool.
  • Soak gelatin in cold water for 3 minutes. Heat the water and gelatin in the top of a double boiler set over simmering water, stirring frequently, until gelatin is completely dissolved.
  • Beat whipping cream in a chilled glass or metal bowl until soft peaks form.
  • Stir strawberries and 1/3 cup sugar together in a bowl. Pour gelatin mixture over strawberries. Gently fold in whipped cream until incorporated. Pour filling into baked pie shell and chill in the refrigerator until set, at least 2 hours.

This is a two crust strawberry pie that has a thick juice. Any fresh berries can be substituted.

2 (9 inch) unbaked pie crusts
1 ¼ cups white sugar
⅓ cup all-purpose flour
½ teaspoon ground cinnamon
4 cups fresh strawberries
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
  • Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.
  • Bake for 35 to 45 minutes, or until the crust is slightly browned.

5 lemons
5 limes
5 oranges
3 quarts water
1-1/2 to 2 cups sugar

Steps:

  • Squeeze the juice from 4 each of the lemons, limes and oranges; pour into a gallon container. , Thinly slice the remaining fruit and set aside for garnish. Add water and sugar to the juice mixture; mix well. Store in the refrigerator. Serve over ice with fruit slices.

1 qt fresh strawberries whole or peaches, sliced thick
1 c sugar
3/4 c water or 1/2 c peach nectar and 1/4 c water
3 Tbsp corn starch or arrowroot
1 tsp lemon juice
WHIPPED CREAM
1/2 pt heavy cream
1 Tbsp confectioners sugar

Steps:

  • 1. Ingredients, prep and cook time do not include the pie crust!
  • 2. Put 1/2 of the strawberries plus water into a pot and cook 3 minutes. Mix sugar and cornstarch or arrowroot together and add to strawberries. Mix and let come to a boil (about 5 minutes) until it starts to thicken. Remove from head and add lemon juice (this helps to maintain the bright color of the fruit). While strawberries are cooling, bake pie shell. (Be sure to use pie weights or dried beans to hold the shell down) Allow shell to cool
  • 3. Take the balance of fresh strawberries and spread over bottom of the pie shell. Pour cooked strawberry mixture over the strawberries. Chill thoroughly (about 1 to 2 hours)
  • 4. While strawberry mixture is chilling, in a medium bowl add heavy cream and confectioners sugar together. Whip at high speed until firm and fluffy. Put in refrigerator to chill.
  • 5. When pie mixture is chilled remove pie and whip cream from refrigerator. Spread whip cream over top of pie. Garnish top if you like with several left over perfect berries in the center, sliced berries, or however you wish to garnish if at all. Return to the refrigerator until ready to serve.
