4 russet potatoes, sliced into 1/8 inch slices
1/2 onion, sliced into rings
salt and pepper
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups milk
1 1/2 cups cheddar cheese, shredded

Steps:

  • Butter a 1 quart sized crock pot.
  • Layer the potato slices and onion rings in the crock, lightly seasoning with salt and pepper every few layers.
  • In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute.
  • Gradually stir in milk.
  • Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
  • Pour the cheese over the potatoes, and slide a spatula between the edge of the crock and the potatoes to allow the cheese to pour down the side and cover everything.
  • Cook on high for 2 hours, or on low for 4-5 hours.

1 pkg au gratin potato mix
1 can(s) whole kernel corn
1 can(s) condenced beefy mushroom soup
1 c water
1 can(s) 4 oz green chili's drained (optional)
1 can(s) mushrooms drained
1 lb hamburger
1 medium onion diced
1/2 c shredded cheese for top.

Steps:

  • 1. Place dry potatoes in the bottom of a crock pot. top with corn.
  • 2. In a pan fry the hamburger and onion together. adding the mushrooms the last few minutes.
  • 3. In a bowl mix the cheese sauce from the au gratin potatoes with the water and beefy mushroom soup. Pour 1/3 of the sauce over the potato/corn mixture in the crock pot.
  • 4. cover with all the meat mix. then the remainder of the sauce goes over that. Do NOT stir.
  • 5. Cook on low for 4 hours check potatoes to be sure. Optional: add shredded cheese on top the last 20 minutes of cooking

6 tablespoons butter
6 tablespoons flour
3 cups milk
3 cups cheese

Steps:

  • Melt butter in saucepan. Add flour to make a roux. Add salt and pepper to taste (I do not add salt). After the roux is slightly browned, stir in milk slowly and in small batches. Heat milk through until slightly thickened. Add cheese to melt.
  • Spray casserole dish VERY WELL. Add a layer of potatoes, a layer of onions, pepper (salt as desired) and a layer of cheese sauce. Repeat, ending with cheese.
  • Bake at 350 for 90 minutes.

- 1 large or 2 small jars yellow cheese
- 4-5 med-large potatoes

Steps:

  • spray oblong baking dish with pam. wash potatoes and boil for about 40-45 mins. til fork tender.
  • when ready, take off burner put pan in sink. peel all potatoes then slice them.
  • spray dish with pam. layer 1 row of potatoes and pour yellow cheese over layer. repeat with another layer of potatoes and cheese til u get to the top layer. then put cheese on last.
  • place in pre heated oven of 350 for 15-20 mins or til hot threw.

4 tablespoons butter
6 tablespoons whole wheat flour or white flour
3 teaspoons salt
black pepper to taste
4 cups milk heated
1 1/2 cups mozzarella cheese part-skim, grated

Steps:

  • Dice cooked potatoes. Melt butter in saucepan and stir in flour, salt, and pepper. Heat and stir constantly until mixture bubbles. Gradually add milk and cook over low heat, stirring constantly until sauce boils and thickens. Stir in 2/3 cup cheese and diced potatoes. Pour into a 9 x 13 x 2 baking dish coated with nonstick cooking spray and top with rest of cheese. Bake at 375 degrees for 15 minutes or until cheese melts and browns. Time Saving Variation: Follow instructions above, except replace fresh potatoes with two pounds of frozen, diced potatoes. Thaw frozen potatoes thoroughly in the microwave before adding to above mixture. *Even with 4 tablespoons of butter, this recipe is still under 20% fat!

2 potatoes, peeled, chopped into 1 inch cubes
1 cup heavy cream
1 tbsp flour
1 garlic clove, grated
1/2 to 1 teaspoon kosher salt
1/4 to 1/2 tsp fresh cracked pepper
1/2 cup sharp cheddar cheese, grated
1/2 Gruyere cheese, freshly grated
1 about 1 tbsp butter, for greasing the pan

Steps:

  • Peel and cube the potatoes into about 1 inch cubes. In a mixing bowl, add the cream, flour, garlic, salt, and pepper together with 1/4 cup cheddar cheese and 1/4 cup of the Gruyere. Add the potatoes and coat evenly. Grease the ramekins or oven safe dish with butter. Divide the potato mixture evenly among the dishes, making sure that the cream is also evenly distributed. Top with the remaining Gruyere and Cheddar cheese, and a sprinkle of more pepper. Cover with foil and bake at 400 degrees F for about 35 minutes. Remove the foil and allow the gratin to brown and crisp for another 15 to 20 minutes!
