Raisin broccoli salad is a super delicious and healthy broccoli salad, without cheese or bacon. Incredibly delicious with a homemade balsamic mayo dressing, this side dish salad is great for potluck, picnics, cookouts and parties. The dried raisins and sweet nuts balance out the savory broccoli. Fresh broccoli florets, homemade dressing and a combination of sweet raisins and salty nuts make this al dente salad a new look at an old favorite - the perfect broccoli salad recipe! 2 large broccoli crowns (cut into small pieces)
1/2 cup raisins
1/2 cup mayonnaise
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped walnuts
2 green onions (sliced)

Steps:

  • Add 1/2 cup boiling water to a small bowl of raisins. Let stand for 10 minutes. Drain water and set raisins aside.
  • Bring a large stock pot of water to a boil.
  • Add broccoli florets and heat for 3-5 minutes or until broccoli is bright green but still Al Dente crunchy. The water will most likely not continue to boil after you add the broccoli and that's fine.
  • Drain and rinse broccoli with cold water. Shake well to remove excess water. A salad spinner may help with this process.
  • In a large mixing bowl, add mayonnaise, Balsamic vinegar, salt and pepper and mix dressing well.
  • Add al dente broccoli, raisins (or golden raisins), chopped walnuts and green onions to bowl and mix well.
  • Pour dressing over top of salad and mix well until broccoli is covered with dressing.
  • Serve salad immediately or refrigerate, covered, until ready to serve.
  • Prior to serving, mix well to prevent dressing settling.

4 cups fresh broccoli florets (1 medium bunch)
3/4 cup golden raisins
1 small red onion, chopped
1/2 cup Miracle Whip
1 tablespoon white vinegar
2 teaspoons sugar
3 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the broccoli, raisins and onion. In a small bowl, combine the Miracle Whip, vinegar and sugar. Pour over broccoli mixture; toss to coat. Sprinkle with bacon. Refrigerate for at least 2 hours before serving.

This is kind of on the sweet side, but you can substitute granulated Splenda and also use light or fat-free Miracle Whip for calorie control. I use prepackaged all-natural bacon bits to save time. It's popular at church gatherings.

1 large head broccoli, cut into florets
1/2 small red onion, finely chopped
1 c raisins
1/2 c cooked crumbled bacon
1/2 c chopped walnuts
1 c miracle whip salad dressing
1/2 c sugar
2 Tbsp frozen orange juice concentrate (not diluted)

Steps:

  • 1. Mix broccoli, onion, raisins, bacon, and walnuts in a large serving bowl.
  • 2. Combine salad dressing, sugar, and orange juice concentrate. Stir into broccoli and mix well.
  • 3. Chill at least 1/2 hour before serving.

6 cups chopped fresh broccoli, including stems blanched, drained and cooled (I do not blanch, but leave it like it is)
1 cup raisins
1/2 lb bacon, fried crisp and crumbled
1/3 cup coarsely chopped fresh red onion
1/4 cup sugar
2 tablespoons cider vinegar
1 cup mayonnaise
1/4 cup roasted sunflower seeds (optional)

Steps:

  • Layer broccoli, raisin, bacon and onion in 2 1/2 quart serving bowl.
  • Mix sugar, vinegar, and mayonnaise.
  • together in small bowl; spread over onions sealing to edges of bowl.
  • Sprinkle sunflower seeds on top.
  • Cover and refrigerate to chill well.
  • Just before serving, toss thoroughly.
  • I do not put the bacon in until I toss it before serving.

A classic sweet and savory Southern broccoli salad combines raw (or barely cooked) broccoli with sweet dried fruit (typically raisins or cranberries), crunchy sunflower seeds and savory Cheddar in a creamy, tangy mayonnaise dressing. Briefly blanching the broccoli in boiling water ensures bright green veggies with a crisp-tender texture. The salad gets better with time, so make it a few hours ahead and refrigerate it. (Reserve the crispy bacon and sprinkle it on top right before serving.) And, if your tastes skew sweet, further increase the sugar by another tablespoon.

8 ounces bacon (any type)
10 cups (1 1/2 pounds) 1- to 1½-inch broccoli florets
1 cup mayonnaise

  • Bring a large saucepan of salted water to a boil.
  • Heat a large nonstick skillet over medium. Add bacon and cook, turning occasionally, until golden and crispy, 7 to 8 minutes. Transfer to a paper towel-lined plate to drain; discard bacon fat or reserve for another use. Chop the bacon into bite-size pieces.
